Easy to make caramel cupcakes which get their caramel flavour from using both light brown sugar and adding caramel sauce to the mix.

165 g self-raising flour
165 g soft light brown sugar
3 large eggs
165 g soft margarine or butter
¼ tsp vanilla extract
150 g caramel sauce (1 batch of my homemade caramel sauce)
12 cupcake cases

Steps:

  • Pre-heat your oven to 180ºC/160ºC fan.
  • Place your cupcakes cases into a muffin tin.
  • Put all of the ingredients into a large bowl (165g self-raising flour, 165g soft margarine, 3 large eggs, 165g soft light brown sugar, ¼ tsp vanilla extract, 150g caramel sauce) and mix until fully combined (you can do this by hand or using an electric mixer on a low speed).
  • Evenly distribute the cake mixture into the 12 cupcake cases.
  • Cook for 18-20 minutes until a skewer inserted into the middle comes out clean.
  • Once cooked, place onto a cooling rack and allow to cool completely.

1 cup cake flour
1 1/4 teaspoons baking powder
1/8 teaspoon salt
9 tablespoons unsalted butter (at room temperature)
1/2 cup + 2 tablespoons granulated sugar
4 large egg yolks
1 1/2 teaspoons vanilla extract
1/2 cup + 2 tablespoons whole milk
12 tablespoons unsalted butter (at room temperature)
3 to 3 1/2 cups powdered sugar
1 cup caramel sauce (at room temperature, divided + more for drizzling)
1 teaspoon vanilla extract
1/4 teaspoon salt
1 to 2 tablespoons milk or heavy cream (if necessary)

Steps:

  • Preheat the oven to 350 degrees. Line 14 to 15 muffin cups with cupcake liners and set pan aside.
  • Place the flour, baking powder, and salt in a medium mixing bowl and whisk to combine.
  • Place the butter in another medium bowl and beat with an electric mixer set to medium until very smooth and creamy. Gradually beat in the sugar. Continue beating for 3 to 4 minutes, until very light and fluffy.
  • Beat in the egg yolks 1 at a time, then beat in the vanilla.
  • Use a rubber spatula to mix in the flour mixture in 3 additions, alternating with the milk, beginning and ending with the flour. Mix until just smooth.
  • Divide batter evenly among the prepared muffin cups, filling each cup a little more than half full. Bake 16 to 20 minutes, until a toothpick inserted into the center of the cupcakes comes out clean.
  • Cool in the pan for 20 minutes, then transfer to a wire rack to cool completely.
  • Beat the butter in the bowl of a stand mixer fitted with the paddle attachment until creamy. (Or use an electric mixer and a large mixing bowl.) Add 3 cups of the powdered sugar and mix on low to combine.
  • Add 1/2 cup of the caramel sauce, the vanilla, and salt, then turn mixer to medium and mix until smooth.
  • If frosting is too thin, add additional powdered sugar. If it's too thick, add milk. Set frosting aside.
  • Use a small paring knife to cut a hole about 1 inch wide and a scant 1 inch deep in each of the cupcakes. Reserve the cake you cut out of the holes.
  • Pipe or spoon about 1 1/2 teaspoons of caramel sauce into each hole. Trim the cake you removed from the holes so it will fit over the caramel as a sort of plug, then replace the plug in the hole.
  • Frost cupcakes as desired, then refrigerate for 20 to 30 minutes to set the frosting. Drizzle with caramel sauce and serve.

1 ½ cups all-purpose flour
1 ¾ teaspoons baking powder
1 cup white sugar
½ cup margarine, softened
2 eggs
1 teaspoon vanilla extract
1 teaspoon almond extract
¾ cup whole milk
½ cup brown sugar
½ cup margarine
2 tablespoons light corn syrup
1 tablespoon vanilla extract
½ cup heavy cream, or as needed
1 pinch salt
¾ cup salted butter, softened
2 cups confectioners' sugar, sifted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line 12 cupcake cups with paper liners. In a bowl, whisk together the flour and baking powder.
  • In a mixing bowl, thoroughly cream together the sugar and 1/2 cup of margarine until very well blended. Beat in the eggs, one at a time, until thoroughly combined, and stir in the vanilla and almond extracts. Gradually beat in the flour mixture, alternating with the milk, in several additions. Spoon the batter into the prepared cupcake cups, filling them about 2/3 full.
  • Bake the cupcakes in the preheated oven until a toothpick inserted into the center of a cupcake comes out clean, 20 to 25 minutes.
  • To make caramel, Place the brown sugar, 1/2 cup margarine, corn syrup, and vanilla into a large saucepan over medium heat, and bring the mixture to a boil. Reduce heat, and simmer until thickened, 3 to 4 minutes; remove from heat and allow to cool to warm (not hot) temperature. Add the cream, a little at a time, until the caramel has the consistency of honey. Mix in the pinch of salt, and allow to cool to room temperature.
  • Beat the salted butter with confectioners' sugar in a bowl with an electric mixer on medium speed until the mixture is fluffy; slowly add and beat in the caramel, a tablespoon at a time, beating until the frosting is smooth.

1 cup butter, cubed
8 ounces semisweet chocolate, chopped
1 ¼ cups white sugar
1 cup unsweetened cocoa powder
6 eggs
1 ½ cups white sugar
¼ cup water
1 ½ teaspoons fresh lemon juice
1 cup heavy cream
2 tablespoons unsalted butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter the bottom of a 10 inch springform pan, and line with parchment paper.
  • Melt the butter in a large saucepan over low heat. Stir in chocolate, and continue to stir until almost melted. Remove from heat, and stir until melted and smooth. In a large bowl, stir together 1 1/4 cups sugar and the cocoa powder. Whisk in the eggs until well blended, then whisk in the chocolate and butter. Pour the batter into the prepared pan.
  • Bake for about 45 minutes in the preheated oven. The cake is ready when the edges have nicely puffed and the surface is firm except for a small spot in the center that will jiggle when the pan is gently shaken. Cool cake in the pan over a wire rack. Run a knife around the sides of the pan to loosen the cake, then remove the sides of the pan, and invert onto a serving plate. Remove the parchment paper.
  • In a heavy saucepan, stir together 1 1/2 cups of sugar, water, and lemon juice. Bring to a boil over medium heat, and cook without stirring until the syrup is a deep amber color. For an accurate color check, dip a metal spoon into the syrup and lift it out of the pan to check the color. Once the syrup is amber, remove from the heat. Gradually stir in the cream. The mixture will bubble vigorously. If lumps form, stir gently over low heat to dissolve them. Stir in 2 tablespoons of butter.
  • Cut the cake into wedges while warm, and serve with caramel sauce spooned over it. You can also chill the cake and sauce, then warm again before serving.

100g softened salted butter
100g golden caster sugar
2 eggs
1 tsp vanilla extract
100g self-raising flour
1 tbsp milk
6 tsp caramel sauce
75g soft salted butter
150g icing sugar
200g caramel sauce
a pinch of sea salt flakes

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Line a 12-hole cake tin with paper cases.
  • Beat the butter and sugar together with an electric whisk until pale and fluffy. Add the eggs, one at a time, and the vanilla extract. Briefly mix in the flour until just combined, and stir in the milk until the batter just falls off the beaters.
  • Divide the mixture between the cases, leaving about 2 tbsp batter in the bowl. Add a pinch of salt to the caramel sauce if it's not salted caramel, then add ½ tsp to the tops of each cupcake. Use a teaspoon to cover the caramel sauce with the remaining batter. Bake for 15-20 mins until springy and golden. Leave to cool completely on a wire rack.
  • Meanwhile, make the icing. Beat the butter and half of the icing sugar together, then tip in the remaining icing sugar and whisk vigorously until pale and fluffy. Stir in half of the caramel sauce, then spoon the mixture into a piping bag with a round or star nozzle.
  • Pipe swirls of icing on top of the cooled cupcakes. Stir the remaining caramel sauce with a pinch of salt, if unsalted, then use to drizzle over the icing. Sprinkle over a small pinch of sea salt over each, if you like.

2 cups chopped pitted dates
1 1/2 teaspoons bicarbonate of soda
1 teaspoon grated fresh ginger
90 g butter
1 cup caster sugar
3 eggs
1 1/2 cups self-raising flour
1/4 teaspoon ground cloves
1/2 teaspoon mixed spice
creme fraiche or whipped cream, for serving
100 g butter
1 cup soft brown sugar
1/3 cup golden syrup
3/4 cup thickened cream

Steps:

  • Preheat oven to 180oC.
  • Grease and line the base of 23cm deep round cake tin.
  • Put the dates in a pan with 1 3/4 cups water, bring to the boil then remove from the heat.
  • Add the bicarbonate of soda and ginger and leave to stand for 5 minutes.
  • Coarsley mash with a potato masher.
  • Cream together the butter, sugar and 1 egg.
  • Beat in the remaining eggs one at a time.
  • Once the eggs are well beaten, gently fold in the sifted flour and spices, add the date mixture and stir until well combined.
  • Pour into the tin and bake for 55-60 minutes, or until a skewer comes out clean when inserted into the middle.
  • Cover with foil if over browning during cooking.
  • Leave to stand for 5 minutes before turning out onto a serving plate.
  • To make Caramel Sauce: Put all the ingredients in a pan and stir over low heat until the sugar has dissolved.
  • Simmer uncovered, for about 3 minutes, or until thickened slightly.
  • Brush some sauce over the top and sides of the pudding until well glazed.
  • Serve immediately with the sauce and a dollop of cream.

In the past three years, it has become a new tradition for my family (which doesn't happen often!). My mother even requests this for the Thanksgiving meal. If you're searching for something deliciously different for your holiday meals, you will not be disappointed with this. It is a trifle-like dessert with layers of cubed, moist date/nut cake, cool whip, and candy-like caramel or toffee sauce. AMAZING. This recipe makes one dessert bowl. Doubling this will make it fit nicely into a 9x13" pan and into two dessert bowls.

Steps:

  • Pre-heat oven to 350°F.

  • For Toffee Sauce: Combine sugar, cream and butter in a saucepan, bring to a boil, stirring, reduce heat and simmer for five minutes until thickened.
  • Cut the cooled cake into very small square pieces.
  • In a pudding bowl - layer 1/2 of the cake pieces, then 1/2 sauce and 1/2 tub Cool Whip. Repeat layer. Chill and serve!
