WHITE SPAGHETTI PIE
I asked an Italian girl that I worked with, what a good spaghetti side dish might be. She told me about spaghetti pie, made with eggs, milk, cheese pasta and spices. It sounded pretty good to me so I tried it, with a few add ins. I figured why not put the whole meal in one casserole. This is one of my husband favorites. I have made it with chicken as well. I have also used different types of cheese, whatever I have on hand. Enjoy!!

Steps:
- Cook 3 servings spaghetti al dente, drain and set aside.
- In large skillet saute sausages until just cooked. I let them cool and peel the casings off, then cut them into 1/2 inch coins.
- Return sausage to the skillet and add garlic, red pepper flakes, basil, Italian seasoning, olive oil, salt and pepper, saute 2 minutes.
- Add mushrooms, saute 2 minutes.
- Add broccoli and celery, saute 2 minutes.
- Add onion, saute 2 minutes.
- Turn off burner cover and let sit until egg milk mixture is ready.
- Quickly beat eggs and milk together.
- In greased 9X13 inch glass pan layer 1/2 the vegetable meat mixture, then 1/2 the pasta, repeat.
- Pour the egg mixture over the whole thing and top with grated cheese.
- Bake at 325 until bubbly, let stand 10 min before serving.

CHEESY SPAGHETTI PIE
Steps:
- Mix the cooled spaghetti, grated cheeses and eggs together in a large bowl. Sprinkle with salt and pepper. Add the oil to a large nonstick saute pan and heat to medium heat. Once hot, add a handful of the spaghetti mixture to the pan and flatten it out to the edges. Lay the American cheese on top and add another layer of the spaghetti mixture. Cook for about 5 minutes and flip, cooking for another 5 minutes on the other side until golden brown.
- Turn out onto a cutting board, slice as you would a pizza and serve.
SPAGHETTI PIE

- Preheat the oven to 350 degrees F. Grease a 9-by-3-inch cake pan with cooking spray.
- Bring a large pot of salted water to a boil. Add the spaghetti and cook for 3 to 4 minutes less than the package recommends, so that it is very al dente. Drain and reserve.
- In a large skillet over medium-high heat, brown the beef, 5 to 8 minutes; season with salt and pepper. Transfer the beef to a paper towel-lined plate to drain. Wipe the skillet clean with a paper towel. Heat the olive oil in the skillet over medium heat and saute the onions until translucent, 4 to 5 minutes. Set aside.
- In a large bowl, whisk together the marinara, ricotta, parsley, eggs, 1/2 cup of the Parmesan, 1 teaspoon salt and 1/4 teaspoon pepper. Add the cooked spaghetti, beef and onions and toss to evenly coat. Transfer to the prepared pan, top with the mozzarella and sprinkle with the remaining 2 tablespoons Parmesan.
- Bake until the cheese is bubbling and golden brown, 25 to 30 minutes. Let rest for 5 minutes, then cut into wedges and serve.
MILLION-DOLLAR WHITE SPAGHETTI CASSEROLE

- Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
- Cook spaghetti to al dente as directed on package; drain. Return to pan.
- Meanwhile, in 10-inch skillet, heat olive oil over medium heat. Add spinach; cook about 3 minutes or until wilted; set aside.
- Add chicken and Alfredo sauce to spaghetti; toss to coat. Spread half of the mixture in baking dish.
- In medium bowl, stir ricotta cheese, 1 cup of the mozzarella cheese, the egg, garlic, salt and pepper; stir well to combine.
- Spread cheese mixture over spaghetti mixture in baking dish. Top with wilted spinach. Top with remaining spaghetti; sprinkle with remaining 1/2 cup mozzarella cheese.
- Bake 20 minutes.
- Sprinkle with parsley before serving.

- Cook spaghetti according to package directions; drain. Meanwhile, in a large skillet, cook the beef, onion and garlic over medium heat until beef is no longer pink, 6-8 minutes, breaking up beef into crumbles; drain. Stir in the spaghetti sauce, salt and pepper; bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes, stirring occasionally., In a small bowl, mix cream cheese and sour cream until blended; stir in green onions. - Preheat oven to 350°. Cook spaghetti according to package directions for al dente; drain., In a large skillet, cook beef, onion and green pepper over medium heat 5-7 minutes or until beef is no longer pink, breaking up beef into crumbles; drain. - Cook spaghetti in water with 2 teaspoons salt and 1 tablespoon oil until tender but still firm. Drain. Add eggs, Parmesan cheese, and butter. Mix and shape into a crust in a greased 10-inch pie plate or springform pan.
- Spread cottage cheese over crust. Preheat oven to 350 degrees F (175 degrees C).
- Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Cook and stir the beef, onion, and green pepper until beef is thoroughly browned. Mix in tomatoes, tomato paste, sugar, oregano, 1/2 teaspoon salt, and garlic powder. Spread mixture over cottage cheese.

- Cook and drain spaghetti. Stir in margarine, parmesan cheese and eggs, while spaghetti is hot. Form spaghetti mixture into a crust in a buttered 10 inch pie plate.
- Preheat oven to 350 degrees F (175 degrees C).
- In a skillet cook the beef, onion, green pepper and garlic. Drain off the fat and stir in the undrained tomatoes, tomato paste, sugar and oregano. Heat through.

- Cut spaghetti into aproximately 3" to 4" pieces.
- Beat eggs in a large bowl, add spaghett into and mix well, add parmesan cheese and blend all.
- Grease a glass 8" x 11" baking dish. Layer 1/2 of mixture on bottom, layer 1/2 of mozzarella cheese on top, layer rest of spaghetti and top with balance of mozzarella.
- Bake, uncovered, in preheated 325 degree oven for 40 minutes.
- Remove, slice into squares. As you serve top with 1-2 cups sauce, and sprinkle a little green or parmesan cheese on top to garnish. Reheat for lunch tomorrow.

- Heat oven to 400°F. Spray 15 x 10 x 1-inch pan with cooking spray.
- In 5-quart Dutch oven or stockpot, cook spaghetti as directed on box. Drain and rinse. Return spaghetti to Dutch oven; set aside.
- In small bowl, beat milk, eggs and salt with fork or wire whisk. Stir in garlic.
- Stir egg mixture, 1 cup of the mozzarella cheese and the Parmesan cheese into the spaghetti until well blended. Pour spaghetti mixture evenly into pan. Cover with nonstick foil.
- Bake 15 minutes. Reduce oven temperature to 350° F. Remove from oven; remove foil. Evenly spread Alfredo sauce over spaghetti mixture. Top with chicken, bacon and remaining 1 cup of the mozzarella cheese. Bake 10 to 15 minutes longer or until cheese is melted. Sprinkle with parsley.

- Preheat oven to 375 degrees with a rack in the center. Butter a 10-by-3-inch round cake pan. Line the bottom with parchment paper, and butter parchment.
- In a large bowl, combine eggs, mozzarella, soppressata, Pecorino Romano, heavy cream, parsley, and 1/2 teaspoon pepper; season with salt, and stir to combine. Add spaghetti, and stir to combine. Pour mixture into prepared pan.
- Cover pan with foil, and place in oven. Bake until pie is heated through and beginning to bubble, about 40 minutes. Remove foil, and bake until lightly browned and crisp on top, about 20 minutes more.
- Transfer pan to a wire rack; let cool 10 minutes. Run a knife around the edge, and invert onto a large plate. Remove parchment paper, and reinvert onto a serving platter. Cut into wedges; serve.
