VIRGINIA HAM FANTASTICS
This recipe is from the Edwards family of Edwards Virginia Smokehouse in Surry, VA, the heart of Virginia ham country. My friends and family request it at every gathering. It can be made as full size ham biscuits to pair with sides or as appetizer size. Although it calls for Virginia ham, I use less salty honey ham. Either way it is delicious! Depending on how much ham and cheese you put in each roll, you may want to buy 3 dozen rolls. Enjoy!

Steps:
- Line 13 x 11-inch pan with foil that has been lightly greased. Place rolls that have been filled with ample ham slices and Swiss cheese on the foil lined pan. Place rolls very close together.
- Mix the rest of the ingredients and spoon the sauce over the top of the rolls.
- Cover with foil and refrigerate for several hours. However, can be baked immediately. When ready to bake, preheat oven to 350°. Remove foil cover and bake for approximately 30 minutes. Watch carefully that they do not scorch. Can be made early in the day for last minute heat up before guests arrive.

- Preheat the oven to 350 degrees F. Place the ham in a heavy roasting pan.
- Mince the garlic in a food processor fitted with the steel blade. Add the chutney, mustard, brown sugar, orange zest, and orange juice and process until smooth. Pour the glaze over the ham and bake for 1 hour, until the ham is fully heated and the glaze is well browned. Serve hot or at room temperature.

Place rolls very close together. Spoon a mixture of butter, mustard, Worcestershire, onion, and poppy seeds over top of rolls. Cover with foil and refrigerate for several hours, or they may be baked right away. When ready to bake, preheat oven to 350°. Leave foil on to prevent scorching, and bake approximately 30 minutes.

- Three days before cooking, scrub the ham with a stiff brush under cold running water. When the moldy outer covering has been scrubbed off, rinse the ham well and then place in a large pot. Cover with cold water and set aside in a cool place to soak for 3 days, changing the water daily.
- When ready to cook, drain the ham and cover with fresh cold water. Cover the pot and bring to a boil. Watch the pot closely, and the minute the water nears a boil, turn down the heat to a bare simmer. Cook the ham for about 5 hours, watching to make sure the water stays at a low simmer. After 4 1/2 hours, check the ham to see if the skin is bubbled and soft. If not, return it to the pot.
- When the ham is done, cool it in a shallow pan. When cool enough to handle, remove the skin with a sharp knife. Also trim a bit of the fat, but leave a thin coating to keep in the moisture. Cut into very thin slices and serve with freshly baked biscuits spread with butter or mustard, such as honey mustard.

VIRGINIA HAM WITH HONEY-MUSTARD GLAZE

- Preheat oven to 325 degrees with a rack in lower third. Line a roasting pan with a rack. Wrap ham in parchment-lined foil. Transfer to pan, with thicker rind side facing up. Bake 2 1/2 hours. Meanwhile, in a medium bowl, stir together honey, Dijon, brown sugar, and cloves.
- Unwrap ham. When cool enough to handle, use a thin-bladed knife to peel rind from ham and trim fat all over to 1/2 inch. Score skin and fat with tip of knife in opposite directions, to create a 3/4-inch-wide diamond pattern.
- Return ham to oven and bake, uncovered, 30 minutes. Baste with some of honey-mustard mixture and continue to bake, basting every 30 minutes, until a thermometer inserted into thickest part of flesh near (but not touching) bone registers 145 degrees, about 2 hours more. (If necessary, add water to pan, 1/4 cup at a time, to prevent scorching, and tent with foilif ham begins to blacken.)
- Let ham stand at least 20 minutes before carving, or let cool completely and serve at room temperature. Thinly slice against the bone; serve.

- 1) PREP ROLLS Line a 13 x 11-inch baking sheet with tin foil, then lightly grease the foil with olive oil. Cut a stack of cooked country ham slices into quarter size pieces. Fill each roll with ample pieces of country ham slices and grated swiss cheese . Then, place the filled rolls close together in the foil-lined baking sheet.
- 2) MAKE SAUCE Melt a stick of butter in a microwave-safe bowl in your microwave for about 30-45 seconds until fully melted. Add 1-2 TBSP mustard (to taste), 1 TBSP dried minced onion , 1 TBSP poppy seeds to the bowl and mix thoroughly with the butter. Spoon sauce over the top of the rolls.
- 3) BAKE ROLLS Cover the rolls with tin foil and place the baking sheet in the refrigerator for at least 3 hours. This allows the sauce to blend with rolls, however, you can bake them immediately. When ready to bake, preheat the oven to 350 degrees F. Remove foil cover and bake for approximately 30 minutes. Watch carefully that they do not scorch. Once about 30 minutes are up, remove from oven. Let rest for a few minutes, then serve.

- Place ham in a very large container; cover with cold water, and soak overnight. Remove ham from water, and drain. Scrub ham thoroughly with a stiff brush, and rinse well with cold water.
- Replace ham in container, and cover with fresh cold water. Bring to a boil; reduce heat and simmer, covered, 1 hour. Drain off water.
- Cover ham with fresh cold water. Cover and simmer an additional 4 to 5 hours, allowing 25 minutes per pound. Turn ham occasionally during cooking time. Cool.
- Carefully remove ham from water; remove skin. Place ham, fat side up, on a cutting board; score fat in a diamond design, and stud with whole cloves. Place ham, fat side up, in a shallow roasting pan. Combine 1 cup orange juice and sugar. Coat exposed portion of ham with orange juice mixture. Bake, uncovered, at 325° for 30 minutes, basting frequently with remaining orange juice. Transfer to serving platter; garnish with parsley, and serve Wine Meat Sauce, if desired, as a side dish.
