Vegan Jello image

Make easy vegan jello with agar agar, a gelatin substitute that comes from red algae. Use fruit juice or fruit puree for a tasty vegan treat.

1 cup water
1 cup fruit juice (100% fruit juice)
4 tablespoons sugar (adjust according to sweetness of juice)
1 1/4 teaspoons agar agar powder
1 cup water
1/2 cup fruit puree
4 tbsp sugar (adjust according to sweetness of juice)
1 tsp agar agar powder

Steps:

  • Combine all the ingredients in a small pot.
  • Bring to a boil then reduce to a simmer, mixing frequently. Simmer for 4 to 5 minutes.
  • Carefully pour into silicone molds or a greased heat-safe baking dish. Let sit until it reaches room temperature, then chill for 2 hours or until set.

I've experimented with these a lot and have finally found a combination that comes out as stiff as gelatin desserts but are completely vegan. Works well as a substitute for gelatin in other recipes or just as treats on it's own. Half of a cup of chilled juice can be replaced with your favorite liquor to make a cocktail.

½ teaspoon cornstarch
1 teaspoon water
2 cups cherry juice
1 teaspoon agar-agar

Steps:

  • Dissolve the cornstarch in the water in a small cup or bowl and set aside. In a saucepan, combine 1 1/2 cups of cherry juice and agar-agar powder. Let stand for 5 minutes to soften. Set heat to medium-high and bring to a simmer. Simmer for 1 minute.
  • Remove from the heat and stir in the remaining juice along with the cornstarch mixture until no longer cloudy. Pour into small serving cups and refrigerate for 4 hours before serving.

The texture is a little different than conventional Jello, but it does jell up quite nice and it tastes really good with unsweetened berry juices.

1 quart fruit juice
4 -5 tablespoons agar-agar flakes or 4 -5 teaspoons agar-agar, powder
1 pinch sea salt
chopped fruit

Steps:

  • Place liquid, salt and agar-agar into saucepan, stir to dissolve the flakes.
  • Bring to a boil, reduce flame and simmer for 2 - 3 minutes.
  • Place any additional ingredients (fruits, etc) into a shallow bowl and pour hot liquid overall.
  • Chill until jelled.

  • Pour the fruit juice into a small saucepan, and add in the agar agar flakes. Bring the juice to a boil, and whisk constantly to help the agar flakes dissolve. Once the juice is boiling the flakes have completely dissolved, remove the mixture from the heat.
  • Pour the liquid into the lined dish, then transfer the dish to your refrigerator to set. It will take up to 2 hours to cool completely. Slice into squares and serve chilled.
