EASY CREAMY VANILLA FUDGE
This is really yummy fudge. It's creamy, easy and tastes great! There are lots of things you can add to this recipe!

Steps:
- Grease a 9x5 inch pan. Set aside.
- In a 3 quart saucepan, over very low heat, mix together confectioners sugar, butter, milk, vanilla, and salt until mixture is creamy.
- Pour quickly into greased 9x5 inch pan. Refrigerate until firm, then cut into squares. Store in an airtight container in the refrigerator.

CRANBERRY WALNUT WHITE FUDGE
A visit to several Oregon cranberry farms inspired my unusual fruit-flavored white fudge. I make it for family and friends at holidays and for special occasions. I was thrilled when the recipe earned first place at our county fair.

- Line an 8-in. square pan with foil and butter the foil with 1 teaspoon butter; set aside. In a heavy saucepan, bring the sugar, sour cream and remaining butter to a boil over medium heat. Cook and stir until a candy thermometer reads 234° (soft-ball stage), about 15 minutes., Remove from the heat. Stir in the chips, marshmallow creme and vanilla until smooth. Fold in walnuts and cranberries. Pour into prepared pan. Let stand at room temperature until cool., Using foil, lift fudge out of pan. Discard foil; cut fudge into 1-in. squares. Store in an airtight container in the refrigerator.

My son just loves this fudge. I believe it is from an old church cook book. It reminds you of a maple type fudge.

Steps:
- Bring all ingredients except vanilla and nuts to a full boil and time boiling for 4 minutes.
- Add vanilla.
- Beat with electric mixer for 10 minutes.
- Stir in nuts.
- Spread into greased 8" pan.
- Cut into squares before it cools completely.
- Store in air tight container.

- LINE AN 8X8" BAKING PAN WITH ALUMINUM FOIL, WITH 3-4" OF FOIL HANGING OFF EITHER SIDE. AND SET ASIDE.
- PLACE THE ALMOND BARK, BROKEN INTO LARGE CHUNKS, INTO A LARGE MICROWAVABLE-SAFE BOWL. MELT BARK ON HIGH FOR 60 SECONDS, THEN STIR. MELT FOR ANOTHER 60 SECONDS AND STIR.
- CONTINUE TO DO THIS AT 30 SECOND INTERVALS UNTIL BARK IS SMOOTH AND COMPLETELY MELTED (IT TOOK ME ABOUT 3 MINUTES TOTAL, BUT IT WILL DEPEND ON YOUR MICROWAVE).
- SCOOP THE ENTIRE CONTAINER OF PEANUT BUTTER INTO THE BOWL OF MELTED BARK AND STIR UNTIL PEANUT BUTTER IS COMPLETELY INCORPORATED AND MIXTURE IS SMOOTH. POUR MIXTURE INTO PREPARED PAN AND PLACE IN THE FRIDGE FOR 1-2 HOURS OR UNTIL SET.
- REMOVE FUDGE FROM FRIDGE AND USING THE ALUMINUM FOIL HANGING OVER EACH EDGE, LIFT THE FUDGE OUT OF THE PAN.
- CUT FUDGE USING A SHARP KNIFE (FOR SMOOTH CUTS, RUN YOUR KNIFE THROUGH HOT WATER BEFORE EACH CUT) INTO 1X1" PIECES.
