I got this years ago from the lady in our church who canned it. I've never made it but I've eaten lots of it! It's the best salsa I have ever had. Especially good with lime tortilla chips or on taco salad (recipe #102234).

Number Of Ingredients 9

10 cups roughly chopped tomatoes
5 cups chopped and seeded bell peppers
5 cups chopped onions
2 1/2 cups hot peppers, chopped, seeded
1 1/4 cups cider vinegar
3 garlic cloves, minced
2 tablespoons cilantro, minced
3 teaspoons salt
1 (6 ounce) can tomato paste

Steps:

  • Combine all ingredients except tomato paste in large sauce pot.
  • Simmer until desired thickness.
  • Stir in tomato paste.
  • Ladle hot salsa into hot jars leaving 1/4 inch head-space.
  • Process 15 minutes in a hot water bath.
  • Note: use more hot peppers for a very hot salsa or less for mild.
  • It depends on how hot your peppers are and how hot you like your salsa.
  • I never get close to 2 1/2 cups for our mild salsa.

Easy homemade salsa recipe with a Mediterranean twist! Fresh tomato salsa made with sweet cherry tomatoes, shallots, garlic and loads of fresh herbs. Olives and jalapeno are optional, but highly recommended. Great with pita chips as an appetizer, or use it as a topping on top of grilled steak, Mediterranean grilled chicken and more!

12 oz cherry tomatoes, cut into quarters
1 to 2 shallots, finely chopped
1 garlic clove, minced
1/2 cup chopped fresh parsley
1/2 cup chopped fresh mint
6 to 7 pitted kalamata olives, chopped (optional)
1 jalapeno pepper, finely chopped (optional if you want to add spice)
Kosher salt and pepper
1/2 tsp to 1 tsp sumac
2 to 3 tsp lemon juice
Extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)

Steps:

  • Place quartered cherry tomatoes, chopped shallots, minced garlic, chopped fresh herbs, chopped kalamata olives (if using), and chopped jalapeno (if using) in a mixing bowl.
  • Season with kosher shalt, pepper, and sumac (start with a heaping 1/2 tsp sumac, add more late if needed). Toss gently.
  • Add lemon juice and a generous drizzle of quality extra virgin olive oil (I used Early Harvest EVOO). Toss to combine. Set aside for a few minutes to let the flavors marry.
  • Serve with pita chips or chips of your choice. Enjoy!

6 medium ripe tomatoes, finely chopped
2 bunches green onions, finely chopped
3 medium white onions, finely chopped
2 (4 ounce) cans chopped green chile peppers

2 medium limes, juiced
salt to taste

Steps:

  • Drain jalapeno juice into a large bowl. Finely chop jalapenos and add to the juice. Add tomatoes, green and white onions, chile peppers, and cilantro. Add lime juice over top and mix everything together. Season with salt.

6 plum tomato (blank)s Roma tomatoes
3 peppers serrano peppers
2 peppers jalapeno peppers
¼ white onion
2 tablespoons fresh cilantro leaves, or to taste
salt to taste

Steps:

  • Stem tomatoes and peppers. Transfer to a pot of boiling water. Cook, uncovered, for 15 minutes. Carefully drain water and set aside.
  • Roughly chop onion. Transfer to a blender with boiled vegetables, cilantro, and salt. Blend until smooth or to desired texture.

2 pounds medium tomatillos (about 16), husks removed and halved
2 large sweet onions, coarsely chopped (about 4 cups)
2 serrano peppers, seeded and chopped
6 garlic cloves, peeled and halved
1/4 cup olive oil
1/3 to 1/2 cup water
1/2 cup chopped fresh cilantro
2 tablespoons lime juice
1 teaspoon salt

Steps:

  • Preheat oven to 425°. In a large bowl, toss tomatillos, onions, peppers and garlic with oil. Divide mixture between two 15x10x1-in. baking pans. Roast 35-40 minutes or until lightly browned, stirring occasionally. Cool slightly., Process tomatillo mixture in a food processor until smooth, adding enough water to reach desired consistency. Add remaining ingredients; pulse just until combined. Freeze option: Freeze cooled salsa in freezer containers. To use, thaw completely in refrigerator.
