1 can (14-3/4 ounces) cream-style corn
1 cup half-and-half cream
2 cans (4 ounces each) mushroom stems and pieces, drained
2 tablespoons butter
1/4 teaspoon Worcestershire sauce
1/8 teaspoon pepper

Steps:

  • In a large saucepan, combine all ingredients. Cook, uncovered, over medium-low heat until heated through (do not boil), stirring occasionally.

Number Of Ingredients 12

2 tablespoons unsalted butter
2 ribs celery, cut in small dice
2 medium leeks, white and green parts, cut in small dice
1/2 cup dry white wine
2 russet potatoes, peeled and cut into 1/4-inch dice, reserved in cold water
1/2 cup bottled clam juice or water
40 fresh oysters, shucked and liquor reserved, or 1 pint store-bought oysters in liquor
1 3/4 cups half-and-half, at room temperature
1/2 teaspoon seafood seasoning, such as Old Bay
Kosher salt and freshly cracked black pepper
1/4 cup chopped fresh parsley, for garnish
Oyster crackers, for serving

Steps:

  • Heat a Dutch oven over medium heat. Add the butter, followed by the celery and leeks. Continue cooking, stirring occasionally, until the vegetables have softened but are not browning, 3 to 5 minutes.
  • Add the wine to the vegetables and let reduce by half. Add the potatoes and stir to combine. Add the clam juice, 1 cup water and the reserved oyster liquor. The potatoes will soak up some of the saltiness of the oysters and their liquor, giving them great flavor. Bring to a simmer, cover and continue cooking until the potatoes are tender, 6 to 7 minutes.
  • Remove 1 1/2 cups of the soup, blend until smooth in a blender or food processor and return to the pot. Stir in the half-and-half and seafood seasoning. Season with salt and pepper. Bring to a simmer before adding the oysters. Cook just until the oysters begin to curl, 2 to 3 minutes. Remove from the heat and garnish with parsley. Serve with oyster crackers.

2 c. fresh corn kernels

Steps:

  • Drain oysters, reserving the liquid in a bowl. In clean saucepot, cook bacon over medium heat until lightly browned. With slotted spoon, remove bacon to paper towels. Add onion to drippings in pot; cook, stirring occasionally, until tender, about 5 minutes. Stir in flour and pepper until blended; cook 1 minute. Gradually stir in clam broth until smooth. Add potatoes; heat to boiling. Reduce heat; cover and simmer until potatoes are tender, about 15 minutes. Stir in half-and-half. Stir in oyster liquid and 2 cups fresh corn kernels.
  • Heat just to a simmer over medium heat. Stir in oysters and cook, stirring frequently, until oysters' edges curl and centers are firm, 3 to 4 minutes. Stir in bacon. Taste for seasoning; add salt as needed. Makes 8 cups. Nutritional information is based on one cup.

5 tablespoons butter
6 slices bacon, coarsely chopped
2 medium-size onions, coarsely chopped
1 cup diced celery
1 large green pepper, cored, seeded and coarsely chopped
1 large garlic clove, crushed
3 pints shucked oysters, with their liquor
1/4 teaspoon salt
1/4 teaspoon white pepper
Pinch ground allspice
4 cups corn kernels
1/2 cup chopped parsley
3 tablespoons bourbon or brandy (optional)
4 cups half-and-half
Cayenne pepper

Steps:

  • Melt the butter in a large heavy saucepan over medium heat. Add the bacon, onions, celery, green pepper and garlic. Saute until the vegetables are soft and the bacon is crisp, 10 to 12 minutes. Remove and discard the garlic. With a slotted spoon transfer the bacon and vegetables to the bowl of a food processor.
  • Drain the oysters and reserve the liquor. Add the oysters to the pan and saute just until the edges begin to curl, about 5 minutes. With a slotted spoon, remove the oysters to the food processor. Add the salt, pepper and allspice. Pulse the mixture until the ingredients are coarsely chopped.
  • Return the mixture to the saucepan and stir in the reserved oyster liquor.
  • Bring to a simmer over medium heat, then stir in the corn, all but one tablespoon of the parsley and the bourbon, if desired. Simmer for five minutes.
  • Add the half-and-half, bring to a simmer and serve hot, garnished with a dash of cayenne pepper and the reserved parsley.

My Mother used to make Oyster Chowder every year for Christmas. I admit mine is not as good as hers was (she didn't use a recipe), but for those of you who like Oyster Chowder, this recipe if pretty good.

1/2 cup diced thick sliced bacon
1 large onion, diced fine
1 cup hot water
1 large potato, diced fine
1 teaspoon salt
1/2 teaspoon fresh cracked pepper
1 pint oyster, cleaned and quartered
1 cup half-and-half
cayenne pepper (optional)
additional salt (optional)
pepper (optional)

Steps:

  • Fry bacon until lightly browned in large, heavy pan.
  • Add onions and saute for about 5 minutes on low heat, be sure not to brown.
  • Drain off drippings, but leave salt and onions in pan.
  • Add water, potato, salt and pepper, cover and cook for 8-10 minutes on medium heat.
  • Reduce heat to low and add oysters, cook for about 5 minutes, or until edges of oysters start to curl.
  • Heat half- and-half to scalding point in a double boiler, then stir into oyster mixture.
  • Remove from heat, add additional seasonings if desired.
  • Serve immediately.

8 large potatoes, peeled, and cubed into 1-inch squares
2 (14 3/4 ounce) cans corn, with juice
2 (14 3/4 ounce) cans cream-style corn
6 slices bacon, fried, and crumbled
2 large onions, cut in 1/2, then thinly sliced
2 quarts milk
1 (12 ounce) can evaporated milk
1/2 cup margarine
salt and pepper, to taste

Steps:

  • In a lg. pot, put in potatoes, and onions, and 2 teaspoons salt. Add enough water to cover all. Let come to a boil. Boil about 15 minutes.
  • Drain out water, just leaving enough liquid to cover potatoes.
  • Add corn and juice of corn, creamed corn, bacon, milk, and evaporated milk. Stir.
  • Add stick of margarine, and stir as it melts, to blend inches Heat on med. for 20 minutes.
  • If you want to thicken the chowder, do so now, by adding about 1/2 cups flour into 2 cups COLD water, mixing well to remove lumps, then add about 1/3 at a time into chowder, until you get desired consistency.
  • Add salt and pepper, to taste.
  • Makes a big pot.

1 (12 ounce) container shucked oysters, drained with liquid reserved
1 onion, chopped
1 potato, diced
1 cup coarsely chopped broccoli
1 cup water
½ cup frozen corn
¼ cup butter
¼ cup all-purpose flour
3 cups milk
salt and ground black pepper to taste

Steps:

  • Cook oysters and reserved liquid in a skillet over medium heat until edges curl, 5 to 10 minutes. Remove skillet from heat.
  • Combine onion, potato, broccoli, water, and corn in a saucepan; bring to a boil. Reduce heat and simmer until vegetables are tender, 10 to 15 minutes. Drain vegetables and reserve liquid.
  • Melt butter in a large pan over medium heat. Stir flour into melted butter until smooth, about 1 minute. Slowly pour reserved vegetable water and milk into butter-flour mixture; cook until thickened, about 5 minutes. Add oysters and vegetables to milk mixture and cook over medium-low heat until heated through, about 5 minutes. Season with salt and pepper.
