A friend of mine has a mother in law from Sweden. I ask her to give me the recipe for her wonderful cookies.Post for World Tour 2006.

4 cups all-purpose flour
3/4 cup butter
1 1/2 cups brown sugar
2 eggs
1 teaspoon cinnamon
1 teaspoon white pepper
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground ginger
1/2 teaspoon cardamom
3/4 teaspoon salt

Steps:

  • With an electric mixer beat the sugar with the butter.
  • Then add one egg, a cup of flour,one egg,one cup of flour, the spices and at last the rest of the flour.
  • Make a soft dough into a ball, put in a plastic bag, cover and place into the fridge for 24 hours.
  • Next day use 1/2 teaspoon of dough for each cookie.
  • Place on cooking sheets and bake at 320°F for 11-15 minutes in a preheated oven.
  • Chilling time is not included.

3/4 cup good quality cocoa powder
1 teaspoon salt
1 teaspoon baking soda
1 stick butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
1/2 cup dry red wine, such as burgundy
10 ounces dark chocolate, broken into chunks
1 cup dried tart cherries

Steps:

  • Preheat oven to 375 degrees F.
  • Combine flour, cocoa powder, salt and baking soda in a bowl. In a bowl of an electric mixer, or with a handheld mixer, combine butter and sugars until fluffy. Add egg, vanilla, and wine and combine. Slowly in batches add the flour mixture until just combined. Fold in the chocolate and cherries. On a nonstick cookie sheet, place a heaping tablespoon of dough for each cookie about 2 inches apart from each other. Bake 8 to 10 minutes, or until tops are still soft looking but edges look firm.

1 cup sugar
1 large egg
1/2 teaspoon vanilla extract
1-3/4 cups all-purpose flour

FROSTING:
2/3 cup butter, softened
5 cups confectioners' sugar
1-1/4 teaspoons vanilla extract
5 to 10 teaspoons 2% milk
3/4 teaspoon baking cocoa
2 drops yellow food coloring
1 jar (12 ounces) cherry preserves

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. On a lightly floured surface, shape dough into two 6-in. rolls; wrap each in plastic wrap. Refrigerate for 1 hour or until firm., Unwrap and cut into 3/8-in. slices. Place 2 in. apart on greased baking sheets. Bake at 375° for 8-10 minutes or until lightly browned. Remove to wire racks to cool completely., For frosting, in a large bowl, cream butter until light and fluffy. Beat in the confectioners' sugar, vanilla and enough milk to achieve piping consistency. Tint frosting with cocoa and food coloring. Cut a small hole in the corner of a pastry or plastic bag; fill with frosting., Spread preserves over cookies to within 1/4 in. of edges. Pipe lines across the top of each cookie, forming a lattice. Pipe a fluted edge around the tops of cookies.

1 teaspoon ground cinnamon
¼ teaspoon salt
1 cup margarine or butter
1 cup white sugar
5 eggs
¼ cup red wine
8 cups chopped pecans
1 pound chopped candied cherries

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease 2 baking sheets.
  • Sift flour, cinnamon, and salt into a large bowl. In a separate large bowl, beat margarine and sugar until light. Stir in 1 cup of the sifted dry ingredients. Beat in the eggs and the wine to make a batter.
  • Toss the the chopped pecans and the candied cherries in the remaining flour mixture; stir in batter. Drop dough by teaspoons onto prepared baking sheets

1/4 teaspoon almond extract

1 package (10 to 12 ounces) vanilla or white chips
1 jar (10 ounces) maraschino cherries, drained and chopped

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in extract. Combine the flour, baking soda and salt; gradually add to the creamed mixture and mix well. Stir in chips and cherries. , Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. 1 cup butter, softened (I use salted)
3/4 cup light brown sugar
1/4 cup white sugar
1 (3.4 ounce) package vanilla INSTANT pudding mix
2 large eggs
2 teaspoons vanilla extract
1 teaspoon baking soda
2 1/4 cups all-purpose flour
1 (12 ounce) bag of white chocolate chips

Steps:

  • Preheat oven to 350*F Line baking sheets with parchment paper, non-stick foil or baking mat and set aside. Remove cherries from jar and discard juice or use for another recipe like our Cherry Limeade recipe. Chop cherries into 4 - 6 pieces per cherry. If you have a chopper, now is the time to use it! Blot cherries with paper towel to get rid of any extra juice. Set aside. In a mixing bowl cream together the butter, brown sugar and white sugar, scraping bowl as needed. Add powdered instant pudding mix to sugar mixture. Mix well. Add eggs & vanilla and mix well. Add baking soda and flour, mix and scrape sides as needed. Add cherries and white chocolate chips and mix well. Scoop onto prepare baking sheet in 1 inch balls. Bake for 10 - 12 minutes or until edges begin to golden.
