WINTERMELON MILK TEA RECIPE
Wintermelon milk tea is the perfect summer drink that is cooling with a unique caramel-like flavour that is hard to resist. Moreover, the fruit used is a great source of nutritional benefit that helps energise the body and boosts brainpower. Try this recipe infused with a sharp wintermelon flavour and the pleasant taste of jasmine tea. You can choose whether to make it chilled or have it warm, the recipe is for both!

- Start by washing and peeling the fruit. Deseed the fruit and cut it into small pieces, enough to be cooked easily. Make sure not to discard the seeds, just set them aside. Get a large pot and add the cubed fruit into it.
- Sprinkle powdered sugar on the fruit as you turn on low heat and let it sit for an hour or so. After a while, you will start noticing a layer of water at the bottom of the pot. The water from the melon is collected in this way. Don't get rid of the water; just place the pot over medium heat afterwards.
- When the water starts to boil, add the rock sugar to the pot. As an option, add the seeds we previously set aside to intensify the taste of the melon.
- Reduce the heat from medium to low, cool the infusion for 90 minutes as you want the fruit to turn transparent. After it does, remove the pot from heat and let it cool. Extract the wintermelon syrup from fruit with a linen cloth or mesh strainer.
- Add a teaspoon of jasmine tea leaves in 200ml boiling water, and steep for 3-5 minutes. Once done, mix the sugar in and set the hot drink aside to cool down.
- Pour the chilled tea and syrup into a glass cup with ice cubes. Then add 1-2 tablespoons of milk. Serve your wintermelon milk tea chilled!

- Mix winter melon with brown sugar in a soup pot. Set aside for about 1 hour, you should see that some liquid has formed.
- Add rock sugar and mix. Place the pot on the stovetop, turn on the heat, and bring to a boil. Cover the pot, reduce the heat to a simmer, and cook until winter melon is completely transparent. This takes about 2 hours.
- Turn off the heat. Pass the pot content over a strainer. Strain and press as much liquid through the strainer as you can. The strained liquid is our winter melon tea syrup.
- To serve, make "tea" with 1 part concentrated winter melon syrup and 3 parts water. Add some ice cubes, and stir everything together. Serve cold.

- Wash the winter melon carefully and then remove the skins. Then cut the left part into small cubes. Throw them into a large pot.
- Spread brown sugar powder and give a big stir to mix them evenly. Set aside for around 1 hour until there is a thin layer of water in the bottle.
- Use high fire to bring everything in the pot to a boiling and then add rock sugar. (I would suggest adding the skins and seeds back in this step. But it is totally up to you) Slow down the fire to simmer for 1.5 hours to 2 hours based on your cooking ware until the winter melon is totally transparent. Turn off the fire and wait to cool down.
- Strain the juice out. And press the winter melon with heavily during the process to get as more juice as possible. Or you can use gauze to wrap the winter melon and squeeze the juice out.
