Oatmeal cookies are my BF's favorite, so I've tried LOTS of different recipes. This is the BEST one!!! I found it online somewhere--these are sort of crunchy, not cakey at all, and not overly sweet. YUM!

1 cup firmly packed brown sugar
3/4 cup vegetable shortening (or margarine)
1/2 cup granulated sugar
1/4 cup water
1 large egg
1 teaspoon vanilla
3 cups Quaker Oats (quick or old fashioned, uncooked)
1 cup all-purpose flour
1 teaspoon salt (optional)
1/2 teaspoon baking soda

Steps:

  • Heat oven to 350°F.
  • Cream together brown sugar, shortening, and granulated sugar; add water, eggs, and vanilla: beat well.
  • Add combined oats, flour, salt, and baking soda: mix well.
  • Drop dough by rounded teaspoonfuls onto ungreased cookie sheets.
  • Bake 11-13 minutes until edges are golden brown.
  • Remove to wire rack; cool completely.
  • Store tightly covered.

These are a wonderful thin, crispy, nutty oatmeal cookie. The recipe is from The California Heritage Cookbook.

Number Of Ingredients 11

1 cup butter, softened (2 cubes)
1 cup granulated sugar
1/2 cup brown sugar, packed
1 egg
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 1/2 cups quick-cooking rolled oats
3/4 cup walnuts (may be ground in a blender) or 3/4 cup pecans, ground (may be ground in a blender)
1 teaspoon vanilla extract
granulated sugar, for dipping

Steps:

  • In a large bowl cream the butter and add sugars, beating until fluffy.
  • Blend egg into creamed mixture.
  • Sift together into the creamed mixture the flour, soda, and cinnamon.
  • Blend in the oats, nuts and vanilla.
  • Chill dough 1 hour or more.
  • Preheat oven to 350. Grease cookie sheets.
  • Place small pieces of dough (about 1 teaspoonful) on a greased cookie sheet.
  • Grease the bottom of a small glass, dip in sugar, and press gently on each uncooked cookie, flattening it to a thickness of about 1/4 inch, resugaring glass for each cookie.
  • Bake for 10-12 minutes, until lightly browned.
  • Cool 2-3 minutes on the sheet, remove cookies, and cool completely on racks. Store them in an airtight container.

I love oatmeal and i eat it regulary for breakfast. I sometimes have it even for lunch or dinner and when i am hungry and need something good and that fast i even love more to have an oatmealcookie handy to dip into my latte. If you like you can skip half of the honey and the oil but add 1 cup dark choclate chips or raisins.

3 eggs, beaten
1 cup raisins
1 teaspoon vanilla extract
1 cup butter, softened
1 cup brown sugar
1 cup white sugar
2 ½ cups all-purpose flour
1 teaspoon salt
1 teaspoon ground cinnamon
2 teaspoons baking soda
2 cups rolled oats
¾ cup chopped pecans

Steps:

  • In a small bowl, combine the eggs, raisins, and vanilla. Cover and chill for 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, cream together the butter, brown sugar, and white sugar. In a separate bowl, combine the flour, salt, cinnamon and baking soda; add to the creamed mixture and stir until all of the dry ingredients are absorbed. Next, stir in the egg and raisin mixture, then stir in the rolled oats and pecans. Dough will be stiff. Drop by teaspoonfuls onto an unprepared cookie sheet.
  • Bake for 10 to 12 minutes in the preheated oven, until the edges are golden. Allow cookies to cool 5 minutes on the baking sheet before removing to a wire rack to cool completely.

1/2 cup all-purpose flour
1/4 cup dark raisin
1/4 cup golden raisin
1/4 cup dried cranberries
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
6 tablespoons butter, at room temperature
1/2 cup dark brown sugar, packed
1/4 cup granulated sugar
1 large egg
1/2 teaspoon ground cinnamon
1 teaspoon vanilla
4 tablespoons dark raisins, for topping
4 tablespoons golden raisins, for topping

Steps:

  • Preheat oven to 350°F.
  • Blend oats, flour raisins, cranberries, baking powder, baking soda, and salt; set aside.
  • Beat butter and sugars until light and fluffy. Add egg, cinnamon, and vanilla; beat until combined.
  • Gradually add oat mixture to butter mixture; beat until combined.
  • Combine raisins for topping in separate bowl and set aside.

Steps:

  • Add to creamed mixture.
  • Stir in oats slowly.

1/2 cup packed brown sugar
1/3 cup sugar
1 large egg
1/2 teaspoon vanilla extract
3/4 cup all-purpose flour
1 teaspoon cinnamon
1/4 teaspoon cloves or 1/4 teaspoon allspice
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups old fashioned oats, uncooked
1/2 cup raisins
3/4 cup semi-sweet chocolate chips, divided

Steps:

  • Preheat oven to 375*. In a large bowl, using electric mixer at high speed, beat butter until soft and smooth. Add brown sugar and sugar, beating until fluffy. stir in egg and vanilla.
  • Stir in flour, cinnamon, cloves, baking soda and salt. Beat on low speed until combined. Stir in oats, then raisins and 1/2 cup chocolate chips.
  • Drop 1/4 cup portions of batter, 3 inches apart, onto two ungreased baking sheets. Flatten cookies slightly. Bake until centers are puffy and edges start to brown, about 13 minutes. Cool cookies on baking sheets 2 minutes, then remove to wire rack to cool completely.
  • Meanwhile, in microwave safe dish, place remaining 1/4 cup chocolate chips. Cook on HIGH 30 seconds or until melted when stirred. Spoon melted chocolate into a zippered bag, cut a small hole in a corner, and squeeze over cookies in a zigzag pattern.
