I would suggest to mix the butter with the dry ingredients and add the buttermilk to that without the sugar, then beat the egg whites with the sugar to create a meringue (until the mixture forms peaks) and fold that mixture in with the rest of the cake.

1 teaspoon baking powder

1 ⅓ cups buttermilk
4 egg whites

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 9-inch round baking pans.
  • Beat butter and vanilla extract together in a bowl until creamy. Mix flour, baking powder, baking soda, and salt together in a separate bowl. Beat butter mixture, alternating with buttermilk, into flour mixture until fully incorporated.
  • Beat egg whites in a glass or metal bowl until foamy. Gradually add sugar, continuing to beat until medium peaks form. Lift your beater or whisk straight up: the tip of the peak formed by the egg whites should curl over slightly. Fold egg white mixture into batter until just combined. Pour batter evenly into the prepared baking pans.
  • Bake in the preheated oven until a toothpick inserted in the center of each cake comes out clean, 30 to 35 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.
  • Spread frosting atop one of the cakes and top with second cake. Spread the remaining frosting over the top cake and around the sides of both cakes.

1 teaspoon baking soda

½ cup butter flavored shortening
1 (8 ounce) package cream cheese
4 cups sifted confectioners' sugar
1 tablespoon milk

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour 2 round 8 inch pans. Sift the flour and salt together and set aside.
  • Cream butter and sugar until light and fluffy. Add eggs and mix well. Dissolve baking soda in buttermilk. Alternately add flour and buttermilk, beginning and ending with the flour. Pour into two 8-inch pans.
  • Bake at 325 degrees F (165 degrees C) for about 30 minutes, or until toothpick inserted into cake comes out clean. Cool cake completely before icing.
  • To make the White Velvet Cream Cheese Icing: Beat shortening and cream cheese together. Gradually beat in confectioners sugar. Add milk until a frosting is formed. (Add more milk if necessary.)

1 box Pillsbury or Betty Crocker White or Vanilla cake mix (16.25 oz)
1 cup granulated white sugar
1 ⅛ cup cake flour (this is one cup + 2 tablespoons)
⅛ tsp salt
1 ⅓ cup water
3 eggs
½ cup butter (I use lightly salted butter)
1 cup sour cream
1 tsp vanilla extract or almond extract (optional)

Steps:

  • In a large bowl, put water, extract (if using), eggs, melted butter and sour cream. Mix well with paddle attachment.
  • Add cake mix, sugar, cake flour, and salt.
  • Mix with paddle attachment at medium speed for approximately 2 minutes, or until most lumps are worked out. It is not necessary to work out all the lumps.
  • Pour into prepared pans and bake at 325 until a toothpick inserted into the center comes out clean, or with just a crumb or two clinging to it. For two 8" or 9" rounds this is around 40 minutes, but every oven is different. Your cake is getting close to done when you can smell it. If it looks close I like to give the rack a little shake. If the center jiggles at all, it's not ready. If it doesn't jiggle, go ahead and test with the toothpick.
  • Cool for 7-10 minutes in pan, then turn out onto cooling rack. If you experience problems with sticking, you may wish to line your baking pans with parchment paper.

1/2 tsp salt
2 tsp sugar
2 vanilla extract (clear is best to maintain whiteness )
1 c buttermilk
6 egg whites

  • 2. separate bowl cream softened butter , vanilla and sugar until creamy and fluffy
  • 3. alternate adding in 1/3s .. buttermilk and then flour to butter and sugar mixture. Incorporate well between adding
  • 4. Separate bowl .... beat egg whites until stiff peaks form
  • 5. Place whipped egg into batter and gently fold in .. Fold well.
  • 6. Pour into prepared butter and floured pans 2 - 9 inch 3- 8 inch
  • 7. Preheated 350,° oven 30 or until it springs back when lightly pressed in center. Or toothpick comes out clean.
  • 8. Allow to cool before removing. Ice with favorite icing.

Steps:

  • Preheat the oven to 350°F. Grease and flour a 13 x 9 inch cake pan or spray with baking spray. Sift together the flour, baking powder and salt and set aside.
  • In the bowl of a stand mixer, cream together softened butter, sugar, vanilla and almond flavorings. Beat for 5 minutes until creamy and pale yellow in color.
  • Add the egg whites. Beat on medium-high speed for 3 minutes until fluffy.
  • Lower the speed of the mixer, and add the sifted dry ingredients alternately with the buttermilk. Stop and scrape the beater and sides of the bowl periodically so all of the ingredients fully combine.
  • After all ingredients have been added, increase the mixer speed and beat for 1 minute longer.
  • Spread the batter evenly in pan. Bounce the pan on the counter to remove air bubbles.
  • Bake for 35-38 minutes or until a toothpick inserted into the center comes back clean.
  • Cool completely. Frost as desired.

1 vanilla bean, seeds scraped ((or 2 teaspoons vanilla bean paste))
6 egg whites, (room temperature)
3 1/4 cups cake flour, (spooned and leveled, then sifted)
3 1/2 tsp baking powder
1 tsp coarse Kosher salt ((if using table salt, use half the amount))
2 1/2 cups whole buttermilk, (room temperature)
2 cups unsalted butter, (softened to room temperature)
4 cups powdered sugar
1 tbsp meringue powder ((optional))
1/8 tsp coarse Kosher salt ((if using table salt, use half the amount))
2 tsp vanilla bean paste or vanilla extract
2-4 tbsp milk or cream, (if needed)

Steps:

  • Preheat the oven to 350 F, and spray the bottoms of three 8-inch cake pans with non-stick spray.
  • In the bowl of your stand mixer fitted with the paddle attachment, beat the butter, sugar and vanilla bean on medium speed for 10 minutes, scraping the bowl occasionally.
  • Beat in the egg whites, one at a time, beating each for 10 seconds before adding the next. Scrape the bowl down and beat for 10 more seconds.
  • In a separate bowl, sift together the flour, baking powder and salt.
  • With the mixer on low, add the flour mixture in three additions, alternating with the buttermilk, starting and ending with the flour. Use a spatula to scrape the bowl well and incorporate any stray bits of flour.
  • Divide the batter between the pans. Bake on the center oven rack for about 25-30 minutes, until a cake tester or toothpick comes out clean.
  • Set the pans on a wire rack, cover loosely with a clean kitchen towel, and cool completely before frosting.
  • In the bowl of your stand mixer fitted with the whisk attachment, beat the butter for 1 minute until smooth.
  • With the mixer on low, add the powdered sugar, meringue powder and salt and mix until combined.
  • Add the vanilla and milk, increase the speed to medium high and whip for 4-5 minutes, scraping the bowl occasionally, until very light and fluffy.
  • Remove the cooled cakes from the pans. Fill, stack and frost the cake with the buttercream.
