Dairy-Free Avocado Chocolate Mousse (Vegan, Refined Sugar-Free) image

A creamy dairy-free avocado chocolate mousse made with just 5 ingredients then topped with coconut flakes and chopped hazelnuts!

2 large avocados (ripe, peeled, and pitted)
1/4 cup unsweetened cocoa powder
4 dates (pitted and soaked in water for 15 minutes (sub for 1/4 cup honey, maple syrup, or agave))
1/2 cup Califia Farms Toasted Coconut Almondmilk
1 teaspoon pure vanilla extract
Pinch of salt
Unsweetened coconut flakes and chopped hazelnuts for garnish

Steps:

  • In a food processor, add avocados, cocoa powder, dates (drained) or sweetener of your choice, Califia Farms Toasted Coconut Milk and salt.
  • Pulse until well combined and smooth. You may have to scrape the sides of the food processor with a spatula and pulse again.
  • Transfer mousse to jars and garnish with coconut flakes and chopped hazelnuts. Enjoy!

2 large soft avocados (approx 1-2 pounds of avocado)
1/2 cup hot coffee
2 tablespoons raw cacao powder (get the pure, fancy stuff)
1 dash agave nectar
stevia (to taste)

Steps:

  • Peel and pit the avocados. Dump avocados, coffee, cacao powder and agave nectar into a bowl and mix till smooth (use a hand mixer?). Add the stevia slowly to taste. Put in pretty serving bowls and chill. Really, it's that simple.

Don't over process it or it will turn into a paste, you still want some crunch in it and the base to hold together. Transfer it into a loose bottom tin and flatten it out evenly. I prefer loose bottom tins because it is so much easier to get cake out of them, especially no-bake cakes. The base will seem crumbly and rather sticky but don't worry, once it's frozen it will hold together very nicely. Transfer the form into the freezer and proceed with the cream.

Simply lay a neatly placed ring of berries at the edge of the form and tip the rest of the berries into the center. Spread them gently with your fingertips and you are done. This will take little time and look like you arranged each single blackberry.
