CLASSIC BANANA BREAD WITH YOGURT



Classic Banana Bread With Yogurt image

I got this recipe from Cooking Light, but modified it to suite my needs (and the family's). My requirements were for it be lower in fat, healthier. My family's requirements was that it had to have chocolate chips. So we compromised and I came up with this alternative. I always cook my loaves in smaller loaf pans as they cook better and they cut easier when they are frozen. Leftover batter can be put in muffin tins.

1 cup all-purpose flour
1 cup whole wheat flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1/4 cup butter, softened
2 large eggs
1 1/2 cups bananas, mashed (about 3 bananas)
1/3 cup plain low-fat yogurt
1 teaspoon vanilla extract
1 cup chocolate chips
cooking spray

Steps:

  • Preheat oven to 350°F.
  • Combine the flour, baking soda, and salt, stirring with a whisk.
  • Place sugar and butter in a large bowl, and beat with a mixer at medium speed until well blended (about 1 minute).
  • Add the eggs, 1 at a time, beating well after each addition. Add banana, yogurt, and vanilla; beat until blended.
  • Add flour mixture; beat at low speed just until moist. Spoon batter into an loaf pan coated with cooking spray.
  • Bake at 350°F for 50 minutes to 1 hour (depending on size of loaf pans) or until a wooden pick inserted in center comes out clean.
  • Cool 10 minutes in pan on a wire rack; remove from pan. Cool completely on wire rack.

I came up with this recipe to use up some extra bananas and yogurt, but since I live alone, eating a whole banana bread to myself is... well... pure gluttony. So, to my great pleasure, there is no willpower needed here! I am very proud of how it came out. It is very moist and the buckwheat gives it a nice flavour. If you are used to regular store-bought over-sweetened cakes, I recommend you increase the amount of sugar in the recipe or, you can use these tricks: use over-ripened bananas (they are sweeter), use sweetened applesauce and/or vanilla yogurt instead of plain.

1/4 cup unsweetened applesauce
1/4 cup margarine
1/2 cup sugar
2 eggs
2 bananas, mashed (I like to whip mine with a stick blender so they are nice and frothy, with no lumps)
1 cup all-purpose flour
1 cup buckwheat flour
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup plain yogurt

Steps:

  • Preheat oven to 350°F.
  • In a bowl, cream the applesauce and the margarine with the sugar. Add eggs, one at a time, mixing between each addition. Add bananas.***.
  • In another bowl, sift flours with baking soda, baking powder, and salt.
  • Add to previous preparation, alternating with the yogurt. Stir just to to mix.
  • Pour into a greased 9 x 13 cake pan and bake 40 minutes or until a toothpick comes out clean.
  • ***If you have a stand mixer, set it on a high speed and let it run while you do the next step.

This is the most delicious banana yogurt cake that I have ever tasted. It's very easy to make.

¾ cup white sugar
½ cup butter, melted
2 eggs
1 teaspoon vanilla extract
½ cup banana-flavored Greek yogurt
1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
2 medium bananas, mashed
1 cup white chocolate chips
½ cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Stir sugar and melted butter together in a large bowl. Add eggs and vanilla extract; mix well. Mix in banana yogurt.
  • Combine flour, baking soda, and salt in a separate bowl. Stir into the butter mixture until smooth. Fold in bananas, white chocolate chips, and walnuts. Spread evenly into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center of the loaf comes out clean, about 1 hour. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely.

3 cups nonfat plain yogurt, whisked until smooth
1/4 cup grated fresh or frozen coconut
1/4 teaspoon + 1/2 teaspoon salt, or to taste
1/2 teaspoon greshly ground black pepper, or to taste
1 teaspoon black mustard seeds
1 teaspoon cumin seeds
1/2 teaspoon fenugreek seeds
1/8 teaspoon ground asafoetida
1 tablespoon dried curry leaves
1 teaspoon , hot red pepper flake, , or to taste
1 tablespoon peanut oil
2 medium ripe bananas, peeled and cut into 1/4-inch pieces
2 to 3 tablespoons fresh lemon juice

Steps:

  • 1. In a serving bowl, mix together the yogurt, coconut, 1/4 teaspoon salt, and black pepper. In a spice or coffee grinder, grind together the mustard, cumin, and fenugreek seeds, and the asafoetida. curry leaves, and red pepper flakes until fine. 2. Heat the oil in a large nonstick wok or saucepan over medium-high heat and add the ground spice mixture it should sizzle immediately. Quickly add the bananas and 1/2 teaspoon salt and cook, turning the pieces carefully, until golden on both sides, about 3 minutes.3. Mix in the lemon juice and cook another minute. Transfer the seasoned bananas to the yogurt and swirl lightly to mix, with parts of them visible as a garnish. Refrigerate at least 2 hours to chill, then serve.From "1,000 Indian Recipes."
