VIETNAMESE BISTRO BURGER

1 1/2 cups julienned daikon
1 1/2 cups julienned carrot
3/4 cup distilled white vinegar
3/4 cup sugar
2 pounds ground pork
6 cloves garlic, minced
2 jalapeno chiles, seeded and diced
1 tablespoon minced ginger
2 tablespoons Vietnamese fish sauce (nuoc nam)
2 tablespoons soy sauce
1 tablespoon Chinese five-spice powder
2 tablespoons sugar
1 lime, zested and juiced
2 to 3 tablespoons vegetable oil, for brushing the grill rack
6 good quality sesame-seed kaiser rolls, split
6 tablespoons salted butter, softened
6 tablespoons mayonnaise
6 tablespoons spreadable pork or liver pate
1/2 English cucumber, peeled and thinly sliced
2 jalapeno chiles, thinly sliced
18 fresh cilantro sprigs

Steps:

  • To make the Pickled Daikon and Carrot, combine the daikon, carrot, vinegar, and sugar in a bowl, tossing well to coat. Set aside to marinate.
  • Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. If a grill is unavailable, simply heat a grill pan over medium-high heat on your stovetop.
  • To make the Patties, combine the pork, garlic, diced chiles, ginger, fish sauce, soy sauce, five-spice powder, sugar, and lime zest and juice in a bowl, mixing well to incorporate. Divide the mixture into 6 portions and form into round patties.
  • Brush the grill rack with vegetable oil. Place the patties on the rack and grill for 6 to 7 minutes per side, until cooked through. Turn the patties 90 degrees halfway through cooking on each side, to attain grill marks.
  • Spread the cut side of each bun half with 1/2 tablespoon butter and grill until golden brown, 1 to 2 minutes.
  • Spread 1 tablespoon of the mayonnaise on the cut side of each bun bottom and 1 tablespoon of the pate on the cut side of each bun top. Place the cucumber and chile slices on the bun bottoms and top with burger patties. Drain the carrot and daikon pickles and pile a generous amount atop each patty. Add the cilantro sprigs and the pate-smeared bun tops. Enjoy!
  • Cook's note: These burgers can also be served on baguettes, if preferred, in which case, the patties should be formed into oblong shapes. Hamburger buns are a bit softer and easier to manage, which is why I've chosen them for this recipe. If available, buy a peppercorn pate, which adds a great hint of black pepper to the burger. For serving, burgers can be halved and skewered for a beautiful presentation and manageability. They go well with sweet potato french fries or taro chips!

26 ounces boneless skinless chicken breasts
5 tablespoons soy sauce
2 tablespoons hoisin sauce
2 tablespoons honey
1 tablespoon sugar
4 garlic cloves, minced
2 stalks lemongrass, minced
1/2 cup soybean oil
1 tablespoon sesame seed oil
fresh black pepper
10 large rice paper sheets
16 ounces rice noodles (or more)
1 head romaine lettuce, cut into 3/4-inch lengths
1 cucumber, peeled, seeded and cut into thin strips
1/2 cup pickled daikon, chopped
3 carrots, peeled and sliced thinly
2 cups bean sprouts
1 bunch basil, cleaned and leaves picked
1 bunch mint, cleaned and leaves picked
1/2 bunch parsley, cleaned and leaves picked
2 -3 garlic cloves, crushed
1 -2 fresh chili pepper, minced
4 tablespoons sugar
4 tablespoons fresh lime juice or 4 tablespoons lemon juice
5 tablespoons white vinegar
5 -7 tablespoons fish sauce
1/4 cup coconut juice

Steps:

  • Soak rice noodles in warm water until softened, then drain.
  • Wash chicken breasts and pat dry.
  • Combine all ingredients for the filling in a bowl, mix well and cover. Marinate for about 1 hour at room temperature.
  • Preheat a grill. Grill chicken in pieces (cut to preference) until golden brown on both sides and cooked through.
  • Soak the wrappers, 1 at a time, in warm water until softened.
  • Remove from the water and pat dry. Fill each wrapper with the chicken and all of the toppings.
  • Roll the wrapper once over the filling. Tuck in the ends and roll completely.
  • Press to seal. Repeat with remaining wrappers and filling.
  • For Dipping Sauce:.
  • Combine all ingredients.

0.5 (12 ounce) package rice paper sheets
1 (1 1/2 ounce) package cellophane noodles
1 head butter lettuce, roughly chopped
1 bunch basil, stems removed and torn into pieces
1 bunch cilantro, stems removed and roughly chopped
1 bunch mint, stems removed and torn
2 cups carrots, cut into matchsticks
1/2 lb cooked shrimp, shell-off and cut in half lengthwise

Steps:

  • Bring water in a medium saucepan to a rapid boil.
  • Submerge cellophane noodles in water until just softened, about 30-45 seconds.
  • Remove and reserving hot water, drain.
  • Pour the reserved hot water into a wide, shallow pan (pie pan, casserole dish, etc.).
  • Assemble all cold/salad ingredients including the shrimp and the cooked cellophane noodles in an assembly line format around an open, flat surface such as a cutting board.
  • Place one dried rice paper wrapper into the warm water for a few seconds or until softened. Remove promptly or it will get soggy. Remove, let the water drip off and place on the cutting board.
  • Fill with all ingredients, being careful not to overfill.
  • Roll it up like a burrito (fold bottom over filling, then tuck each side in, then complete roll to form a neat, tight package), cut diagonally to create two halves and serve immediately.
