BASIC VINAIGRETTE DRESSING WITH 8 VARIATIONS
Bottled salad dressing can be convenient but its expensive and often full of salt, sugar, and chemical additives. Making your own is simple and allows you to customize the seasonings to suit whatever meal you are preparing. The amounts given make about 1/4 cup and can be expanded infinitely for larger salads. It can be made several days ahead and kept in the fridge. Sorry about the slightly odd way of putting the ingredients for the creamy dressing variations. The recipe editor is picky about what it will accept.

Steps:
- Shake all ingredients for your chosen variation together in a tightly-lidded container OR whisk together in a small bowl.
- Let stand 10 minutes to rehydrate dried herbs and blend flavors.
- Shake again then dress salad as desired.
- Note -- I recommend the lemon dressing on spinach.
- Note -- I recommend the Bacon Dressing, Mustard Dressing, and Balsamic Vinaigrette on strong greens such as escarole, curly endive, and dandelion greens.
- Note -- The sweeter version of the mustard dressing is great for a vinegar coleslaw if you discover that you have accidentally gotten one of those occasional cabbages that are a touch on the bitter side.
- Note -- feel free to play with other seasonings, more complex blends, flavored oils, and flavored vinegars. Once you've learned the technique you can customize your salad dressing to suit just about any meal.
EASY CREAMY SALAD DRESSING
This is a super-simple salad dressing with cream and white balsamic vinegar. It tastes great with all sorts of leafy greens. I use sunflower oil or any other plain oil. Olive oil has too strong a taste.

1-2-3 CREAMY DRESSING BASE
Obviously not a light recipe. I plan to experiment with low-fat/fat-free ingredients, but for now this is my go-to dressing recipe. I use this as a base and adjust seasonings and amounts for the vinegar and buttermilk based on the purpose of the dressing (salad, dip, spread). It's a extremely versatile and better than anything we've tried from a jar. Try the Spicy Ranch version as a dip for french fries.

- Combine first four ingredients in mixing bowl (I always use a glass bowl with plastic cover so I can mix and store in the same container).
- Season to taste with seasoning salt, pepper and desired additions.
- Some possible variations: Spicy Ranch (onion powder, garlic powder, cayenne pepper to taste), Spicy Dill (add dill to Spicy Ranch mix), Peppercorn (garlic powder, heavy on the fresh ground pepper, Parmesan cheese), add powdered dressing or dip mix of your choice or throw in some blue cheese for wings.

CREAMY DRESSINGS
I offer you here a blueprint dressing you can use for endless variations. The three that follow are classic combos, but I hope you'll be inspired to put your own spin on them. A few more ideas off the top of my head: stir in a spoonful of pesto or a spice blend; swirl in some chili oil or blend with a spoonful of herb sauce. Play around with different combinations and don't feel limited to use them on lettuce alone. Creamy dressings make great dips for crudités or chips, of course, but can work as a sauce for poached shrimp or simple seared fish. A smear can do wonders for a plate of boiled potatoes or (cooked from frozen) French fries.

- For the Base: Whisk together the ingredients. Add one of the combinations below to change it up, then whisk in a little water, a tablespoon at a time, until you've reached your desired consistency. Transfer to a resealable jar or container and refrigerate up to 1 week.
- Ranch: Add 2 scallions, thinly sliced; 1 clove garlic, grated, pressed, or finely chopped; and lots of freshly ground black pepper to the base and whisk to combine.
- Caesar: Add 2 anchovy fillets, finely chopped; 1 clove garlic, grated; and 1/2 cup grated Parmesan to the base and whisk to combine.
