This is for all fellow coffee drinkers. I love lattes but buying them can be pricey. So here's a recipe so you can make your own.

2 cups milk
1 ⅓ cups hot freshly brewed dark roast espresso coffee

Steps:

  • Heat milk in a saucepan set over medium-low heat. Whisk briskly with a wire whisk to create foam. Brew espresso and pour into 4 cups. Pour in milk, holding back the foam with a spoon. Spoon foam over the top.

I saw this made on "The Outback Cafe" & it intrigued me. I just happened to have some wattle seed in the pantry so gave it a go. It' has a very mild, slightly nutty flavour, is low GI and no caffeine and because it's so mild I didn't even miss the sugar. (It's not recommended to add sweetner as it overpowers the taste) This is authentic Australian cuisine.

15 g ground roasted wattleseed (1 scoop approx)
200 ml steamed milk
sugar (optional)

Steps:

  • Use the wattle seed as you would coffee in your coffee maker, let the machine do it's work making a wattle espresso.
  • Top with steamed milk.

For a quick iced latte, try whipping instant coffee granules and water until foamy. Then pour over cold milk for this delicious and refreshing coffee drink.

¼ cup boiling water
1 tablespoon instant coffee granules
1 tablespoon white sugar
ice cubes
1 cup cold milk

Steps:

  • Combine boiling water, coffee granules, and sugar in a large mug and whip with an immersion blender until foamy, about 2 minutes. Set aside.
  • Fill a large glass with ice cubes. Pour milk over ice cubes. Top with the coffee foam.

I haven't tried this one yet, but wattleseeds intrigue me and this sounds to die for. Wattleseed is a baking spice that is really versatile and can be found in ethnic grocers.

2 tablespoons ground coffee
4 tablespoons wattleseed, ground
4 drops vanilla extract
2 tablespoons sugar
3 1/2 ounces cream
1 1/2 cups water
grated chocolate (to garnish)

Steps:

  • brew coffee and wattleseed in a filter in coffee pot with 1 1/2 cups water.
  • mix in sugar, vanilla and cream.
  • pour into two large glasses and serve with grated chocolate on top.
