A delightful tuna dish with a touch of heat from the Wasabi powder and black pepper, but oh, so good.

1 lb very fresh tuna, cut 1 inch thick (2 steaks)
2 tablespoons melted butter
1 teaspoon wasabi powder (Japanese Horseradish)
1/2 teaspoon fresh ground black pepper
1/2 teaspoon granulated garlic powder
2 tablespoons extra virgin olive oil

Steps:

  • Melt butter in a small casserole dish (in a microwave).
  • Place tuna steaks into the melted butter and coat all sides.
  • In a small bowl, mix together wasabi powder, coarse black pepper and granulated garlic powder.
  • Sprinkle tuna steaks with wasabi mixture on all sides and lightly rub into the steaks with your fingers.
  • Heat olive oil and any left over butter in a heavy-bottom frying pan on medium-high heat.
  • Add tuna steaks and sear for 45 seconds, then turn over and sear for another 45 seconds.
  • DO NOT OVERCOOK TUNA STEAKS.
  • Just make sure that you have a light crust on each side.
  • Let fish rest for 2 minutes before slicing.
  • You may serve whole or cut into thin slices.
  • Serve on cooked rice or Saffron Ratatouille.
  • Then spoon some Lemon Basil Pesto over steaks.
  • Purchase Ahi Ahi Tuna - yellow fin, this is the best.

1 lb fresh ahi tuna
salt
pepper
1/3 cup rice vinegar
1 tablespoon sugar
1/2 cup sesame oil
1/3 cup soy oil
1 lb wakame seaweed
2 small chili peppers, seeded and chopped (seeding the pepers is optional)
4 tablespoons sesame seeds
2 cups balsamic vinegar
2 tablespoons mild molasses
2 cups olive oil
3 cups cilantro

Steps:

  • Brush tuna with olive oil and season each side with salt and pepper.
  • Grill for 2 minutes on each side, remove from heat and slice in 16 1 oz medallions.
  • In a mixing bowl, combine rice vinegar, salt, sugar, and both oils (sesame and soy).
  • Pour dressing over Wakame, add chile peppers and toss.
  • Sprinkle with sesame seeds.
  • Boil balsamic vinegar and molasses in small,heavy pan overmedium heat.
  • Reduce by half and cool.
  • Combine olive oil, cilantro, salt and pepper to taste; blend in food processor until smooth.
  • Strain through fine sieve.
  • Keep refrigerated up to two days, but use at room temperature.
  • Place a mound of Wakame salad on plate.
  • Arrange tuna medallions around edges of Wakame.
  • Drizzle olive oil and cilantro mixture on plate, then drizzle molasses mixture on plate.

If you like the flavor of wasabi you will like this recipe. These do not come out of the pan fiery hot, but with wasabi flavor. You can always add more heat if you wish.

1/4 cup soy sauce
3 teaspoons wasabi paste
1/2 teaspoon cracked black pepper
12 ounces ahi tuna steaks, 3/4 to 1-inch thick (2 steaks)
1/4 cup sesame seeds

Steps:

  • In a shallow dish, combine the soy sauce, wasabi paste and cracked black pepper; mix well.
  • Add the tuna and turn until thoroughly coated on both sides.
  • Let sit for 10 minutes or plan ahead and let marinate overnight in a zipper bag or foodsaver bag.
  • Coat a pan with nonstick cooking spray and preheat over high heat.
  • Place the sesame seeds in another shallow dish, add the tuna and turn to coat completely.
  • Grill the tuna for 1 to 2 minutes per side, or until browned or cooked to desired doneness. Slice thinly and serve with rice or stir fry.
  • Remember fish cooks fast and will be dry and chewy if overcooked.

I came up with this the first time I purchased an ahi tuna steak to make at home. For me, less is more when it comes to ahi because I really love the flavor of the fish. This recipe is super easy and it makes a great presentation over a baby spinach salad.

8 ounces ahi tuna steaks, sushi grade
2 -3 tablespoons peppercorns, cracked
2 tablespoons olive oil
salt

Steps:

  • Rub the steak with one tbs of the olive oil.
  • Put the peppercorns on a plate and press the tuna steak into the peppercorns until it is coated.
  • Sprinkle the steak with salt to taste.
  • Heat the other tbs of olive oil in a non-stick pan on medium high heat.
  • Cook the steak 2-3 minutes per side.
  • Slice the steak into 1/4" slices and serve over salad or rice.
  • Note: If you do not care for raw or rare fish this recipe is not for you. Cooking a tuna steak for 2-3 minutes per side will leave the middle quite rare, and barely warm. You could cook the fish longer until it is well done, but then you would basically spending a lot of money on a cut of fish that is meant to be served rare or raw. (IMHO!).

4 tuna steaks
1/2 tablespoon cumin
1 tablespoon oregano
1 tablespoon thyme
1 tablespoon dry mustard
1 tablespoon cayenne
1 tablespoon black pepper
1 tablespoon paprika
6 ounces Grey Poupon Dijon Mustard
3/4 cup soy sauce
1/4 tablespoon dry mustard
1 green bell pepper, julienned
1 red bell pepper, julienned
1 small onion, sliced thin
1 teaspoon oregano
1/2 teaspoon pepper
1/2 teaspoon salt
3 tablespoons olive oil

Steps:

  • Heat olive oil in saucepan and saute peppers and onion with salt, pepper and oregano.
  • In a small bowl mix all spices for tuna and season steaks on all sides. About 2 minute per side.
  • Heat skillet on high and sear tuna on all sides in olive oil.
  • In a bowl combine ingredients for mustard sauce.
  • To serve slice tuna 1/4 inch thick and top with sauce and vegetables.
