SPICED CIDER PUNCH

Steps:
- Place sugar, spices and 1 cup cider in a saucepan; cook and stir over medium heat until sugar is dissolved. Remove from heat; stir in juice concentrate until melted., Transfer to a large pitcher. Stir in remaining cider. Refrigerate, covered, until cold., To serve, pour cider mixture into a punch bowl. Stir in ginger ale. If desired, garnish with orange slices.

WARM SPICED CIDER PUNCH

- In a 3-qt. slow cooker, combine the apple cider, water, orange juice concentrate, nutmeg and ginger. Place cloves and cinnamon sticks on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag. Place bag in slow cooker. , Cover and cook on low for 4-5 hours or until heated through. Remove and discard spice bag. Garnish with orange slices and additional cinnamon sticks if desired.

- In a large pot, combine apple cider, apple slices, orange slices, cinnamon sticks, and ginger. Bring to a boil over high; reduce to a simmer and cook 5 minutes. (Keep warm over low, up to 2 hours.) Remove from heat and stir in rum. Transfer to a punch bowl; serve warm.

SPICED HARD CIDER PUNCH

- Place the hot water in a small stainless steel saucepan and add the sugar, ginger, cloves, cinnamon and nutmeg to the pan. Bring to a boil, place a lid over the saucepan and reduce to a simmer. Continue to simmer until the flavors have married, about 20 minutes. Remove from the heat, strain through a fine-mesh sieve into a non-reactive bowl and allow to cool. Once cool, add the cider, applejack and brandy to the bowl. Stir to mix well and refrigerate for at least 2 hours, and up to 5 days. Serve in a small punch bowl with an ice mold, if desired, and garnish each glass with an apple slice.

This recipe uses an automatic coffee maker to brew the cider. If you don't own one, heat it in a slow cooker or a saucepan over medium heat on the stovetop. Grab your mugs and dive into this hot drink! Clean your coffee maker according to the manufacturer's instructions before using for coffee again.

- Combine apple cider, cranberry-raspberry juice, raspberries, brandy, brown sugar, cinnamon, ginger, cloves and allspice in a 4- to 5-quart Dutch oven; bring to a boil. Reduce heat, cover, and simmer 15 minutes.
- Strain punch through a sieve lined with cheesecloth.
- To serve, return punch to Dutch oven. Add apple wedges. Cover and heat until boiling.
- Pour hot punch into a heatproof bowl or transfer to crockpot. Serve in heatproof cups, floating an apple wedge in each serving.

I have been making this for years, for Halloween and all through the fall/winter. Its wonderful for holiday gatherings, and a nice change from eggnog. Its even great to take along in a thermos to those chilly football games! (Makes 30 5 fl.oz. servings)
