This is an extremely moist and delicious cake. The coffee liqueur gives it an exceptionally rich and unique flavor. It is wonderfully complemented when served with coffee drinks as an after-dinner treat.

1 (18.25 ounce) package moist yellow cake mix
1 (5.9 ounce) package instant chocolate pudding mix
4 eggs
½ cup white sugar
1 cup vegetable oil
¼ cup vodka
¼ cup coffee flavored liqueur
¾ cup water
¼ cup coffee flavored liqueur
1 cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan.
  • In a large bowl, combine the cake mix, pudding mix, eggs, white sugar, oil, vodka, 1/4 cup liqueur, and water. Beat for four minutes. Pour batter into prepared Bundt pan.
  • Bake at 350 degrees F (175 degrees C) for 40 minutes, or until toothpick inserted in center of cake comes out clean. Cool on a rack.
  • Make a glaze by combining 1/4 cup coffee liqueur and 1/2 cup confectioners' sugar. Turn cake over on a cake plate. Poke cake several times with a fork. Cover with glaze, and dust with remaining 1/2 cup confectioners' sugar.

Steps:

  • In a large bowl, beat the sugar, milk, coffee, oil, eggs and vanilla until well blended. In a small bowl, combine the flour, cocoa, coffee granules, baking soda, baking powder and salt; gradually beat into sugar mixture until blended., Pour into two greased and floured 9-in. baking pans. Bake at 325° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely., For filling, in a large bowl, beat butter and confectioners' sugar. Add jam; beat until blended., For frosting, melt chocolate in a microwave; stir until smooth. In a large bowl, beat butter and chocolate until fluffy. Add marshmallow creme, confectioners' sugar and extract; beat until smooth., Place one cake layer on a serving plate; spread with filling. Top with remaining cake layer. This is from "The Best of Ukrainian Cuisine". It shares ingredients with a couple other recipes, but the technique is unique and sounds very good. I haven't made it yet. I don't know if the "melted chocolate" is supposed to be semisweet or unsweetened. I intend on asking the Dessert Forum before I make it; if you get to it first, please ask them rather than potentially wasting your time and ingredients.

3/4 cup butter, whipped
1/4 cup melted chocolate, cooled
1/4 lb flour (1/2 cup)
1 cup raspberry jam

salt, one pinch

Steps:

  • Stir sugar with egg yolks. Mix with whipped butter and melted chocolate. Sprinkle with salt. Gradually stir in flour.
  • Whip egg whites; mix into chocolate mixture with a light hand.
  • Put into a well-greased and floured baking pan. Bake at 350 for 30-35 minutes.
  • Before serving, brush with jam and sprinkle with grated chocolate and walnuts.

2 pints raspberries (frozen or fresh)
1/2 cup granulated sugar
1/2 lemon, juice of
3/4 lb semisweet chocolate
1 cup unsalted butter
1 cup sugar
1/2 cup all-purpose flour
6 large eggs
confectioners' sugar, for dusting

Steps:

  • Make raspberry sauce: In a small saucepan, mix raspberries, sugar and lemon juice together.
  • Boil until the sugar dissolves.
  • Let cool.
  • Puree half of the sauce in the blender.
  • Then add the remaining sauce to the pureed mixture.
  • Chill, covered in the refrigerator until ready to use.
  • Preheat oven to 350*F.
  • In the top part of a double boiler, over simmering water, melt the chocolate and unsaled butter.
  • Let cool.
  • In the bowl of an electric mixer, place the sugar, flour and eggs.
  • Beat with it's wire whisk for 5 minutes, or until very thick and fluffy.
  • Fold in the cooled chocolate.
  • Refrigerate covered with plastic wrap until ready to use.
  • (can be done several days ahead) Pour the mixture into buttered individual ramekins (3 inches by 2 inches) Bake in the oven for 15 minutes or until the edges are firm and the center loose.
  • To serve, spoon a 4 inch circle of sauce onto each plate.
  • Remove the cakes from the ramekins and place on top of raspberry sauce.
  • Dust with confectioners sugar.
  • If desired place a scoop of vanilla icecream next to the cake.
  • However I prefer to accompany mine with a small dollop of clotted cream, mmmmm, heaven.

1 (15.25 ounce) package chocolate cake mix
1 cup water
1 (6 ounce) container vanilla yogurt
1 (3.9 ounce) package instant chocolate pudding mix
⅓ cup vanilla-flavored vodka
⅓ cup vegetable oil
3 large eggs
½ (12 ounce) package miniature chocolate chips, or more to taste
12 ounces fresh raspberries, or more to taste
⅓ cup white sugar
1 (16 ounce) container prepared vanilla frosting
1 (8 ounce) container frozen nondairy whipped topping, thawed
3 (1 ounce) squares white chocolate, melted and cooled

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease two 9-inch round cake pans with baking spray. Mix cocoa and flour together and use to flour the pans.
  • Combine cake mix, water, vanilla yogurt, pudding mix, vodka, vegetable oil, and eggs in a large bowl. Mix on low speed until moistened. Mix on medium speed for 2 minutes, then stir in chocolate chips. Divide batter evenly into the prepared cake pans.
  • Bake in the preheated oven until the centers spring back at your touch, 40 to 50 minutes. Cool in the pans for 5 minutes. Run a table knife around the edges to loosen. Invert carefully onto a serving plate or cooling rack and let cool completely, about 25 minutes.
  • Meanwhile, combine raspberries and sugar for filling in a saucepan over medium heat. Cook, stirring frequently, until they reduce by about 50%. Set aside to cool.
  • Slice each cooled cake layer horizontally into two layers. Place the bottom layer on a serving plate and top with 1/3 of the filling. Repeat with 2 more layers and remaining filling. Top with final layer.

3 (1 ounce) squares fine-quality semisweet chocolate, chopped
1 ½ cups hot brewed coffee
3 cups white sugar
2 ½ cups all-purpose flour
1 ½ cups unsweetened cocoa powder
2 teaspoons baking soda
¾ teaspoon baking powder
1 ¼ teaspoons salt
3 large eggs
¾ cup vegetable oil
1 ½ cups well-shaken buttermilk
¾ teaspoon vanilla extract
½ cup heavy whipping cream
1 tablespoon white sugar
1 tablespoon light corn syrup
½ pound fine-quality semisweet chocolate, chopped
2 tablespoons unsalted butter
2 (20 ounce) packages frozen raspberries, thawed
½ cup white sugar
1 lemon, zested
2 tablespoons cornstarch

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C).
  • Combine chopped chocolate and hot coffee in a bowl. Stir occasionally until chocolate is melted and mixture is smooth. Set aside.
  • Sift sugar, flour, cocoa powder, baking soda, baking powder, and salt together in a large bowl.
  • Beat eggs in a bowl using an electric mixer until slightly thickened and lemon-colored. Slowly add oil, buttermilk, vanilla extract, and melted chocolate mixture. Beat until well combined. Add sugar-flour mixture; beat on medium speed until just combined. Divide batter between the prepared cake pans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 1 hour to 1 hour and 10 minutes. Let cool completely in pans on wire racks, about 30 minutes. Invert layers onto racks.
  • While cakes are cooling, bring heavy cream, sugar, and corn syrup to a boil over low heat in a small saucepan. Whisk until sugar dissolves. Add chocolate; whisk until melted. Add butter; whisk until smooth. Let ganache frosting cool until spreadable, about 10 minutes.
  • While frosting and cakes continue to cool, puree raspberries in a food processor. Press through a fine mesh strainer with the back of a spoon into a saucepan. Pour in sugar and cornstarch; bring to a boil over medium-low heat. Cook until thickened and reduced, 5 to 7 minutes. Stir in lemon zest. Remove raspberry filling from heat.
  • Cut each cake layer in 1/2 horizontally to produce 4 equal layers. Spread 1/3 raspberry filling onto each of 3 layers and stack. Place top layer onto cake. Spread ganache frosting evenly from center of top layer down the sides of the cake.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a fluted tube pan (such as Bundt®).

5 large egg whites, at room temperature
1/2 teaspoon cream of tartar
1/2 teaspoon white vinegar
1/2 cup superfine sugar
8 large eggs, separated
1/2 cup granulated sugar
4 ounces bittersweet chocolate, grated
1 1/4 cups ground walnuts
1/4 cup unflavored fine dry breadcrumb
1 tablespoon fine ground coffee (not instant)
1 tablespoon fresh lemon juice
1 cup heavy cream or 1 cup whipping cream
3 tablespoons confectioners' sugar (sometimes called icing sugar or powdered)
1 tablespoon instant coffee powder
1 tablespoon rum extract
1 cup red currant preserves
8 ounces bittersweet chocolate
2 tablespoons vegetable shortening
2 tablespoons water

Steps:

  • The day before assembling the cake, make the meringue layers. Cut out TWO-11-inch circles from parchment or freezer paper; grease well with butter and sprinkle lightly with flour.
  • Preheat the oven to 250°F Fold the rim of the baking circles slightly upward.
  • In a large bowl, beat the egg whites, cream of tartar, and vinegar together until the whites hold a stiff peak. Add the superfine sugar, a few Tablespoons at a time, beating until the mixture is stiff and glossy. To make superfine sugar blend in the blender until it is superfine.
  • Gently fill each circle with half the meringue mixture, spreading evenly with a rubber spatula. Bake until the meringues are light golden and dry, 1 hour.
  • Invert the meringues onto a plate and peel off the parchment paper. Leave in a dry spot overnight.
  • The next day, preheat the oven to 350°F Line the bottom a 10-inch sprinform pan with parchment or freezer paper. Lightly butter the paper and sprinkle lightly with flour.
  • To make the walnut chocolate layer, in a large bowl, beat the egg yolks with the sugar until the mixture is pale yellow and forms a ribbon when the beaters are lifted.
  • With clean, dry beaters, beat the egg whites in a separate bowl until soft peaks form. Gently fold one-third of the whites into the beaten yolks, then fold in the rest, alternating with the grated chocolate and walnuts.
  • Fold in the bread crumbs, coffee, and lemon juice.
  • Pour the batter into the prepared pan. Bake for 20 minutes. Reduce the oven temperature to 300°F and bake until the cake tester comes out clean, another 20 to 25 minutes.
  • When the cake cools off a little, remove the sides of the pan. Invert the cake and peel off the paper. Using a serrated knife, cut it horizontally into two layers.
  • Whip the cream with the sugar, instant coffee, and rum extract until it holds stiff peaks.
  • Place one of the walnut-chocolate layers, cut side up, on a cake platter and spread it with 1/2 cup of the red currant preserves and then with one-third of the coffee-flavored cream. Top with one meringue layer. Spread another one-third of the cream on the meringue layer and top with the second meringue layer. Spread the rest of the cream filling on the meringue. Spread the remaining preserves over the remaining walnut-chocolate layer. Place the walnut-chocolate layer, preserves side down, on top of the cream filling.
  • You should have the following layers, starting at the bottom: walnut-chocolate, preserves, cream, meringue, cream, meringue, cream, preserves, walnut-chocolate.
  • For the icing, melt the chocolate and shortening in the water in the top of a double boiler, over barely simmering water.
  • Spread the top and sides of the cake with warm chocolate icing. Refrigerate the cake for at least 1 hour before serving. Serves 12.
