- Mash black beans: Place rinsed and drained black beans in a bowl. If needed, blot them with a paper towel to remove extra moisture. Place in a large bowl and mash well with a fork.
- Puree Veggies: Place bell pepper, onion and garlic in a food processor and process until finely minced.
- Strain: Transfer pureed veggie mixture to a fine mesh strainer and use the back of a spoon to press out excess moisture. (If it's too wet, the burger wont hold together as well.)
- Combine: Add the strained vegetable mixture to the bowl with the black beans. Add the chili powder, cumin and salt and pepper and stir to combine. Add beaten egg and mix. Stir in bread crumbs.
- Form Patties: scoop mixture into 4 even sized patties, forming them and pressing flat with your hands.

- Preheat oven to 425°F. Line 1 large or 2 small baking sheets with parchment or foil.
- Steam or boil the carrots until soft, 7-8 minutes.
- Combine the carrots and black beans in a large bowl and use a potato masher to mash until the mixture holds together.
- Add the onions, bell pepper, chipotle, and corn and stir until combined.
- Add the salsa, breadcrumbs, flour, black pepper, and chili powder and stir until smooth and incorporated.
- The mixture should hold together like dough. If it's too liquid, add some more flour, and if it's crumbly, add more salsa or water.
- Take baseball-sized portions of the mixture, roll into balls, and flatten on the prepared baking sheet.
- Repeat with the rest of the mixture. You should get 12 burgers.
- Bake for 18-20 minutes or until firm with a crispy exterior.
- Combine all of the chipotle mayo ingredients in a blender or small bowl and blend or mash until smooth.
- Taste and adjust flavors if needed.
- Place a burger on your favorite type of bun, then top with chipotle mayo and other desired toppings.

SPICY BLACK BEAN BURGERS WITH CHIPOTLE MAYONNAISE
One bite of this spicy black bean burger with spicy chipotle mayo and creamy avocado and you won't miss the meat! Yes, these were good enough to please even the adult carnivore's in my home (a bit too spicy for my kids).

- Combine mayonnaise and chipotle, set aside.
- Dry the beans well after washing, extra moisture will keep the burgers from sticking.
- In a medium bowl, mash beans with a fork until thick and pasty.
- In a food processor, finely chop bell pepper, cilantro, onion, and garlic, then add oats, then eggs and spices.
- Then stir into mashed beans.
- Divide mixture into four patties (using slightly oiled hands helps) and place them onto a flat surface covered with wax paper. (If it's too wet, chill the mixture 30 minutes in the refrigerator or add another tablespoon of oats)
- Freeze at least 2 hours before cooking or keep frozen until ready to cook.
- Heat a lightly sprayed skillet to medium heat and cook frozen burgers about 7 minutes on each side.
- If grilling, preheat grill over medium heat, and lightly oil a sheet of aluminum foil; grill 7-8 minutes on each side or you can bake in the oven at 375° on a lightly oiled baking sheet.

CHIPOTLE BLACK BEAN BURGERS (VEGAN!)
These were just an experiment made quickly with what was on-hand in the food processor--but a great success served on whole wheat buns with guacamole! You can easily modify to suit your own preferences. I added one chipotle from a can of chipotles-in-adobo sauce. In case you're wondering what to do with the rest of that can: I separate a few chiles with some sauce into tiny plastic containers (you know those ones you never use?) and keep them in the freezer until needed. Just a minute in the microwave dethaws! Note that the cornmeal is the main binder/thickener for this recipe--add it a bit at a time, and don't be afraid to add a few tablespoons more if your burger mix is still a bit runny. I've found that leaving a bean burger mix alone to absorb moisture for a few minutes can also be helpful before trying to form patties.

- Preheat your oven to 400 F and spray a baking pan lightly with oil.
- Add the first five ingredients (chili through rice) to your food processor and pulse to chop. Then add the drained, rinsed black beans and process until beans are mostly broken down.
- Now begin adding the corn meal in small amounts, pulsing as you go. The mixture will likely remain somewhat "sticky"--that's fine. But you do want it to be "dry" enough to handle without it sticking to your hands. As you add the final bit of cornmeal, add salt and pepper and give the mix a taste for seasoning and make adjustments if necessary.
- Once you've incorporated the cornmeal and seasoned, pour into a separate bowl and allow to sit in the refrigerator for 10-15 minutes.
- Remove the chilled mix from the refrigerator, and portion by hand into four separate, burger-shaped patties. (I like to add a sprinkle of steak seasoning to the exterior at this point.) Place your shaped patties onto your prepped baking tray and slide them into the preheated oven. You will want to cook them about 8-10 minutes on this side, then take them out and flip before cooking an additional 5 minutes.

- Prepare the chipotle mayo by combining all the ingredients in a food processor or blender. Allow the sauce to cool in the refrigerator while you prepare the burgers.
- Place half the black beans in a medium bowl and using the back of a spoon or a potato masher, mash the black beans until they are mostly broken down. Add the remaining whole black beans, diced mushrooms, onions, baby spinach, 3 egg whites, panko, garlic, cumin, chili powder, salt, and pepper. Stir until everything is combined, then let the mixture sit for 5 minutes.
- Start forming the burger patties. Make 6-8 burger patties, depending on how big you would like them, make sure the sides are nice and smooth. If the patties are not holding together well, add the last egg white and mix before forming the patties.
- Heat a skillet over medium heat with oil. When the oil is warm, place the patties in the skillet and allow each side to cook for 4-5 minutes. You can also spray the patties with cooking spray if you do not want to use a lot of oil, but keep in mind you'll need to be extra gentle. Flip gently and allow to cook on the second side for 4-5 minutes. You can add a slice of cheese at this point if you'd like.
