Number Of Ingredients 19

for cooking the lentils
2 cups green or black lentils
1/2 red onion, peeled, hairy end left on
1/2 carrot
1 celery rib
2 cloves garlic
2 bay leaves
1 thyme bundle, tied with butcher's twine
Kosher salt
for finishing the lentils
Extra virgin olive oil
4 slices of bacon, cut into lardons
1/2 red onion, finely diced
Kosher salt
1 clove garlic, smashed and finely chopped
1 carrot, finely diced
1 celery rib, finely diced
1/2 cup reserved lentil cooking liquid
1 bunch of fresh chives, finely chopped

Steps:

  • TO COOK THE LENTILS
  • In a large saucepan, combine the lentils, onion, carrot, celery, garlic, bay leaves, and thyme bundle. Add water to cover everything by about 2 inches. Bring the water to a boil (BTB) and reduce to a simmer (RTS); cook for 20 to 30 minutes, or until the lentils are soft.
  • Remove the pot from the heat and season the water with salt. TASTE it to make sure it is well seasoned. Let the lentils sit in the salty water for 10 to 15 minutes.
  • Ladle out 1/2 cup of the lentil cooking water and reserve. Strain the lentils. Remove all the veggies and aromatics and discard.
  • TO FINISH THE LENTILS
  • Coat the bottom of a large sauté pan lightly with olive oil, add the bacon, and bring to medium heat.
  • When the bacon has rendered a lot of fat and become brown and crispy, 5 to 6 minutes, add the diced onion. Season with salt and cook until soft and aromatic, 8 to 10 minutes.
  • Add the garlic and cook for 2 to 3 minutes more, stirring frequently.
  • Add the carrot and celery and continue to cook until soft and aromatic, another 2 to 3 minutes.
  • Add the cooked lentils and the reserved lentil cooking water. Cook until most of the liquid has reduced. Taste for seasoning and add salt if needed. Toss in the chives and serve hot or at room temperature.

This is one of my favorite spicy-stick-to-your-ribs-cold winter day- kinda meal. A kick start to fighting winter blahs as well as germs (what with all the garlic ginger and spices)

1 1/3 cups brown lentils
2 2/3 cups water
1 1/2 celery, chopped
1 small sized carrot, chopped
1/4 cup red cabbage, shredded
1 teaspoon red curry paste
4 garlic cloves, minced
1/2 tablespoon garlic, minced
1/4 teaspoon curry powder
1/4 teaspoon cumin
1/4 teaspoon turmeric
1/4 teaspoon cayenne
1/8 teaspoon coriander

Steps:

  • Put lentils and water into a small pot and bring to a boil. Allow to boil about 5 minutes.
  • Turn heat down to a medium heat, add everything else (spices, garlic, ginger, paste) excpet the veggies.
  • Allow to simmer for about 10 minutes.
  • Add the veggies, and cook mixture for about 10 minutes more, or until lentils are done to your liking.
  • This is a great left-overs dish and makes the house smell simply devine. Enjoy!
