STEAKHOUSE PIZZA

ULTIMATE HOMEMADE PIZZA RECIPE BY TASTY
Here's what you need: flour, kosher salt, active dry yeast, water, cornmeal, flour, tomato paste, hot water, red wine vinegar, maple syrup, salt, pepper, garlic, dried oregano, dried basil, dried marjoram, cayenne pepper

Steps:
- In a very large bowl, whisk together the dry ingredients.
- Make a divot in the middle of the flour mixture and add a few tablespoons of water. Stir with a wooden spoon, gradually adding more and more water until the dough starts to come together. You may need a tablespoon more or less water, depending on the consistency of the dough as it forms.
- Using your hands, ensure the dough is well incorporated, but do not knead. Be careful not to overwork the dough.
- Cover with plastic wrap and store at room temperature overnight, or for at least 12 hours, until doubled in size and porous.
- Make the sauce by combining tomato paste, water, vinegar, maple syrup, salt, pepper, garlic, oregano, basil, marjoram, and cayenne pepper in a medium bowl. Let sit at room temperature for an hour before canning or jarring. Refrigerate as necessary up to 2 weeks.
- Once the dough has risen, transfer to a clean, floured work surface and form into a large ball. Cut the dough into 6 equal parts and form dough balls by folding the corners into themselves.
- Place the dough balls on a floured sheet pan, sprinkle with flour, and cover with a damp towel for about 30 minutes to an hour.
- Preheat oven with a pizza stone in it to 500ªF (260ºC) or a low broil.
- Work each dough into a disk on a floured work surface. Knuckling the edges of the dough and tossing it gently will help thin it out. Be careful not to rip the dough.
- Place the dough disk onto a pizza peel generously floured with semolina or cornmeal. This will prevent sticking. Top with desired sauce, cheese, and toppings.
- Slide the pizza onto the stone and bake for about 9 minutes, watching carefully to make sure it doesn't burn. Look for the edges to become charred and crispy and the cheese to bubble.
- Let the pizza cool for 5 to 10 minutes before cutting and serving.
- Enjoy!

Steps:
- Preheat oven to 500 degrees, with racks in upper and lower thirds. On a lightly floured surface, roll out 1 dough half into a 14-inch oval. Transfer dough to a parchment-lined baking sheet and brush with 1 teaspoon oil. Repeat with remaining dough half. Bake until crusts are puffed and golden brown, about 14 minutes, piercing large air bubbles with a knife, if necessary, and rotating sheets halfway through.
- Meanwhile, pat steak dry and season with salt and pepper. In a large cast-iron or other heavy skillet, heat 1 teaspoon oil over medium-high until almost smoking. Cook steak until medium-rare, 6 to 8 minutes, flipping once. Transfer to a cutting board, tent with foil, and let rest 10 minutes.
- In skillet, heat 2 teaspoons oil over medium. Add onion and bell peppers and season with salt and pepper. Cover and cook, stirring occasionally, until beginning to soften, about 5 minutes. Uncover and cook until vegetables are crisp-tender and dark brown in spots, 8 minutes.
- Thinly slice steak against grain. Top crusts with steak, vegetables, and cheese. Bake pizzas just until cheese is melted, 3 minutes. Sprinkle with parsley before serving.

STEAKHOUSE STEAK IN A PIZZA OVEN
We love our pizza ovens for turning out beautifully charred, ready-in-90-seconds pizzas, but they can do much more than that. They roast veggies in no time, bake fish fillets to moist perfection and even cook steaks like a pro. Here's our method for the latter. While cooking the meat twice may seem unusual, it's a method used by some of the country's oldest and best steakhouses. The blast of high heat at the beginning caramelizes the exterior; slicing the meat, basting with butter and then returning it to the oven adds flavor and moisture while it evenly cooks to your preferred level of doneness.

Steps:
- Preheat the pizza oven for 15 minutes.
- Meanwhile, rub the steaks all over with 1 tablespoon of the butter each, then season generously with salt and pepper.
- Put a medium cast-iron skillet in the pizza oven and let it heat for 5 minutes. Place the steaks in the skillet, return the skillet to the oven and cook until there is a dark brown crust on the bottom of the steaks, 2 to 5 minutes. Flip the steaks and cook until the other side develops a dark brown crust, 2 to 5 minutes more.
- Transfer the steaks to a cutting board with tongs, reserving the skillet. Holding the steaks in place with the tongs, cut 1/2-inch-thick slices crosswise. Transfer the steaks back to the skillet, pushing the slices together so they all touch. Spread 2 tablespoons of the butter on top of each steak and return to the oven.
- Cook to your desired temperature, basting with the melted butter halfway through. For reference, medium rare was about 2 minutes more for us, but it may vary based on your oven's temperature.
STEAK, MUSHROOM, AND ONION PIZZA
My husband wanted something a little different for pizza night tonight. He wanted a pizza with beef and onions, and maybe a few mushrooms. It sounded to me like he might have been inspired by steak & mushroom pie (especially considering he'd just been to the British import shop & bakery!). So here is my interpretation!

Steps:
- Heat 2 tablespoons oil in a large skillet over medium-high heat. Add onions, mushrooms, and garlic and saute 1-2 minutes, or until starting to release juices. Add salt, pepper, thyme, and balsamic vinegar and stir-fry until onions are just turning brown, about 10 minutes. Remove from pan and set aside.
- In same skillet, heat remaining 2 tablespoons olive oil. Add beef strips and stir-fry until browned, about 4-5 minutes. Add mushroom mixture back to skillet and cook until heated through. Add enough flour to thicken juices. Remove from heat and set aside.
- Meanwhile, heat oven to 400* F. Spread pizza dough out into a 12 inch circle in a greased pizza pan. Bake at 400* F for about 10 minutes, or until just turning pale golden.
- Spread sauce over crust. Top with about 1 cup of the mozzarella cheese (use more if desired). Place beef mixture evenly over cheese. Top with remaining mozzarella.
- Return to oven and bake at 400* F for another 10-12 minutes, or until cheese is melted with golden brown spots.
