1 cup all-purpose flour
3/4 cup sugar
1/4 cup unsweetened cocoa
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup milk
3 tablespoons butter, melted
1 teaspoon vanilla
1 (10 ounce) package frozen raspberries in light syrup, thawed
1 cup hot water
1/3 cup chocolate syrup
1/3 cup powdered sugar

Steps:

  • Heat oven to 350°F
  • Place flour, sugar, cocoa, baking powder and salt into greased 8- or 9-inch square baking pan; stir with fork to combine.
  • Stir in milk, butter and vanilla until well mixed.
  • Stir in raspberries.
  • Combine hot water and chocolate syrup in small bowl.
  • Pour evenly over batter.
  • Bake for 30 to 35 minutes or until center is set and edges pull away from sides of pan.
  • Let stand 25 minutes.
  • Sprinkle with powdered sugar and garnish with fresh raspberries, if desired.

2 cups fresh raspberries
3 tablespoons white sugar

Steps:

  • Mash raspberries in a bowl using the back of a spoon until a jelly-like layer forms on top. Freeze for 5 minutes.
  • Mix sugar into mashed raspberries, spooning the bottom layer of raspberries over the top and you stir. Repeat 5 or 6 times until fully incorporated; freeze for 15 minutes. Serve chilled.

A classic flavour combo is brought bang up to date with these teacup sponges with a jam base and fresh fruit topping

400g raspberries
140g light muscovado sugar , plus 4 tbsp more
100g butter , melted, plus extra for greasing
6 tbsp good-quality raspberry jam
140g self-raising flour
140g desiccated coconut
3 large eggs
250ml coconut milk , from a can
1 tsp bicarbonate of soda
coconut yogurt , to serve (we used Yeo-Valley Greek-style)

Steps:

  • Put roughly one-third of the raspberries and the 4 tbsp sugar in a small saucepan. Cook over a low heat, mashing the berries into the sugar, until saucy and the sugar is dissolved. Stir in the remaining berries for 1 min, taste for sweetness, then remove from the heat, tip into a bowl and chill until ready to serve.
  • Heat oven to 180C/160C fan/gas 4. Grease 6 large (about 250ml) heatproof coffee cups or ramekins. Add 1 tbsp raspberry jam to the bottom of each.
  • Put the flour, sugar and 85g of the coconut into a food processor and whizz until finely ground and no bits of visible coconut are left. Beat the eggs, butter and coconut milk together. Tip the dry ingredients into a bowl, stir in the bicarb, then stir in the egg mix until smooth. Spoon the mixture into the prepared cups or ramekins and scatter with the remaining coconut. Bake for 30 mins on a baking tray until risen, golden and a skewer comes out clean.
  • Let the puds stand for 5 mins, then spoon over a little of the raspberries and coconut yogurt, and serve with extra on the side.

This is similar to an upside cake. Not only does it look great but taste great. I am posting the recipe as it appeared in the Style at Home magazine, but 1 cup of raspberry juice was to much for my cake pan. I only used 2/3 cup. I also placed a sheet of foil under the cake pan to catch any raspberry juice that might spill over. I am glad I did. The recipe originated from a restaurant in Quebec City. Serve this with vanilla ice cream.

1 (700 g) package frozen raspberries
1/2 cup granulated sugar
1/2 cup butter, softened
3/4 cup granulated sugar
2 eggs
1/2 teaspoon vanilla
1 1/4 cups all-purpose flour
1 1/4 teaspoons baking powder
1 pinch salt
1/2 cup milk

Steps:

  • Drain raspberries, reserving the juice;add enough water to juice to make 1 cup. Set aside.
  • In greased 8 inch square metal cake pan, toss raspberries with 1/4 cup of the sugar. Set aside.
  • Cake Topping:
  • In large bowl, beat butter with sugar until light and fluffy.
  • Beat in eggs 1 at a time.
  • Beat in vanilla.
  • In separate bowl, whisk together flour, baking powder and salt.
  • Add to to butter mixture alternately with milk, making 3 additions of flour mixture and 2 of milk.
  • Scrape evenly over raspberries, smoothing top;Set aside.
  • In small saucepan, bring reserved raspberry juice and remaining sugar to boil; pour over batter.
  • Bake in center of 350F oven until edges are bubbly and cake is frim to touch about 50 minutes. Let cool slightly before serving. (Make ahead;Store at room temperature fo up to 8 hours; reheat if desired.).

8 raspberry jam doughnut
150g raspberries
500ml shop-bought fresh custard
250ml whole milk
150g lemon curd

Steps:

  • Heat the oven to 200C/180C fan/gas 6 and butter a 20 x 20cm baking dish. Quarter the raspberry jam doughnuts and arrange in overlapping layers in the prepared dish. Scatter over 100g raspberries.
  • Heat the custard with the milk until steaming, then whisk through the lemon curd. Pour the lemon custard over the doughnuts, then leave to soak for 30 mins, ensuring some of the doughnuts stick out so they'll crisp up when baked.
  • Scatter over another 50g raspberries and bake for 35-40 mins, or until golden brown and just set.
