1 ¾ cups buttermilk
2 eggs
8 chicken drumsticks
8 ½ cups vegetable oil
2 cups flour
2 teaspoons salt
½ tablespoon dried thyme
½ tablespoon dried basil
1 teaspoon dried oregano
1 teaspoon celery salt
½ tablespoon black pepper
1 tablespoon mustard powder
2 tablespoons paprika
2 tablespoons garlic salt
1 tablespoon powdered ginger
1 tablespoon white pepper

Steps:

  • Beat the eggs into the buttermilk.
  • Add the chicken pieces to the buttermilk mixture and chill for an hour.
  • In a large mixing bowl, mix the flour with all the herbs and spices.
  • Coat the soaked chicken pieces in the herbed flour mixture, shaking off any excess.
  • Heat oil in a large sauce pan to 325˚F (170°C), then turn to low heat.
  • Fry the chicken in batches for 15 minutes until the chicken is cooked and the skins turn golden brown.
  • Transfer to a paper towel-lined plate.
  • Enjoy!

4 garlic cloves, crushed
1 tablespoon packed brown sugar
2 teaspoons Chinese five-spice powder
1 teaspoon salt, divided
2 pounds boneless skinless chicken thighs
1/2 cup white vinegar
1/4 cup water
1 tablespoon sugar
2 medium carrots, shredded
12 Bibb lettuce leaves
1/4 cup thinly sliced green onions
2 tablespoons fresh cilantro leaves
sweetened shredded coconut, optional

Steps:

  • In a large resealable plastic bag, combine the first four ingredients and ½ teaspoon of salt. Place chicken in bag, seal and turn to coat. Refrigerate 8 hours or overnight. , In a small saucepan, combine vinegar, water, sugar and remaining 1/2 teaspoon salt. Bring to a boil; whisk until sugar is dissolved. Remove from heat. Place carrots in a small bowl, pour vinegar mixture over top. Refrigerate 8 hours or overnight. , Drain and discard marinade. On a lightly greased grill rack, grill chicken, covered, over medium heat or broil 4 in. from heat until a thermometer reads 170°, 6-8 minutes on each side. Cool slightly; slice into strips. , Divide chicken among lettuce leaves, top with pickled carrots, green onions and cilantro. Sprinkle with coconut, if desired.

This is a gorgeous looking and tasting chicken dish. Also really simple and a great appetizer for your party. I made this for a lunch we hosted, and it was the simplest thing on the menu, and received the best reviews! Cooking time doesn't include marinating time.

1 1/2 lbs boneless skinless chicken, cut into cubes, breasts preferable
1 tablespoon white pepper
2 cups plain yogurt
1 tablespoon garlic paste
1 tablespoon ginger paste
3 green bell peppers, seeded and cut into 1-inch pieces
2 large onions, cut into slices
salt

Steps:

  • Mix yogurt, pepper, salt, ginger and garlic pastes.
  • Add chicken.
  • Marinate for at least 4 hours.
  • Preheat oven to 400 degrees.
  • Arrange chicken pieces pulled OUT of the yogurt mixture, meaning, don't pour all the yogurt in, in a 9x13 baking dish.
  • Add green peppers and onions to chicken pieces.
  • Bake, covered with foil, for 35 minutes.
  • Remove foil, bake an additional 10 minutes.
