PEANUT BUTTER HEART COOKIES
My favorite soft and chewy peanut butter cookies, with a Reese's peanut butter heart pressed into the center.

Steps:
- Preheat oven to 375 degrees F.
- In a mixing bowl cream together butter, shortening, peanut butter, 1/2 cup granulated sugar, and brown sugar until light and fluffy, about 2 minutes.
- Add and eggs, mixing after each addition. Mix in the vanilla.
- In a separate bowl whisk together flour, baking soda, and salt.
- Stir dry ingredients into the wet ingredients and mix gently to combine. Don't over-mix. The dough will be very soft.
- Pour remaining 1/2 cup of granulated sugar into a small bowl. Line a cookie sheet with parchment paper.
- Scoop dough into balls and then roll in sugar.
- Bake for 7-10 minutes, just until set. They will be pale, and look just barely set. Don't over-bake them or they will be hard once cooled.
- Remove from oven and allow to cool on baking sheet for 2-3 minutes, and then transfer to cooling rack.
- Press an unwrapped Reese's heart to the center of each warm cookie. Allow cookies to cool completely.

VALENTINE BUTTER COOKIES
These tender buttery cookies will simply melt in your mouth and the sweet buttery icing sends them over the top. They are perfect for cut out cookies and the dough doesn't have to be chilled. They will become your new favorite cookie!

- Sift or mix the dry ingredients together in a medium bowl and set aside.
- Place the butter in the bowl of a stand mixer, or use a hand mixer. Mix the butter on medium speed for a couple of minutes, until it is very light and creamy. Mix in the powdered sugar, on low speed, until the sugar and butter are very light and fluffy.
- Slowly add in the dry ingredients and mix just enough to incorporate the dry mixture.
- Using about 1/3 of the dough at a time, place the dough on a floured surface and roll out to about 1/4″ in thickness with a rolling pin, or pat the dough out with your hand.
- Cut the cookies into desired shapes with cookie cutters. Place them on an ungreased cookie sheet and bake for about 10 minutes until they are just barely brown on the bottom and still white on top. Transfer to a wire rack to cool...frost and decorate.
- Place the butter in the mixing bowl of a stand mixer, or use a hand mixer. Mix on medium speed until the butter is light and creamy. Mix in the vanilla. Gradually add in the powdered sugar, one cup at a time, until the mixture becomes very light and creamy. If the mixture seems a little too thick, add a tiny bit of milk, 1 teaspoon at a time. If it seems too thin, add a little more sugar, until you've reached the perfect spreading consistency.
- Frost and decorate the cookies. Allow them to set uncovered until the frosting has time to set.
- Store the cookies in an airtight container.
OLD FASHIONED BUTTER VALENTINE COOKIES DIPPED IN CHOCOLATE
Steps:
- Sift the flour, baking powder, and salt together in a bowl; set aside.
- Beat the 1 cup butter with the sugar, egg, milk, and vanilla extract in another bowl until well mixed.
- Gradually mix the flour mixture into the butter mixture.
- Shape the dough into a disk; wrap with plastic wrap and refrigerate for at least 2 hours.
- Working with half the dough at a time, roll out dough to about 1/8-inch thick.
- Cut into cookies with a large heart shaped cookie cutter. Repeat with the remaining half of the dough.
- Cut the center of half of the cookies with a smaller heart shaped cookie cutter.
- Place an open centered cookie on top of a whole cookie to form a sandwich. Arrange cookies on an ungreased baking sheet; set aside.
- Preheat an oven to 400 degrees F (200 degrees C).
- Place the raspberry jam in a microwave save bowl and heat on high until jam is runny, about 35 seconds.
- Fill the center of the cookies with the jam. Refrigerate cookies for 10 minutes.
- Bake in the preheated oven until the cookies are firm to the touch, 5 to 8 minutes. Cookies will be pale in color.
- Transfer cookies to a wire rack to cool completely.
- Melt the chocolate and 2 tablespoons butter in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting until smooth, for 1 to 3 minutes, depending on your microwave.
- Spoon chocolate decoratively over half of each cookie.
- Place cookie on a waxed paper lined baking sheet and refrigerate until the chocolate has set, about 15 minutes.
