BLACK DIAMOND MARINATED STEAKS
Just in time for grilling season! I've posted this recipe in response to a request. Prep time includes marinating steaks.

Steps:
- Mix marinade ingredients together.
- Score steak on both sides.
- Marinate steaks for 8 to 10 hours.
- Grill 6 to 8 minutes per side.
BLACK DIAMOND STEAK
The marinade for the steak is a unique blend of sweet, salty, and savory. It won't overpower the natural steak flavors but rather it enhances them. So even those steak purists who shun marinades will find this one appealing!

Steps:
- Score the steaks on both sides and set aside. Combine the oil, soy sauce, honey, brown sugar, vinegar, ginger, and garlic powder in a zip-top plastic bag. Mix well. Add the steaks to the marinade, seal the bag, and turn to coat them evenly in the marinade. Place in the refrigerator and let marinate for 8-10 hours. When ready to cook, preheat the grill to medium-high heat. Remove the steaks from the marinade (discard the marinade). Place the steaks on the grill and cook over direct heat for 6-8 minutes per side or until desired doneness (actual cook time will depend on the thickness of the steaks). Remove the steaks from the grill and let sit covered lightly with foil for 5 minutes before serving.

BLACK DIAMOND STEAK
This is our favorite beef marinade. It is similar to a teriyaki marinade without the citrus undertone. The soy sauce will cause the edges of the diamond pattern to turn dark brown, hence the name. We also like the sauce on baked potatoes.

- Combine ingredients in a shallow dish or plastic bag. Score steak in a one-inch diamond pattern. Marinate steak for several hours. Grill to desired doneness. Boil leftover marinade to reduce by half and serve with the steak.

DIAMOND-SCORED MUSHROOM STEAKS
The natural umami of these mushrooms paired with a savory red wine sauce makes this dish a very steak-like experience with zero meat. King trumpet mushrooms get their name for a reason: They're the largest in the oyster mushroom family, making them hefty enough for knife-and-fork eating. Scoring them with a crosshatch pattern before cooking helps the marinade penetrate and gives them a steakhouse appearance. Serve this dish as a main course or as a new side dish for your Thanksgiving table.

- For the mushrooms: Slice the mushrooms in half lengthwise. On the flat side, carefully score each mushroom with a paring knife one way and then the other creating a diamond crosshatch pattern without cutting all the way through the mushrooms. Stir together the olive oil, balsamic, soy sauce, thyme, garlic, brown sugar and chili garlic paste in a large bowl. Toss the mushrooms in the marinade and set aside.
- For the wine sauce: Heat the oil over medium heat in a small saucepan. Add the shallot and cook, stirring, until softened, 2 to 3 minutes. Add the garlic and thyme sprigs and cook until fragrant, about 1 minute more. Add the wine, broth and brown sugar. Increase the heat to medium-high and let reduce until about 1/3 cup liquid remains in the pan, about 10 minutes.
- Reduce the heat to low, add the butter and swirl it into the sauce until just melted; remove from the heat and add the lemon juice and the 1 tablespoon chopped chives. Season with salt and pepper. Discard the thyme sprigs.
- Add the 2 tablespoons butter to a large skillet and place over medium-high heat. Once melted and the pan is hot, add half the mushrooms, crosshatch-side down. Cook, untouched, until the mushrooms are deeply browned on the bottom, 2 to 3 minutes. Flip and cook on the second side until browned and the mushrooms just become tender, 2 to 3 minutes more. Repeat with the remaining mushrooms.
- Sprinkle the mushrooms with salt and pepper. Pour half of the sauce over the bottom of a serving platter. Top with the mushrooms, scored-side up, and drizzle with the remaining sauce. Sprinkle with more chopped chives.
BLOODY MARY MARINATED STEAK
Something different for steaks - with just a little kick! Prep time includes marinade time! Cook time varies on thickness and type of steaks used.

Steps:
- Mix the bloody mary mix, vodka and lime juices.
- Place steaks in marinade- seal and refrig for at least 12 hours.
- Mix the butter and horseradish.
- Heat grill.
- Pat dry steaks- lightly spray with olive oil and season with the red pepper seasoning salt.
- Grill to desired doneness.
- Place butter/horseradish sauce on top of each steak and enjoy.
