Kids Can Bake: Mini Morning Glory Loaves image

These adorable little loaves have the tenderness and nuttiness of whole wheat and are perfect for breakfast or an after-dinner treat. For both little and big kids: Let them help measure, mix, fill the pan and spread the glaze.

Cooking spray
1/2 cup pecan halves
1/2 cup unsweetened shredded coconut
1 1/2 cups whole wheat pastry flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon fine salt
1 stick (8 tablespoons) unsalted butter, melted and cooled slightly
1 cup sour cream
2/3 cup packed light brown sugar
1 teaspoon pure vanilla extract
3 large eggs
2 cups shredded carrots (about 1/2 pound carrots)
1 1/4 cups confectioners' sugar
1/2 cup whipped cream cheese
1 tablespoon lemon juice
Pinch fine salt

Steps:

  • For the cakes: Preheat the oven to 350 degrees F. Spray a 12-cup mini loaf pan with cooking spray.
  • Spread the pecans out on 1 side of a rimmed baking sheet, the coconut on the other, and bake until both are toasted, 5 to 7 minutes. Let cool, then finely chop the pecans.
  • Combine the flour, baking powder, baking soda, cinnamon, ginger and salt in a large bowl. Whisk together the butter, sour cream, brown sugar, vanilla and eggs in another large bowl. Stir the carrots, pecans and coconut into the egg mixture. Fold the flour mixture into the carrot-egg mixture until just combined. Divide evenly among the prepared pans (about 3 heaping tablespoons of batter per loaf). (Don't be alarmed if the batter seems skimpy; the cakes will rise once baked.)
  • Bake until the center of a cake bounces back when pressed and a toothpick inserted in the middle comes out clean, 20 to 22 minutes. Let the cakes cool in the pan for a few minutes, then transfer to a rack to cool completely.
  • For the glaze: Mix together the confectioners' sugar, cream cheese, lemon juice and salt in a medium bowl. Top each loaf with about 1 tablespoon of the glaze, and spread evenly with the back of the spoon.

1 cup whole wheat flour
2 tablespoons whole wheat flour
1 1/4 cups quick-cooking oats
4 tablespoons toasted wheat germ
4 tablespoons sugar
1/4 cup brown sugar
2 tablespoons unsweetened cocoa powder (I use dark)
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon cardamom
1/4 teaspoon salt
4 tablespoons dry buttermilk
2 tablespoons canola oil
4 tablespoons applesauce
2 teaspoons vanilla extract
1 egg
1/2 cup coffee (brewed strong)
1 cup boiling water
2 ounces dark chocolate chips (or chopped from a bar)

Steps:

  • Preheat oven to 350 degrees.
  • Combine dry ingredients in a large bowl.
  • In a separate bowl, whisk egg, oil, vanilla, applesauce, and gently add to dry ingredients.
  • Add hot coffee and boiling water, mix until just blended, and let stand for about 10 minutes.
  • Add chocolate chips.
  • Divide batter among 4 greased mini loaf pans with parchment paper covering the bottems.
  • Bake for 18-20 minutes.

1 ¼ cups milk
¼ cup white sugar
1 ½ tablespoons unflavored gelatin
1 tablespoon instant coffee granules
¼ teaspoon salt

2 cups heavy whipping cream
waxed paper
21 chocolate wafer cookies

Steps:

  • Beat egg yolks in a bowl. Reserve eggs whites.
  • Heat milk, egg yolks, 1/4 cup sugar, gelatin, instant coffee, and salt over medium heat, stirring constantly, until gelatin dissolves, about 5 minutes. Remove from heat and stir in vanilla extract. Chill until gelatin mixture is thickened to the consistency of unbeaten egg whites, about 1 hour.
  • Beat egg whites in a glass or metal bowl until foamy. Gradually add 1/4 cup sugar, continuing to beat until soft peaks form. Lift your beater or whisk straight up: the egg whites will form soft mounds. Fold gelatin mixture into egg whites.
  • Beat heavy cream in another until stiff peaks form. Fold egg white-gelatin mixture into whipped cream until evenly blended.
  • Line a loaf pan with waxed paper.
  • Spread about 1/4 the cream mixture into prepared loaf pan. Layer about 7 wafers over cream mixture. Repeat layers, ending with the cream mixture. Cover and refrigerate until set, about 3 hours.

1 cup coconut cream
1 1/2 cups coconut milk
3/4 cup strong brewed coffee or cold brew
2 cups ice
3 tablespoons sugar, plus 1 teaspoon more for the whipped coconut cream (see Cook's Note)
2 tablespoons natural cocoa powder, plus more for dusting
1 teaspoon pure vanilla extract
Pinch kosher salt
2 tablespoons sweetened shredded coconut, toasted

Steps:

  • Place the coconut cream in a large bowl, or the bowl of a stand mixer if using, and refrigerate for 10 minutes.
  • Add the coconut milk, coffee, ice, 3 tablespoons sugar, cocoa powder, vanilla and salt to a blender and blend on high speed until smooth and frothy, about 1 minute. Pour the frappe into 2 glasses and refrigerate while you whip the coconut cream.
  • Whip the chilled coconut cream and the remaining 1 teaspoon sugar in a stand mixer, or with a hand mixer, until it holds soft peaks, about 1 minute. Transfer to a piping bag fitted with an open star tip and pipe a swirl of whipped cream onto each drink. Sprinkle the cream with the toasted coconut and dust lightly with cocoa powder.

1 (12 ounce) package bacon
1 cup dry bread stuffing mix
⅔ cup grated Parmesan cheese
1 ½ tablespoons Worcestershire sauce
1 ½ tablespoons soy sauce
1 egg
1 (1 ounce) package dry onion soup mix
salt and ground black pepper to taste
1 cup shredded Swiss cheese
⅔ cup ketchup
⅔ cup prepared yellow mustard
¼ cup brown sugar
1 medium onion, chopped

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and let cool; crumble.
  • Place bacon, stuffing, Parmesan cheese, Worcestershire, soy sauce, egg, onion soup mix, salt, and pepper in a large bowl and mix well. Divide meat mixture into 6 individual portions. Mold each portion into oval-like shapes. Press top of each oval in and add Swiss cheese. Mold meat back up over the tops, enclosing cheese.
  • Mix ketchup, mustard, and brown sugar together in a separate bowl. Cover each loaf with mixture. Place loaves in the prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted into the centers comes out clean, about 45 minutes.
  • While loaves bake, saute onion over medium-high heat in a frying pan, 5 to 7 minutes. Top baked loaves with onions and let stand for 5 minutes to cool before serving.

1 jar (3-1/2 ounces) macadamia nuts, divided
1/3 cup sweetened shredded coconut
1-1/2 cups sugar, divided
3/4 cup butter, softened
2 large eggs
3 cups all-purpose flour
1 teaspoon baking powder
1/2 cup 2% milk
3 tablespoons lemon juice
2 teaspoons grated lemon zest
1-1/2 teaspoons vanilla extract

Steps:

  • Finely chop enough of the macadamia nuts to measure 1/3 cup; set aside. Coarsely chop remaining nuts; toss with coconut and 1 tablespoon sugar. Set aside. , In a large bowl, cream butter and remaining sugar until light and fluffy. Beat in eggs. Combine flour and baking powder; gradually add to creamed mixture alternately with milk, beating well after each addition. Stir in the lemon juice, lemon zest, vanilla and reserved finely chopped nuts. , Spoon into five greased 5-3/4x3x2-in. loaf pans. Sprinkle with reserved coconut mixture. Bake at 325° for 40-45 minutes or until a toothpick inserted in the center comes out clean (cover loosely with foil if top browns too quickly). Cool for 10 minutes before removing from pans to wire racks to cool completely.

These crusty little loaves make great bread bowls, sandwich rolls and toasting bread. This recipe makes 16-18 "baby breads" ..enough to last us the week and still have some for the freezer. A trick: Slice the loaves into fourths thru the "equators". Use the middle two slices for toast and the outer slices for a sandwich. A great recipe for beginning bread makers. Variations: Italian type bread: Sprinkle one baking sheet with cornmeal then slit the tops of the mini breads and sprinkle with more cornmeal. Bread Bowls: Do not reduce heat or spray with water after 10 minutes. Baking at a higher temperature will make a crustier and more substantial loaf. ****** Note! 1 teaspoon dry yeast
3/4 cup flour
6 cups water
1 teaspoon dry yeast
4 teaspoons kosher salt
13 cups flour
2 teaspoons olive oil
1 tablespoon olive oil or 1 tablespoon butter, to paint crusts (optional)

Steps:

  • Starter.
  • Combine water and yeast in a large bowl and mix well.
  • Add ¾ cup flour and whisk 100 times.
  • Cover and let set one hour.
  • Dough.
  • Add an additional tsp of dry yeast, 6 cups of (room temp.) water, 4 cups of flour and kosher salt to starter mix.
  • Whisk 50 times and let stand 2 minutes.
  • Using a large spoon mix in 2 cups of flour until well incorporated.
  • Add 3 cups of flour and mix until well incorporated.
  • Add another 3 cups of flour and mix until well incorporated.
  • Let dough rest 5 minutes.
  • Cover working surface with generous amount of flour (about a cup).
  • Turn soft wet dough onto surface and sprinkle with flour.
  • Dip your hands in flour and knead the dough.
  • (Push it down and forward with the heel of one hand. Then pull dough back from the top and fold dough over with the other.).
  • Gradually add the last cup of flour as you knead for about 5 minutes.
  • Shape dough into a ball and return to large bowl that has been lightly coated with 1 ½ tsp olive oil.
  • Brush top with ½ tsp olive oil.
  • Cover and let rise until doubled (approx an hour).
  • Deflate the dough, turn out unto a floured surface and knead for about a minute.
  • Separate dough in half.
  • Separate each half in half.
  • Divide these pieces into fourths.
  • (You should have 16 pieces. And sometimes I get 18 pieces-- lol).
  • Shape each piece into a tight ball and place on a greased baking sheet (up to 6 to a sheet).
  • Let rise for 30 minutes.
  • Preheat oven to 450F and place oven racks in the center of the oven.
  • Place a pan of water under the racks where the bread will bake.
  • Place loaves in hot oven for ten minutes.
  • *Spray/sprinkle loaves with water.
  • Reduce heat to 400F and continue baking for 10-12 minutes.
  • Remove from oven.
  • Paint w/ butter or oil for a softer crust (optional).
  • *For crustier loaves keep the 450F bake time to 20 minutes and omit 400F bake & water spritz.
