SESAME CRUSTED SALMON
Recipe VIDEO above. Just roll salmon in sesame seeds and bake - you'll be amazed how well it sticks! Served over soba and Asian greens with a fabulous Asian dressing, this is a great quick salmon recipe.

Steps:
- Take salmon out of fridge 20 minutes before cooking.
- Preheat oven to 220C/430F (standard) or 200C/390F (fan). Place shelf about 20cm/8" from the broiler heat source at the top of the oven.
- Sprinkle both sides of the salmon with salt and pepper.
- Place sesame in shallow dish. Press salmon into sesame seeds to coat on all sides. Place on tray.
- Drizzle top with oil.
- Bake for 10 minutes. Flick to broiler on high - broil / grill for 3 minutes until the top is a bit golden (or bake for 5 minutes, but won't be as golden). (Note 5)
- Remove from oven, rest 3 minutes. Serve with soba and greens, garnished with scallions (optional) and drizzled with Dressing.

SESAME GINGER SALMON
A super easy salmon dish bursting with so much flavor, and it's hearty-healthy too!

- To make the glaze, whisk together honey, soy sauce, sesame oil, Sriracha, ginger and sesame seeds in a small bowl; set aside. In a medium bowl, whisk together olive oil, soy sauce, rice vinegar, sesame oil, brown sugar, garlic, ginger, sesame seeds and green onions. In a gallon size Ziploc bag or large bowl, combine ginger marinade and salmon filets; marinate for at least 30 minutes to overnight, turning the bag occasionally. Preheat oven to 400 degrees F. Lightly coat a 9×13 baking dish with nonstick spray. Place salmon filets along with the marinade onto prepared baking dish and bake until the fish flakes easily with a fork, about 20 minutes. Serve salmon immediately with honey ginger glaze.
YOSHIDA'S SESAME-CRUSTED SALMON
Mr. Yoshida's sauces are famous for their Asian marinade's and sauces. Dress up some salmon with their sauce (or other brand) and a few other ingredients.

- Preheat the oven to 450 degrees F. Place the sesame seeds in a shallow dish. Brush the tops of the salmon with the mustard then press the mustard side of the salmon into the sesame seeds so they adhere. Place the salmon, sesame seed side up, in a shallow roasting pan. Bake at 450 degrees F for 10 minutes or until the fish flakes easily with a fork. Meanwhile, combine the sweet and sour sauce with the vinegar in a saucepan over medium heat. Bring to a simmer. Remove the salmon from the roasting pan and place on individual serving plates. Drizzle with the sweet and sour mixture and serve immediately.

Steps:
- Remove skin from salmon.
- Combine sesame seeds and place them in a shallow dish.
- Press both sides of salmon pieces into sesame seeds to form a crust.
- Place greens in a saucepan of boiling water and cook for 1 minute, then drain.
- Heat sesame oil in a pan over high heat.
- Add ginger and cook for 1 minute.
- Add oyster and soya sauces, sugar and wine, and simmer for 4 minutes or until thickened.
- Place a frypan over low heat, add oil and place salmon in pan.
- Cook salmon over low heat for 2-3 minutes on each side or until it is cooked medium-rare.
- To serve, toss greens in frypan with the simmering sauce and place on serving plates.
- Top greens with sesame-crusted salmon and serve.

SESAME CRUSTED WILD SALMON
This is probably the best and easiest way to make wild salmon. Alot of flavor and simple. The sesame compliments the salmon very well while the sause blends nicely with the ginger and onion. Served best with basmati rice and steamed vegetables.

Steps:
- Pre heat oven to 450 degrees.
- Toast the sesame seeds in the oven for 5 minutes or when browned.
- rub the top of the salmon with the sesame oil and sprinkle to taste with salt and pepper.
- Dredge the tops of the salmon onto the toasted seeds lightly butter a baking dish and place salmon on top then place in oven for 10-15 minutes dependant on the thickness of the salmon.
- Once the salmon is baking melt the butter on med high heat and glaze the onion and ginger in the butter for about 5 minutes.
- Salt and pepper the mixture and then place the rice vinegar in until vinegar evaporates.
- then stir in the coconut milk or cream and boil for 2 minutes turn heat down low and wait for the salmon.
- Place portions of the mixtur on a plate and top with salmon with your rice and veggies on the side.
