2 eggs, beaten
½ cup white sugar
1 large onion, diced
1 cup self-rising flour
1 cup self-rising cornmeal
1 quart oil for frying

Steps:

  • In a medium bowl, mix together eggs, sugar, and onion. Blend in flour and cornmeal.
  • Heat 2 inches of oil to 365 degrees F (185 degrees C). Drop batter by rounded teaspoonfuls in hot oil, and fry until golden brown. Cook in small batches to maintain oil temperature. Drain briefly on paper towels. Serve hot.

This recipe is in honour of my niece, Vicki; she felt like something shrimpy and creamy.It was delicious.

1 tablespoon olive oil
4 garlic cloves, crushed
1/4 cup sun-dried tomato, chopped
1/4 cup roasted red pepper, chopped
1 lb shrimp, shelled
1/2 cup white wine
1 teaspoon red pepper flakes
1/2 cup heavy cream
3 tablespoons butter
4 tablespoons parmesan cheese
1 tablespoon lemon juice
1 lb spaghetti

Steps:

  • Heat olive oil in a skillet over med heat. Saute garlic for 2 mins, add sun dried tomatoes and red peppers and saute for a furthur 5 minutes.
  • Add wine and cook until reduced , about 5 minutes.
  • Add shrimp and saute until just pink about 3 minutes.
  • Add red pepper, lemon juice and butter, when the butter is melted add the cream and parmesan. Simmer until warmed through and serve over your favourite pasta.

I made this for our Christmas dinner party last year and everyone really loved it. I tend to cook by sight, so the measurements are all approximates. I used a whole side of a salmon and baked it for about 45 minutes.

2 -3 lbs salmon steaks
pam olive oil flavored cooking spray
1/4 cup brown sugar
1/2 tablespoon teriyaki sauce
1 1/2 tablespoons olive oil
2 tablespoons garlic, minced
1/4 cup sweet and sour sauce
1 teaspoon ginger
pepper, to taste

Steps:

  • Line baking pan with foil. Spray with Pam Spray or brush with olive oil.
  • Place salmon fillets/steaks on foil. Sprinkle liberally with brown sugar.
  • Over the brown sugar, drizzle on a little bit of teriyaki (about ½ tablespoon).
  • Drizzle with olive oil (about 1 to 1 ½ tablespoons).
  • Spread on sweet and sour sauce - this also allows you to mix together the other ingredients you've already put on the fish.
  • Sprinkle with ginger and pepper. Loosely cover with foil.
  • Bake at 350 degrees until done, this depends on the amount and size of salmon you are using. I start checking it at 20 minutes, and continue checking every 10 minutes after that. The last 10 minutes or so, remove foil or you can make it without being covered with foil - just watch it closer.
