GRANDMA'S ANYTHING GOES STRATA
Grandma knew how to make a hearty meal out of leftover bits of bread and cheese. This recipe is meant for riffing, so use any type of cheese, leafy greens, meat or bread you happen to have on hand.

Steps:
- Position a rack in the center of the oven and preheat to 350 degrees F. Grease a 1 1/2 quart baking dish with butter or cooking spray.
- Whisk the eggs, milk, half-and-half, nutmeg, cayenne, 1 teaspoon salt and 1/2 teaspoon pepper together in a large bowl. Fold the greens, meat, bread and 1/2 cup of the shredded cheese into the mixture. Pour into the prepared baking dish and top with the remaining cheese.
- Cover with foil and bake for 35 minutes. Uncover and bake until the strata is puffed, golden brown at the edges and set in the center, about 15 minutes more. Let cool 10 minutes before serving.
CHICKEN HEKKA

Steps:
- Marinate the chicken for 30 minutes in the Hekka Marinade. Meanwhile, mix the bamboo shoots, onions, carrot, mushrooms, celery, and watercress, and set aside.
- Brown the chicken in 3 tablespoons oil to which you have added crushed ginger. Add all the vegetables and stir-fry for 1 minute. Add the sake sauce and bean threads and simmer on medium heat for 5 minutes. Serve at once.
- Dissolve the cornstarch in the soy sauce and mix with the remaining ingredients.
- Blend all ingredients.

- Cut chicken meat into bite size pieces. In a medium bowl combine the sugar, soy sauce, and mirin wine. Mix well, and set aside.
- In a skillet or wok, heat oil over medium-high heat. Squeeze juice from grated ginger into wok, add grated ginger, and stir fry until brown. Discard ginger fibers. Increase heat to high, and stir in chicken. Season with soy sauce mixture, and cook for 2 more minutes.
- One at a time add the carrots, onions, bamboo shoots, mushrooms, and watercress. Stir after each addition. Add rice noodles; cook, stirring, for about 3 more minutes, or until done.

GRANDMA'S BBQ BEEF
This recipe was passed down from my great-grandmother. It's a family favorite and we look forward to it every year. And there is always enough for leftovers.

Steps:
- Place meat, water, onion and bay leaves in a large pot.
- Simmer covered until tender.
- Remove meat. Reserve 1 cup broth. Discard onion and bay leaves.
- Cool and shred meat.
- Melt butter in same pan and add chopped onion, sauté.
- Stir in sugar, salt, mustard, catsup, vinegar, Worcestershire sauce and 1 cup broth.
- Add shredded meat and mix gently.
- Simmer 30 minutes.
- Serve on rolls.

GRANDMA'S BEEF STEW
This is my grandma's beef stew recipe (the other grandmother than the coleslaw recipe), and one of the only recipes I know of that overcooking really doesn't hurt! Great with biscuits or garlic bread!

- Put everything in (large) slow cooker.
- Mix.
- Cook on low for 8 to 10 hours.
- If desired, frozen veggies can be added later into the cooking time.
- Recipe can also be made in a dutch oven with a cooking time of 5 hours.
