ULTIMATE SPICY BEEF NACHOS



Ultimate Spicy Beef Nachos image

Seasoned ground beef with crispy tortilla chips, Mexican cheeses, fresh guacamole, sour cream, jalapenos, fresh salsa, green onions, and cilantro make the best beef nachos!

2 Tablespoons Oil
1 Onion (finely chopped)
1 lb. Lean Ground Beef (80-85% lean)
2 Tablespoons Chili Powder
1/2 teaspoon Garlic Powder
2 teaspoons Cumin
1 teaspoon Salt
1 teaspoon Pepper
2 Tablespoons Tomato Paste
1/2 cup Water
1 Large Bag Tortilla Chips ((or homemade))
1 - 16 ounce can Spicy Jalapeno Refried Beans
4-5 cups Mexican Cheese (shredded)
1 cup Sour Cream or Mexican Crema
Homemade Guacamole
1 Jalapeno (sliced (or jarred jalapeno slices))
Homemade Restaurant Style Salsa Recipe
2 Green Onions ((sliced))
Cilantro ((chopped))

Steps:

  • Heat oil in a large skillet over medium heat. Cook onion until until softened, about 7-8 minutes. Add ground beef increase heat to medium-high heat and cook, breaking meat into small pieces until no longer pink -- about 6 minutes. Add chili powder, garlic powder, cumin, salt, and pepper and stir to coat. Add tomato paste and water and cook for 6-8 minutes longer.
  • Transfer to plate lined with paper towels to soak up grease.
  • Heat oven to low broil.
  • Place refried beans in a microwave-safe bowl. Heat in microwave for 1 minute or until nice and warm and easy to stir. If desired, stir in chopped jarred jalapenos.
  • Line large baking sheet with tortilla chips.
  • Top chips with warmed refried beans and spicy beef. Top with cheese. Broil for 2-4 minutes, or until cheese is melted, keeping a close eye on it.
  • Top with sour cream, avocados, jalapenos, green onions, cilantro, and salsa.

1 pound 90% lean ground beef
2 tablespoons tomato paste
1 teaspoon brown sugar
1 medium canned chipotle chili (chopped, plus 1 teaspoon adobo sauce)
1/2 cup water
2 teaspoons lime juice
2 teaspoons vegetable oil

Steps:

  • Heat oven to 400 degrees F.
  • For the beans, pulse ingredients in food processor until smooth. Transfer to a small bowl and cover with plastic wrap; set aside.
  • To make the spicy beef, heat oil in large skillet over medium heat until shimmering. Add onion and cook until softened, about 4 minutes. Add garlic, chili powder, cumin, oregano, and salt and cook until fragrant, about 1 minute. Add beef, cook and break meat into small bits until no longer pink, about 5 minutes. Add tomato paste, sugar, chile, and adobo sauce and cook 1 minute. Add water, bring to simmer, and cook over medium-low until mixture is nearly dry, 5 to 7 minutes. Stir in lime juice and transfer mixture to plate lined with several layers of paper towels.
  • To assemble the nachos, spread half of chips in a 9×13-inch baking dish. Dollop half of bean mixture over chips, then spread evenly. Scatter half of beef mixture over beans, top with 2 cups cheese and half of jalapeños. Repeat with remaining chips, beans, beef, cheese, and jalapeños. Bake until cheese is melted and just beginning to brown, 12 to 14 minutes. Serve with salsa, sour cream and/or guacamole.

8 oz restaurant-style tortilla chips (about 8 cups)
1 can (16 ounces) refried beans
1/2 cup sour cream
1 package McCormick® Taco Seasoning Mix Hot
1 cup chopped tomato
1 package (8 ounces) finely shredded Mexican cheese blend
1/4 cup chopped green onion

Steps:

  • Preheat oven to 375°F. Arrange chips in single layer on 2 lightly greased foil-lined shallow baking pans, overlapping chips if needed to cover pan completely.
  • Mix refried beans, sour cream and Seasoning Mix in small saucepan. Cook on medium heat until heated through, stirring occasionally. Spread 1/2 of the refried beans mixture on each pan of chips. Sprinkle each with 1/2 of the cheese.
  • Bake 5 minutes or until cheese is melted. Sprinkle with tomatoes and green onions. Serve immediately with assorted toppings, if desired.

1 cup shredded sharp Cheddar cheese, or more to taste

1 cup salsa
1 cup sour cream, or more to taste
1 (10 ounce) can pitted black olives, drained and chopped
4 green onions, diced
1 (4 ounce) can sliced jalapeno peppers, drained

Steps:

  • Cook and stir ground beef in a skillet over medium heat until meat is crumbly and no longer pink, 5 to 10 minutes. Drain excess grease. Stir in taco seasoning mix and water and simmer until beef mixture has thickened, 8 to 10 minutes.
  • Set the oven rack about 6 inches from the heat source and preheat the broiler. Line a baking sheet with aluminum foil.
  • Spread tortilla chips on the prepared baking sheet; top with Cheddar cheese and dot with refried beans and ground beef mixture.
  • Broil in the preheated oven until cheese is melted, watching carefully to prevent burning, 3 to 5 minutes.

  • Adjust oven rack to middle position and heat oven to 400 degrees.
