White Russian Cupcakes image

Provided by Jen Arnold, The Sweet Kitchen

Time 1h

Yield 24

Number Of Ingredients 15

1.5 cups sugar
1 cup unsalted butter
3 cups all-purpose flour
1 Tbs baking powder
0.5 tsp salt
4 large eggs at room temperature
2 tsp vanilla
0.5 cup buttermilk at room temperature
4 Tbs Vodkow Cream Liquor
4 Tbs coffee liqueur
1 cup unsalted butter
3.5 cups icing sugar
4 Tbs Vodkow Cream
0.5 tsp vanilla extract
3 Tbs whipping cream or milk

Steps:

  • In a stand mixer, combine butter and sugar, then whip until fluffy.
  • Combine flour, salt and baking powder in a bowl and set aside.
  • Combine vanilla, buttermilk, Vodkow Cream and coffee liqueur and set aside.
  • Add eggs, one at a time, to fluffy butter and sugar mixture, scraping down the bowl as needed and mix until combined.
  • Add 1/3 of the flour mix to the butter and egg mixture, mix just to combine.
  • Add 1/2 of the buttermilk mixture, combine.
  • Continue alternating flour and liquid mixes, finishing with the remaining flour. Mix until just combined.
  • In a paper-lined muffin tin, portion into 24 servings.
  • Bake for 17-24 minutes, depending on your oven. Cupcakes are done when an inserted toothpick comes out clean, or until the top bounces back when lightly touched.
  • Put all ingredients except cream/milk into the bowl of a stand mixer and combine on low speed until everything is incorporated, then turn mixer up to medium and beat until well combined and fluffy.
  • Add cream or milk to taste until desired consistency is reached.
  • Pipe onto cooled cupcakes, add a few sprinkles and serve!

ULTIMATE WHITE CUPCAKES

Ultimate White Cupcakes image

Provided by Food Network Kitchen

Categories     dessert

Time 2h

Yield 12 cupcakes

Number Of Ingredients 9

1 1/2 cups cake flour
1 teaspoon baking powder
1/2 teaspoon fine salt
1/2 cup milk, at room temperature
1 teaspoon pure vanilla extract
1 sticks (4 ounces) unsalted butter, at room temperature
3/4 cup sugar
2 large egg whites, at room temperature
Fondant flower, for garnish, optional

Steps:

  • Preheat the oven to 350 degrees F and position a rack in the middle of the oven. Line one 12-cup standard muffin tin with cupcake liners.
  • Sift the flour, baking powder and salt into a medium bowl. Stir the milk and vanilla together in a small bowl. Set aside.
  • Add the butter to the bowl of a stand mixer fitted with a paddle attachment (or in a large bowl if using a handheld electric mixer).
  • Mix on low speed until the butter is smooth, about 1 minute. Gradually beat in 1/2 cup of the sugar. Increase the speed to high and beat until light and fluffy, about 5 minutes. Scrape down the sides of the bowl as needed.
  • Reduce the mixer speed to low. Add about one-third of the flour mixture and beat until just combined. Add half the milk mixture and beat until smooth. Repeat, adding flour, then milk, and then the rest of the flour, stopping and scraping down the sides of the bowl as needed. Increase the mixer speed to medium and beat briefly to make a smooth batter.
  • Put the egg whites in a clean bowl. Whip on high speed until foamy. Gradually add the remaining 1/4 cup sugar and continue to beat until the egg whites are glossy and hold stiff peaks, about 10 minutes. Fold the whites into the batter in three batches. Divide the cake batter evenly between the liners.
  • Bake until a tester inserted in the center of the cakes comes out clean, rotating the tin about halfway through, about 20 minutes.
  • Cool the cupcakes on a rack in the tin for 10 minutes, and then remove from the tin. Cool on the rack completely.

WHITE RUSSIAN CHEESECAKE

White Russian Cheesecake image

This White Russian cheesecake offers slight coffee flavor with chocolate and creamy Baileys®.

Provided by Marianne Williams

Time 7h25m

Yield 8

Number Of Ingredients 13

1 (9 ounce) package chocolate wafer cookies (such as Nabisco® Famous Chocolate Wafers)
5 tablespoons unsalted butter, melted
1 tablespoon white sugar
1 teaspoon instant espresso powder
1 teaspoon kosher salt, divided
3 (8 ounce) packages cream cheese, at room temperature
1 ⅓ cups white sugar
3 tablespoons semisweet chocolate chips, melted and cooled
⅔ cup sour cream, at room temperature
¼ cup coffee-flavored liqueur (such as Kahlua®)
¼ cup Irish cream liqueur (such as Baileys®)
3 large eggs, at room temperature
⅓ cup white chocolate curls

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line the bottom and sides of a 9-inch springform pan with 4 layers of aluminum foil; set aside.
  • Pulse chocolate wafer cookies in a food processor until finely chopped. Add butter, 1 tablespoon sugar, espresso powder, and 1/2 teaspoon salt; pulse until incorporated, about 5 times. Press cookie mixture evenly over bottom and halfway up sides of springform pan.
  • Bake in the preheated oven until fragrant and starting to turn crispy, 10 to 12 minutes. Remove from oven and set aside to cool while you prepare cheesecake filling. Decrease oven temperature to 325 degrees F (165 degrees C).
  • Combine cream cheese and remaining 1 1/3 cups sugar in the bowl of an electric stand-mixer fitted with the paddle attachment. Beat on medium-high speed until completely smooth and creamy, 1 to 2 minutes, scraping down sides as necessary. Add melted chocolate and beat until incorporated, about 30 seconds. Add sour cream and beat until combined, about 30 seconds. Add coffee liqueur, Irish cream liqueur, and remaining 1/2 teaspoon salt; beat on medium until combined, about 1 minute. Add eggs, 1 at a time, and beat on low until just incorporated. Pour cheesecake mixture into the cooled crust. Place the springform pan into a large roasting pan.
  • Place roasting pan on center rack in the oven. Carefully pour boiling water into the roasting pan to come 1 inch up the sides of the springform pan, making sure you do not get any water into the cheesecake.
  • Bake in the preheated oven until filling is set but still slightly jiggly in the center, 60 to 65 minutes. Turn oven off and prop open door. Let cheesecake cool in oven for 1 hour. Remove roasting pan with cheesecake from oven. Remove cheesecake from roasting pan and set aside to cool completely, about 45 minutes. Cover with plastic wrap and refrigerate at least 4 hours, up to overnight.
  • Run a sharp paring knife around edges of crust to loosen from pan. Remove sides of springform pan. Run knife around bottom of cheesecake to loosen. Gently shimmy, or use large spatulas, to transfer cheesecake onto a cake stand or serving plate. Top with white chocolate curls. Slice and serve cold or at room temperature.

  • Preheat oven to 350 degrees F, and line a cupcake tin with cupcake papers. I recently discovered these cupcake liners that have a metallic interior, and they keep the design on the outside clear when baked instead of just turning all soggy and see-through.
