CRISP ORANGE SHORTBREAD
Coeliac sufferers need not miss out on sweet treats with this gluten-free melt-in-the-mouth shortbread recipe

Steps:
- Heat oven to 190C/fan 170C/gas 5. Lightly oil a baking sheet. Beat the butter, then cream it with the sugar and orange zest until light. Stir in the flour and baking powder and mix together to form a dough.
- Divide the mixture into 10 balls, arrange on a baking sheet. Press each ball fl at with the tip of a round-bladed knife. Chill for 15 mins, then bake for 12-15 mins until light golden. Leave on the baking sheet for 2 mins before releasing with a palette knife. Slide onto a rack to cool. Will keep stored in an airtight container for up to a week.

VEGAN SHORTBREAD
Make our vegan shortbread with olive oil for a buttery flavour and cornflour to get the crumbliness of traditional versions. They taste great with nut butter

Steps:
- Whizz the flour, sugar, a pinch of salt and the cornflour in a food processor to sieve and mix briefly, then add the vanilla and drizzle in the olive oil, pulsing the food processor blades until you get a soft, golden dough. Wrap and chill for 30 mins to rest.
- Heat the oven to 180C/160C fan/gas 4, and line a baking sheet with parchment or a baking mat. Roll the dough out on a lightly floured work surface to a 5mm thickness and use a round or fluted cutter, about 6cm diameter, to cut out shortbread rounds. Use a small palette knife to transfer to the baking sheet. Can be frozen on the baking tray, then transfered to a box when solid. Will keep for up to three months.
- Sprinkle the 1 tbsp sugar over the biscuits and bake for 15-20 mins until golden brown. Leave to cool for a few mins to firm up on the tray, then transfer to a cooling rack to cool completely. Add 2-4 mins to the cooking time if baking from frozen.

VEGAN ORANGE SHORTBREAD FINGERS
Very simple, very quick, absolutely delicious orangey shortbread. I used Pure brand dairy free margarine and was surprised at how well they turned out, (no obvious margarine taste). This recipe came from Vegan Recipes, edited by Nicola Graimes and published by Southwater.

- Preheat the oven to 190C/375F/Gas 5.
- Beat the margarine and sugar together until soft and creamy. Beat in the finely grated orange rind.
- Gradually add the sifted flour and gently pull the dough together to form a soft ball. Roll the dough out on a lightly floured surface until about 1cm/1/2inch thick. Cut into fingers, sprinkle a little extra sugar if you wish (I don't), prick with a fork and bake for about 20 minutes or until the shortbread fingers are a light golden colour.

- Whisk together the vegan butter and the caster sugar with an electric mixer until it is light and fluffy, then whisk in the vanilla extract and a good pinch of salt.
- Sift together the plain flour and cornflour (cornstarch) then add them to the butter mixture. Stir with a spatula until it forms a dough, it may seem like it is too much flour but it will combine eventually. Don't knead the dough, just mix it until no dry patches remain.
- Tip the dough into the prepared tin and use your hands to pack it down as firmly and as evenly as possible. You can flour your hands if it is sticking.
