VANILLA TIRAMISU
Put a tasty twist on classic tiramisu with this tasty Vanilla Tiramisu recipe. Chocolate lovers, not to worry-there's still grated chocolate on top and it goes perfectly with a cup of hot coffee or tea.

Steps:
- Beat cream cheese in large bowl with mixer until creamy. Gradually add milk, beating well after each addition. Add dry pudding mix; beat on low speed 1 min.
- Sprinkle cut sides of ladyfingers with coffee. Place 1/3 of the ladyfingers in 9-inch square dish; top with layers of half each of the pudding mixture and COOL WHIP. Sprinkle with 1/3 of the grated chocolate. Repeat all layers. Top with remaining ladyfingers and grated chocolate.
- Refrigerate 3 hours.

Steps:
- Beat cream cheese in large bowl with mixer on medium speed until creamy.
- Slowly add milk, beating well after each addition.
- Add dry pudding mix; beat on low speed until well blended.
- Dust cut sides of ladyfingers with coffee; place half of the ladyfingers on the bottom and up side of 1 ½ quart serving bowl.
- Top with layers of half each of the pudding mixture, whipped topping, and grated chocolate; cover with remaining ladyfingers.
- Repeat layers of pudding mixture, whipped topping, and grated chocolate.
- Refrigerate 3 hours.

EASY NILLA TIRAMISU
I got this from the kraft foods website. It's super-easy to make and tastes GREAT! It's more like a tiramisu pudding than a cake though. Try it. I bet you'll like it. The cook time is the least amount of time that your dessert needs to be refrigerated before serving.

- Whip the cream cheese and then add the liquer and whip some more. Next, add the sugar and mix really well. Gently stir in the whipped topping. Line an 8" dish with nilla wafers and spoon over them some of the cream cheese mixture. Keep layering until you've used all the cream cheese mixture. Lastly, dust with the cocoa and refrigerate for several hours.

Steps:
- Combine egg yolks and sugar in the top of a double boiler, over boiling water. Reduce heat to low, and cook for about 10 minutes, stirring constantly. Remove from heat and whip yolks until thick and lemon colored.
- Add mascarpone to whipped yolks. Beat until combined. In a separate bowl, whip cream to stiff peaks. Gently fold into yolk mixture and set aside.
- Split the lady fingers in half, and line the bottom and sides of a large glass bowl. Brush with coffee liqueur. Spoon half of the cream filling over the lady fingers. Repeat ladyfingers, coffee liqueur and filling layers. Garnish with cocoa and chocolate curls. Refrigerate several hours or overnight.
- To make the chocolate curls, use a vegetable peeler and run it down the edge of the chocolate bar.

- Whisk together yolks and mascarpone in a large bowl until smooth. Add granulated sugar; whisk until dissolved. Set aside.
- Place biscotti in the bowl of a food processor; pulse to form coarse crumbs. Fold biscotti into mascarpone mixture; set aside.
- In the bowl of an electric mixer fitted with the whisk attachment, add egg whites; beat until soft peaks form. Fold egg whites into mascarpone mixture; set aside.
- Combine espresso and liqueur in a medium bowl; pour half the mixture into a pie plate. Quickly dip half the ladyfingers individually into the pie plate, and place in the bottom of a 13-by-9-inch glass baking dish; fit snugly to line. Evenly spread half the mascarpone mixture over ladyfingers; repeat layers.
- In a large bowl, whisk together heavy cream, confectioners' sugar, and vanilla until soft peaks form. Spread whipped cream evenly over tiramisu; garnish with grated chocolate. Chill at least 2 hours and preferably overnight before serving.

- Start syrup: Combine white sugar and boiling water in a medium bowl; stir until sugar dissolves. Set aside.
- Prepare filling: Combine powdered sugar, mascarpone cheese, 1/4 cup tuaca, and vanilla extract in a bowl; whip with the whisk attachment of an electric mixer until smooth. Gradually add whipping cream and whip until soft peaks form.
- Continue syrup: Mix coffee and tuaca into the sugar-water mixture.
- Assemble tiramisu: Line the bottom of a 9x13-inch glass baking dish with ladyfingers. Pour 1/2 of the syrup over top, then layer with 1/2 of the filling. - In 2-quart saucepan, beat egg yolks and sugar with wire whisk until well mixed. Beat in milk. Heat to boiling over medium heat, stirring constantly; reduce heat to low. Boil and stir 1 minute; remove from heat. Pour into medium bowl; place plastic wrap directly onto surface of custard mixture. Refrigerate about 1 hour or until chilled.
- Add cheese to custard mixture. Beat with electric mixer on medium speed until smooth; set aside.

- Separate ladyfingers horizontally; brush with espresso mixture (do not soak). In ungreased 11x7-inch glass baking dish, arrange half of the ladyfingers in single layer. Spread half of the cheese mixture over ladyfingers; spread with half of the whipped cream. Repeat layers with remaining ladyfingers, cheese mixture and whipped cream. Sprinkle with cocoa. Refrigerate at least 4 to 6 hours to develop flavors but no longer than 24 hours. Store covered in refrigerator.

- Make the whipped cream. Place the sugar into the mixing bowl and add the whipping cream. Whisk until the cream reaches stiff peaks. Keep refrigerated until used.
- Take a round cake pan with removable bottom and carefully arrange ladyfingers all around the sides and then on the bottom (using a sharp knife, cut some of the ladyfingers in small pieces to fit).
- Using a tablespoon, add coffee over the ladyfingers at the bottom only, until slightly moist (don't pour too much coffee!)
