3 cup(s) zucchini shredded
1 teaspoon(s) salt
1/3 cup(s) bacon chopped
1/4 cup(s) onion thinly sliced
1/4 cup(s) almond flour
1 piece(s) egg
1 teaspoon(s) garlic powder
1/2 teaspoon(s) paprika smoked
salt and pepper to taste

Steps:

In a large colander, sprinkle the shredded zucchini with salt. Toss to coat and set aside to sweat for 20 minutes.
In a large saute pan, cook the bacon over medium heat. Cook for 5 to 7 minutes, until fat, is rendered and the bacon is crispy. Remove the bacon to a paper towel-lined plate. Pour the bacon grease into a heatproof bowl, reserving 1 tablespoon in the pan.
Transfer the zucchini to a clean towel. Top with another clean towel and press firmly to remove as much excess water as possible.
In a large mixing bowl, lightly whisk the egg. Add bacon, onion, almond flour, garlic powder, smoked paprika, and salt and pepper to taste. Mix until incorporated.
Divide the mixture into 6 balls. Flatten each ball into a patty and transfer it to the hot pan. Work in batches if needed, adding the remaining bacon grease before starting the next batch.
Cook the patties for 7 to 8 minutes, flipping halfway through. Cook until golden brown.
Remove the patties to a paper towel-lined dish. Serve warm.

3 cups sliced zucchini
1 cup all-purpose baking mix
½ cup chopped onion
½ teaspoon salt
4 eggs, beaten
½ cup shredded Cheddar cheese
½ cup vegetable oil
1 clove garlic, minced

Steps:

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
In a large bowl, mix zucchini, all-purpose baking mix, onion, salt, eggs, Cheddar cheese, vegetable oil and garlic.
Spread zucchini mixture into the prepared baking dish. Bake in the preheated oven 25 minutes, or until bubbly and lightly browned. Cut into bite-sized pieces to serve.

This is from my neighbour and good friend, Ronnie, who is mother to five great kids. They all love this concoction and so do we. It serves 6-7 unless it is put in front of our former French exchange student, Emma. In that case, it serves one.

Ingredients

12 ounces zucchini, shredded
1 large onion, chopped finely
6 -8 ounces lean bacon, in 1/2-inch dice
1 cup cheddar cheese, grated
1 cup self-raising flour
1/2 cup vegetable oil
5 eggs, slightly beaten with black pepper (see next item)
1/4 teaspoon black pepper

Steps:

Before you start, you need to know that, you can speed up the preparation time if you use a food processor to grate the cheese and zucchini, and chop the onion.
Preheat oven to 350 degrees.
In a large bowl, combine all ingredients -- in the order listed. Mix well after each addition.
Put everything in an 11" x 7" pan. A 9" x 13" pan works, too.
Bake for 40-45 minutes, or until golden brown.
Check the bottom. It sometimes browns faster.
