WAGON WHEELS WITH SUN-DRIED TOMATO SAUCE

Steps:
- Bring water to boil in covered pot for pasta.
- Chop whole onion and saute in hot oil in nonstick skillet until onion is soft. Meanwhile, with food processor on, drop garlic through feed tube and mince.
- Combine 1/2 cup of the tap water, as hot as possible, with sun-dried tomatoes, and add to food processor. Process to puree tomatoes. Add remaining 1 1/2 cups of water, and continue to process to combine. Add tomato mixture to skillet and bring to boil. Reduce heat, and continue to simmer to thicken slightly.
- Cook wagon wheels according to package directions.
- Chop parsley and oregano, and add to sauce with lemon juice. Simmer over low heat.
- Grate cheese. When pasta is ready, drain and serve with tomato sauce, sprinkled with cheese.

- Cook pasta according to package directions; drain and rinse in cold water. In a large bowl, combine the pasta, beans, cheese, tomatoes, peppers and onions., In a small bowl, combine the mayonnaise, picante sauce, salt and cumin; pour over salad and toss to coat. Cover and refrigerate for 2 hours before serving.

- Cook pasta according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. , Stir in the water, soup, corn, spaghetti sauce mix and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 2-3 minutes or until heated through. , Drain pasta; stir into beef mixture. Top with cheese; cook and stir for 2 minutes or until cheese is melted.

This is a good, simple, comforting type recipe that I found on Epicurious. The recipe is nice with some rice.

Steps:
- Pat chicken dry and season with salt and pepper.
- Heat oil in 12-inch heavy skillet over moderately high heat until hot but not smoking.
- Brown chicken, turning once, about 6 minutes total (chicken will not be cooked through).
- Transfer chicken with tongs to a plate.
- Add garlic, tomatoes, and red pepper flakes to skillet and saute, stirring, until garlic is pale golden, about 1 minute.
- Add wine and boil, stirring and scraping up brown bits, until reduced by half, about 1 minute.
- Add chicken broth, bring to a boil, covered.
- Add chicken to skillet, with the juices on plate, and simmer, covered, until just cooked through, 4-5 minutes.
- Transfer chicken to a platter and keep warm, loosely covered with foil.
- Stir cream and 2 tablespoons basil into sauce and bring just to a simmer.
- Transfer sauce to deep heatproof bowl and puree with an immersion blender until almost smooth (or blend sauce in a blender).
- If necessary, add water to thin to desired consistency, then season with Salt and pepper.
- Serve sauce over chicken and sprinkle with remaining 2 tablespoons basil.

CHICKEN WITH SUN-DRIED TOMATO CREAM SAUCE
A YUMMY recipe found in Bon-Apetit Magazine (November, 94). It is so rich and delectable and sure to impress your guests! (Even my two year old daughter loves it!) Fantastic served over rice and with steamed asparagus.

Steps:
- Over med-high heat, melt butter and olive oil in heavy large skillet.
- Season chicken with salt and pepper.
- Gently coat chicken with flour~ shake off any excess.
- Sauté chicken until golden brown and just cooked through~ about 3 minutes if cut into strips, 7-10 minutes if still in breast form.
- Transfer chicken to plate and cover with foil to keep warm.
- Add minced shallots to skillet; sauté 1 minute.
- Add whipping cream, white wine, chopped sun-dried tomatoes and basil.
- Bring to boil and cook until sauce thickens, stirring occasionally, about 3-5 minutes.
- Add salt and pepper to taste.
- Return chicken to pan, coat with sauce and heat until warm~ about 2 minutes.
- ENJOY!
