My mom has been making these since I was a kid, and they are the hit of every family get-together, from my brothers and sisters all the way down to the grandchildren; it is even spreading to my in-laws. Enjoy this family-favorite.

2 cups all-purpose flour
½ teaspoon salt
⅔ cup shortening
¼ cup water
2 eggs
1 tablespoon lemon juice
6 apples - peeled, cored, and cut into 1/2-inch thick slices, or more to taste
1 cup white sugar
3 tablespoons all-purpose flour
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk 2 cups flour and salt together in a bowl. Cut shortening into flour mixture using a pastry blender or a fork until crumbly.
  • Whisk water, eggs, and lemon juice together in a separate bowl; stir into flour mixture until dough forms a ball. Split dough into halves; roll each half into about a 9x13-inch rectangle. Press 1 rectangle into the bottom of a 9x13-inch baking dish.
  • Place apple slices in a large bowl; add sugar, 3 tablespoons flour, and cinnamon. Toss apples to coat; spread over crust. Cover apple filling with remaining crust, piecing together any scraps to cover any holes. Cut several slits into top crust for ventilation while cooking.
  • Bake in the preheated oven until edges are browned and crisp, 45 minutes to 1 hour. Cool to room temperature before cutting into squares, about 30 minutes.

This is enough for a cookie sheet or jellyroll pan. Use ten cups sliced, peeled apples. Drizzle with a confectioners' glaze if you like.

2 teaspoons salt
4 cups all-purpose flour
1 ⅓ cups shortening
2 egg yolks, beaten
½ cup milk
10 apples - peeled, cored and sliced
2 tablespoons all-purpose flour
3 cups white sugar
1 tablespoon ground cinnamon
1 egg white

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 10x15 inch jellyroll pan or cookie sheet.
  • In a large bowl, stir together the salt and 4 cups flour. Cut in the shortening until the mixture resembles coarse crumbs. Use a fork to stir in the egg yolks and milk just until dough comes together. On a lightly floured surface, roll out half of the dough to 1/8 inch thickness or until big enough to cover the bottom of the jellyroll pan with a little hanging over the sides.
  • Arrange the slices of apple to evenly cover the bottom crust. In a small bowl, stir together the 2 tablespoons of flour with the sugar and cinnamon. Sprinkle the sugar mixture over the apple slices. Roll out the remaining dough to cover the apple layer and pinch to seal to the bottom crust. Trim off excess crust and brush with egg white.
  • Bake for 40 to 45 minutes in the preheated oven, until apples are tender and crust is brown. If the crust begins to brown too much before the apples are done, cover with foil and continue baking. Cool before cutting into squares.

125 g butter (softened but not melted)
2 eggs
1/2 cup milk
1 1/2 teaspoons baking powder
1 cup sugar
1 teaspoon vanilla
1 1/4 cups flour
2 -3 apples (quartered and cut into thin slices)
1 teaspoon cinnamon
1/4 cup brown sugar

Steps:

  • Pre heat oven to 180'C/350'F.
  • Place all ingredients except the apples, cinnamon & brown sugar into bowl of mixer.
  • Beat on low speed until combined.
  • Increase speed to medium and beat for 3 minutes.
  • Spread into a greased sponge roll/slice tin.
  • Press the thin apple slices neatly into mixture.
  • Mix the cinnamon & brown sugar together and sprinkle over the top.
  • Bake for 25-30 minutes.
  • Cut into slices when cool.

30g/1oz Unsalted Butter
1/4 Cup Brown Sugar, Raw Sugar, Demerara Sugar, Coconut Sugar, White Sugar or your sweetness of choice
1-2 teaspoons Ground Cinnamon
2-4 Apples

Steps:

  • Preheat the oven to 180C/350F, get out a small baking dish and grease it well.
  • Place the butter, sugar and cinnamon into a small saucepan on the stove top over medium heat.
  • Cook until the butter has melted and the sugar and cinnamon has dissolved.
  • Set the buttery, cinnamon mixture aside and see to the apples.
  • You can peel or leave the apples unpeeled, slice them and then place the sliced apples into the prepared baking dish.
  • Pour the melted butter and cinnamon mixture over the prepared apples and toss to combine.
  • Place into the preheated oven for 20 to 25 minutes or until golden and done to your like.
  • Serve immediately, as is or topped with cream, ice cream or natural yogurt.

This recipe is from Super Food Ideas and the DH asked me to save to here to give it a try to see if he would like. The recipe called for a 425 gram can of apples but the DH has asked me to make it with Granny Smith apples so will allow for 4 large apples, peeled, cored and sliced. Preparation time does not include cooling time. Serving size will depend upon on how many pieces you with to eat at one serve, would also be a good lunch box treat. I made this yesterday and had some issues with, I used freshly sliced apples which had a total weight of 470 grams but found there was not enough mix of the dough and had to make a half portion so I would have enough to adequately cover the top of the slice, I have changed the recipe to reflect this and even after doing that it was difficult to spread it over the fresh apples but the DH was pleased with the result so have changed the recipe to reflect how I made it, though he decided to cut it into 10 pieces, instead of the 20 recommended by Super Food Ideas.

3 granny smith apples (sliced total weight 470g)
2 teaspoons caster sugar (extra)
1/2 teaspoon ground cinnamon (extra)
275 g butter (softened)
3/8 cup caster sugar
3 eggs
1 1/2 cups plain flour (all purpose)
1 teaspoon ground cinnamon
1 teaspoon mixed spice
double cream (to serve optional)

Steps:

  • Preheat oven to 180C/160C fan forced.
  • Grease an 18cm x 28cm slice pan.
  • Peel, core and slice apples.
  • Mix together extra sugar and cinnamon and toss through the sliced apples.
  • Using an electric mixer, beat butter and sugar together for 5 minutes or until light and fluffy and then add eggs, 1 at time, beating well after each addition and then stir in flour, cinnamon and mixed spice.
  • Press half the dough over the base of prepared pan and then top evenly with the apples.
  • Spoon remaining dough over apple layer, then carefully spread with the back of a spoon or with fingers to cover evenly.
  • Bake for 40 to 45 minutes or until golden and firm.
  • Cool in pan, cut into squares and serve with double cream if desired.
