Vanilla Iced Coffee -- Simple and Easy image

It only takes a minute to make up a tall, cold glass of this refreshing, hot-weather drink. You've probably got all the ingredients on hand. While its best if you thought ahead to make some double-strong coffee, that last mugfull that got cold in the pot will do. ;) (I confess, I can't afford to use real vanilla all the time. The artificial kind works just fine in this for my tastes).

8 -10 ounces double-strong coffee, cold (I prefer half-caf or half decaf and half dark roast)
1 -2 tablespoon milk or 1 -2 tablespoon cream, to taste
1 (1 g) packet Splenda sugar substitute, to taste (or more, or equivalent in preferred sweetener)
1/2 teaspoon vanilla extract
ice

Steps:

  • Fill a tall glass 2/3 full of ice.
  • Add cream, Splenda, and vanilla.
  • Add coffee and stir well.

1/3 cup ground coffee
1 cup water
1/4 cup sugar
2 tablespoons instant vanilla pudding mix
2-1/2 cups 2% milk

Steps:

  • Place ground coffee in the coffee filter of a drip coffeemaker. Add water; brew according to manufacturer's directions., In a small bowl, combine sugar and dry pudding mix. Stir in milk and coffee. Chill until serving.

1 cup ground coffee
4 vanilla beans, split lengthwise (save the pods for garnish)
1 cup milk
1/4 cup sugar
ice cube

Steps:

  • In a pitcher, stir the ground coffee into 4 cups water.
  • Cover and let rest at room temperature overnight or for at least 12 hours.
  • In a saucepan over medium heat, combine the vanilla beans, milk, and sugar.
  • Bring the mixture to a simmer and immediately remove from the heat.
  • Allow to steep for about 20 minutes.
  • Select 4 tumblers.
  • Strain the coffee through a fine-mesh sieve into a large bowl.
  • Strain again through a coffee filter into a large, clean pitcher.
  • Fill the glasses with ice cubes.
  • Pour the coffee into the glasses, filling them within 1 inch of the rim.
  • Top each glass with ¼ cup of the vanilla flavored milk.
  • Garnish each drink with a vanilla bean pod and serve immediately.

Stir gently to combine and then cover with a piece of cheesecloth or a kitchen towel. Let sit a room temperature for at least 12 hours or up to overnight. Strain the coffee through a mesh strainer lined with a piece of cheesecloth. Chill in the fridge for up to 1 week.
  • Combine the coconut milk, vanilla bean seeds and honey in a small sauce pan and bring to a low boil. Simmer 3-4 minutes, then remove from the heat, cover and steep 10-15 minutes. Transfer the milk to a glass jar and store in the fridge for up to 1 week.
  • Fill your glass with ice cubes (or Chocolate Coffee Ice Cubes - recipe below), pour your cold brewed coffee overtop. Add the vanilla coconut milk to your liking. DRINK!
