2 pints frozen blueberries
2 tablespoons lemon juice
1 (3 ounce) envelope 100% fruit pectin (Ball brand recommended)
5 1/4 cups sugar

Steps:

  • Thaw and drain blueberries.
  • Crush blueberries one layer at a time.
  • Combine 3 cups crushed blueberries and lemon juice in a large saucepot.
  • Stir in Fruit Jell pectin.
  • Bring mixture to a boil, stirring constantly.
  • Add sugar, stirring to dissolve.
  • Return mixture to a rolling boil.
  • Boil hard 1 minute, stirring constantly.
  • Remove from heat.
  • Skim foam if necessary.
  • Preserve It-.
  • Ladle hot jam into hot "Ball" 8-oz jelly jar to 1/4 inch below rim.
  • Wipe jar rim clean.
  • Place lid on jar and tighten band, just until a point of resistance is met.
  • Process 10 minutes in a boiling-water canner.
  • Cool for 12 to 24 hours.
  • Remove bands.
  • Lids should be concave in middle.
  • Yield: About 6 half pints.

1/4 cup water
3 cups sugar
1 cup clover honey

Steps:

  • In a Dutch oven, bring blueberries and water to a boil; mash and stir for 5 minutes. Add sugar and honey; boil gently, uncovered, over medium heat for 30 minutes, stirring frequently. , To test for doneness: Remove from heat; spoon about 1 tablespoon of hot jam onto a chilled plate and set plate in freezer until the jam has cooled to room temperature, 1-2 minutes. When the cooled jam holds its shape when mounded with a spoon, the jam has reached its desired thickness. If necessary, return to heat and repeat test after additional cooking. , Skim off any foam. Carefully ladle hot mixture into hot half-pint jars, leaving 1/4-in. of headspace. Remove air bubbles; wipe rims and adjust lids. Process for 10 minutes in boiling-water canner.

8 cups (4 pints) blueberries
4 cups sugar
Juice of 1 lemon
Pinch of fine sea salt
1 tablespoon finely chopped candied ginger

Steps:

  • Place a wire rack on a rimmed baking sheet. Place several small plates in the freezer to use later to test the consistency of the jam.
  • In a large, heavy-bottomed saucepan, combine the blueberries, sugar, lemon juice, and salt. Let stand until the berries start rendering their juice, about 15 minutes.
  • Meanwhile, sterilize eight 1/2-pint canning jars and lids in boiling water, following the manufacturer's instructions (or see Boiling-Water Canning, page 279). Remove the jars from the water and place upside down to drain on the prepared rack. Remove the lids from the water and dry with a clean towel. Turn the sterilized jars right side up on the rack, using tongs or a kitchen towel to protect your hands. When they are cool enough to handle, dry them with a clean towel. Set aside.
  • Follow the procedure for Raspberry Jam (page 289), including bringing the blueberry mixture to a boil and cooking until the mixture reaches the jelling point, preparing the canner, filling the jars and boiling them gently for 5 minutes, and checking that the seals on the jars are good. When the jam reaches the jelling point (220°F), add the candied ginger and stir to combine. Store the unopened jars of jam at room temperature for up to 1 year. Once the jam is opened, store in the refrigerator for up to 1 month.

3 1/2 cups sugar

Steps:

  • Preheat oven to 250 degrees. Put a plate in the freezer. With a potato masher or spoon, crush 1 cup berries in a medium heavy-bottom nonreactive saucepan.
  • Add remaining 3 cups berries and 1/2 cup water; bring to a simmer over medium heat. Cook, stirring occasionally with a wooden spoon to break up berries, until berries are soft, about 6 minutes.
  • Meanwhile, spread sugar out on a rimmed baking sheet. Heat in oven until warm, about 5 minutes.
  • Slowly stir sugar into saucepan; return mixture to a simmer, stirring constantly. Reduce heat to medium-low; cook at a slow boil until thickened, 45 minutes to 1 hour. To test for doneness, drop a small amount of jam onto the chilled plate; it should wrinkle when pressed with your finger.

Blueberry jam was the first thing I ever canned, and it remains a beloved preserve. This version includes some fresh thyme, a twist that works just as well on a cheese board as on a PB&J.

3 pounds fresh blueberries, crushed
1 lemon, zested and juiced
4 cups white sugar
3 tablespoons fruit pectin (such as Sure-Jell®)
1 teaspoon fresh thyme leaves

Steps:

  • Submerge 6 empty half-pint jars on a rack in a large pot of water. Cover and bring to a rolling boil, then reduce heat to low to keep jars warm until ready to fill.
  • Tumble blueberries and lemon zest and juice into a wide, nonreactive 8-quart pot. Whisk together sugar and pectin in a small bowl, then stir into pot until combined.
  • Bring to a vigorous boil over high heat. Reduce heat to medium-high; cook, stirring frequently and adjusting heat as needed to maintain a gentle boil, until volume has reduced by at least 1/3, 20 to 25 minutes. Stir in thyme after 18 minutes of cooking. Remove pot from heat and check for set.
  • Working with one jar at a time, remove empty jars from canning pot. Using a wide-mouth funnel, carefully ladle jam into jars, leaving 1/2 inch for headspace. Use a clean wooden chopstick to work air bubbles out of jars. Check headspace again and add more jam if necessary to bring to 1/2 inch from the top.
  • Wipe jar rims, apply lids and bands (not too tightly), and return jars to canning pot; cover pot and return water to a rolling boil. Process for 10 minutes. Turn off heat, remove pot lid, and let jars stand in the cooling water 5 minutes to help ensure a good vacuum seal.
  • Move jars to a folded kitchen towel or wooden cutting board to cool completely before checking seals. Any unsealed jars should be refrigerated and eaten promptly. Store sealed jars in a cool, dark place. They are shelf-stable at least 1 year.

3 (1/3 ounce) envelopes unflavored gelatin
1 1/2 cups cold water
2 pints blueberries, mashed
3/4 cup sugar
2 tablespoons lemon juice
1 teaspoon butter or 1 teaspoon margarine
1/2 teaspoon ground cinnamon (to taste)
1/2 teaspoon vanilla extract

Steps:

  • In a large saucepan, combine the gelatin and water, and let stand for 1 minute.
  • Cook the gelatin/water over low heat about 5 minutes, stirring until dissolved.
  • Stir in the blueberries, sugar, lemon juice, butter and cinnamon.
  • Bring to a boil, over medium-high heat.
  • Boil for 10 minutes, stirring constantly.
  • Remove from the heat and stir in the vanilla.
  • Spoon into sterilized jars.

  • BoM. 1 pint of blueberries, local if possible. 2-3 tbs sugar. 1-2 tbs fresh squeezed lemon juice. Canning jars with lids.
  • Prep. Weight the amount of fruit you have and make a note. Prep the blueberries by washing them, removing any stems or old berries. Also, make sure to prep and sterilize whatever canning jars and lids you are using.
  • Sugar & Lemon. Add the sugar and lemon juice to the pot and give the berries a quick smash with a potato masher. You don't have to crush all of the berries, maybe just half or so.
  • Cook. Cook the mixture over medium heat for 15-20 minutes or until the jam starts to reduce and thicken. The jam will start to become a gel like consistency.
