CRISPY UN-FRIED CHICKEN

Steps:
- In a large bowl, stir together the buttermilk, hot sauce and 1 teaspoon each of the garlic powder, onion powder and salt. Add the chicken and toss to coat. Refrigerate for at least 1 hour and up to overnight.
- Preheat the oven to 425 degrees F.
- Put the breadcrumbs, paprika, cayenne and the remaining teaspoon garlic powder, onion powder and salt in a large resealable plastic bag; shake to combine. Remove the chicken from the brine and add it to the bag. Seal the bag and shake vigorously to coat the chicken.
- Line a baking sheet with a rack and spray well with nonstick spray. Arrange the chicken on the rack, skin-side up, and spray the chicken very generously.
- Bake until the chicken is golden brown and cooked through, about 40 minutes.
FRIED RICE RESTAURANT STYLE
A quick fried rice like you get at your favorite Chinese restaurant. A couple of eggs, baby carrots, peas and soy sauce is all you need.

- In a saucepan, combine rice and water. Bring to a boil. Reduce heat, cover, and simmer for 20 minutes.
- In a small saucepan, boil carrots in water about 3 to 5 minutes. Drop peas into boiling water, and drain.
- Heat wok over high heat. Pour in oil, then stir in carrots and peas; cook about 30 seconds. Crack in eggs, stirring quickly to scramble eggs with vegetables. Stir in cooked rice. Shake in soy sauce, and toss rice to coat. Drizzle with sesame oil, and toss again.

UN-FRIED FRENCH FRIES
These look almost as good as they taste. But they are NOT McDonald's fries. At half a gram of fat per serving (versus 16 grams for the same amount of the fried variety) you can munch away guiltlessly. Steps:
- Preheat the oven to 400 degrees.
- Slice each potato lengthwise into 1/4-inch ovals, then slice each ovallengthwise into matchsticks (i use a mandoline which makes this go much quicker).
- Coat a baking sheet with 3 sprays of the vegetable oil.
- Combine the egg whites and cajun spice in a bowl.
- Add the matchstick potatoes and mix to coat.
- Pour the coated potatoes onto the prepared baking sheet and spread them out into a single layer, leaving a little space between them.
- Place the baking sheet on the bottom shelf of the oven.
- Bake for 40 to 45 minutes, until the fries are crispy, turning them every 6 to 8 minutes with a spatula so that they brown evenly.
- Serve immediately.
SHRIMP UN-FRIED RICE

- 1. Heat 1 teaspoon of the oil in a skillet over medium heat. Add the whisked eggs and cook for 1 minute stirring to make scrambled eggs, then remove to a plate.
- 2. Heat the remaining 2 teaspoons oil, add the red bell peppers and cook 3-4 minutes, until soft. Add the edamame and garlic and cook 1 more minute.
- 3. Add the shrimp and salt and cook 3 minutes, until they are bright pink.
- 4. Add the cooked eggs, rice, soy sauce and sesame seeds and cook 2 minutes, just until heated through.
- 5. Top with the scallions and serve.

- In a large pot or pan over medium-high heat add your 1/2 cup low-sodium broth. Turn your ventilation hood on high. Add your frozen vegetables first and allow to saute for 5 to 7 minutes, stir well.
