Creamy Vegan Mayo! A fast and easy, low-fat recipe for homemade vegan mayonnaise , no-exploitative easy and flavorful!

Number Of Ingredients 6

1 package silken tofu, firm
3 tablespoons olive oil (use 2 for lower fat and add 2 tablespoons water)
2 tablespoons apple cider vinegar (you can also use lemon juice, but vinegar will preserve this longer)
1-2 tablespoons water
scant ½ teaspoon salt
1/2 teaspoon dijon mustard (optional)

Steps:

  • Place silken tofu, oil, water, apple cider vinegar, salt and optional mustard in a blender and blend until smooth, starting sloww and increasing speed, scraping down sides as needed. Feel free to add a tablespoon or two of water to get motor running, especially if using extra firm tofu.
  • Store in a sealable jar.
  • Enjoy as you would mayo.
  • This will keep 2-3 weeks in the fridge if using vinegar.

Vegan Mayo. I love this because it costs so little to make than store bought and plus having moved to Greece i just couldn't find any. It took me a long time trying recipes on the net and modify them to be actual mayo.This one is a modification of a lovely person here on this site and it works. I use a simple hand blender with it's own mixing jar and a "marize " silicone spatula to scrape every single oz.

1/2 cup soymilk
1/4 teaspoon salt (or more to taste)
1 teaspoon mustard
1 tablespoon apple cider vinegar (may need a tad more or less depending on your oil)
1 cup oil (I have used both corn and olive mixed and also a little less than a cup)
1/4 sweet paprika (if you feel like it)

Steps:

  • to start blend soy milk, salt, mustard, paprika.
  • Add the vinegar,blend for a few seconds.
  • Then slowly add the oil till smooth.
  • Some times you may not need all the oil so do not use it if you see it thickened already.
