SPICY BLACK BEAN SLIDERS WITH CHIPOTLE MAYONNAISE
Mitts off, carnivores! With a melty layer of pepper jack and a slather of smoky Chipotle Mayo, these spicy vegetarian sliders are tough to resist, whether you're a meat-eater or not. Steps:
- Mix all ingredients together in a small bowl. Refrigerate in an airtight container until ready to use.
- Place beans in a small bow and mash with a fork or potato masher. Add egg, bread crumbs, adobo sauce, oregano, cumin, smoked paprika, cayenne (if using), salt and pepper. Mix well.
- Form into one-ounce patties - about 2 tablespoons per patty - by rolling mixture into a ball, packing together firmly, then flattening slightly.
- Add the olive oil to a large saute pan over medium heat. Working in batches so that the burgers aren't too crowded, cook one one side until browned - about 5 minutes, then carefully flip and cook until browned and cooked through, about 10 minutes total.
- Remove patties to a paper-towel-lined plate to drain and cool slightly.
- Put slider buns sliced-side up on a cookie sheet. Add black bean patties to the bottom halves of the buns and top with cheese. Place under oven broiler until cheese has melted and buns are golden brown, about one minute (depending on your broiler - just watch carefully!)
- Remove from oven and slather chipotle mayo on the inside of the bun tops. Top burgers with red onions and pickles, sandwich with the bun top, and secure with a toothpick or skewer. Serve immediately.
HOT ROAST BEEF SLIDERS
These oven baked Roast Beef and Cheese Sliders are amazingly delicious! They are the perfect sliders to serve a crowd, or can be a part of a filling dinner when paired with sides. Made with sweet Kings Hawaiian Rolls, tender roast beef, provolone cheese, and a kick from the horseradish, these are a crowd pleaser!

Steps:
- Preheat the oven to 350˚F. Mix the mayonnaise and horseradish together and set aside.
- Remove the Hawaiian Rolls from the packaging. Cut each set of 12 horizontally in half so the tops and bottoms are separated.
- Lay the bottoms in a 9x13 baking dish. Spread the horseradish mixture evenly over the rolls. Next lay the roast beef and then cheese evenly over the rolls. Put the tops back on the rolls and then use a knife to cut between each roll to separate the sandwiches. (This helps for serving.)
- Next, in a small bowl, whisk together the melted butter, garlic, dried onion, mustard and Worcestershire sauce. Pour over the top of the rolls and use a pastry brush to evenly spread it out and work between each roll.
- Bake for 20 minutes or until the sandwiches are heated through and the cheese is melted.

- In a mixer fitted with a dough hook, dissolve the remaining 1 Tbs raw sugar in the water. Add the yeast and let proof 10 minutes. Add the pineapple juice-sugar mixture and the coconut oil, and stir until combined. One cup at a time, add the flour until dough is soft but not overly wet or sticky (~7-1/2 cups). Knead 10 minutes.
- Put the dough in a warm place and let rise 1 hour. Turn dough out onto a clean surface floured with 1/2 cup flour. Knead the dough a bit to incorporate some of the flour and make the dough smooth. Divide the dough in half, then continue to divide to make 32 balls. Distribute the dough balls between two (13x9) bake dishes sprayed with cooking spray, and let the dough rise again for ~40 minutes.
- Heat oven to 375F. Brush the tops of the risen balls of dough with remaining pineapple juice. Bake at 375F for 30 minutes until golden brown.

- Heat a large skillet over medium-low heat and add some nonstick spray or add a bit of olive oil. When hot, add the onion and slowly sauté, seasoning with a pinch each salt and pepper.
- When the onions are soft – about 5 minutes – turn up the heat to medium and add the mushrooms. Season with another pinch of salt and pepper and cook until the mushrooms and onions are slightly browned and fragrant – about 3 minutes.
- Remove from heat and add beans and mash. You’re looking for a rough mash, not to turn it into a paste, so you can leave some whole or halved if you want. Taste and add another pinch of salt, or pepper if needed.
- Transfer the mixture to a mixing bowl, add the quinoa, chili powder or cumin and stir. Lastly, add the walnuts a little at a time until the mixture is thick and malleable enough to form into patties. Pop in the fridge for 10-15 minutes to cool and preheat your oven to 375 degrees F (190 C). Coat a baking sheet with nonstick spray or olive oil.

- After 5 minutes, add the remainder of the sugar, along with the pineapple juice, vegan butter, salt, and oat milk mixture to the mixing bowl.
- Add 3 cups of flour and turn the mixer on low using the dough hook attachment. Continue adding more flour, a little bit at a time, until the dough ball has formed, is not too sticky, and has a smooth pliable texture. Don’t add so much that it gets dry and crumbly. It generally takes 3 1/2 cups of flour, but because of differences in how people measure flour, you might find you need a little less or a little more. Let the dough guide you!
