FOLD-OVER TORTILLA BAKE

Steps:

• In a large skillet, cook ground beef and onion until beef is no longer pink, breaking it into crumbles; drain. Stir in the tomatoes, enchilada sauce and seasonings. Bring to a boil. Reduce heat and simmer, covered, for 5 minutes. Pour half the meat sauce into a 13x9-in. baking dish. Set aside. , Wrap the stack of tortillas in foil; warm at 350° for 8-10 minutes. Spread each warm tortilla with cream cheese and top with chiles. Fold tortillas in half. Arrange folded tortillas over meat sauce; pour remaining sauce over top. , Cover and bake at 350° for 15 minutes. Sprinkle with cheese; bake until cheese is melted, about 5 minutes longer. If desired, top with cilantro.

WW LAYERED TORTILLA BAKE CASSEROLE

Steps:

• Preheat oven to 350 degrees. Brown ground beef in large nonstick skillet;.
• drain well. Mix in beans, tomatoes, chiles and taco seasoning mix. Reduce heat;.
• simmer 5 minute Spray 9 x 13 " baking dish with nonstick cooking spray. Cut.
• tortillas in half; place half of them in bottom of baking dish, overlapping.
• Spoon half of beef mixture evenly over tortillas. Cover with remaining.
• tortillas and then remaining beef mixture. Top with cheese. Cover; bake 25 minute.
• 5.5 Points per serving.

TORTILLA BAKE

Steps:

• Brown the ground beef and drain.
• Meanwhile, preheat the oven to 375, and in an 8 x 11.
• 5 casserole dish, place one layer of tortillas (4).
• Add taco seasoning with instructed amount of water, the 1 can of tomato sauce, and the black or kidney beans drained.
• I like to add a bit of hot sauce to add a zing.
• Simmer for a few minutes.
• Add half of the hamburger/ bean mixture on top of the first layer of tortillas.
• Sprinkle some cheese on top.
• (1/2 cup) Add another layer of tortillas (4) and place the remaining of the hamburger/bean mixture with cheese.
• Add the last 4 tortillas on top and bake for 20 minutes.
• Add last cup of cheese on top and bake for another 10 minutes.
• Serve with sour cream, lettuce, tomatoes and shredded cheese if desired!

TURKEY WRAPS

Steps:

• Mix together the cream cheese and Dijon mustard until smooth. Spread each tortilla with about 2 tablespoons of the cream cheese mixture, spreading to within 1/4 inch of the edge of the tortillas.
• Arrange about 1/4 cup of shredded lettuce on each tortilla, and press the lettuce down into the cream cheese mixture. Place 2 turkey slices per tortilla over the lettuce, and sprinkle with 2 tablespoons of shredded Swiss cheese. Top each tortilla evenly with tomato, avocado slices, and crumbled bacon.
• Roll each tortilla up tightly, and cut in half across the middle with a slightly diagonal cut.
