I begged this recipe from my co-worker when he 'accidentally' mentioned he had a great soda bread recipe. It was perfect timing, because St. Patrick's Day was only days away!

4 cups bread flour, plus more for dusting
1 ½ teaspoons salt
1 tablespoon baking powder
6 tablespoons butter, softened
1 ¼ cups buttermilk
2 tablespoons confectioners' sugar
¾ cup finely chopped onion
¾ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, whisk together bread flour, salt, and baking powder until thoroughly combined. Beat in the butter, buttermilk, and confectioners' sugar to make a dough; gently mix in the onion and Cheddar cheese. Divide dough in half, and shape each half into a ball. Place the loaves onto the prepared baking sheet, and gently flatten to about 2 inches thick. Dust each loaf with flour.
  • Bake on a preheated oven until browned, about 30 minutes. Cool on racks for a few minutes; serve warm.

  • Step 1:Heat the oil in a pan, then fry the onion until soft and golden brown then set aside.Step 2:Preheat oven to 190°C (170°C fan, gas mark 5).Step 3:Mix together the flour, cream of tartar, salt, bicarbonate of soda and sugar in a large bowl and make a well in the centre.Step 4:Whisk together the milk and yoghurt, then pour most of it into the well.Step 5:Add the onion, sage and cheese and mix with a wooden spoon to give a soft but not wet dough, adding the remaining milk and yoghurt mixture, plus a little extra milk if necessary, if the dough is too stiff.Step 6:Turn the dough out on to a lightly-floured surface and flatten into a round about 4cm (1½ inch) thick.Step 7:Place on a greased baking sheet and cut a cross in the top using a floured knife.Step 8:Bake in preheated oven for 45 minutes.Step 9:Slide the loaf off the baking sheet and wrap in a clean tea towel to keep it soft.

1 cup shredded old cheddar cheese
2 tablespoons sugar
1 teaspoon baking soda

1 1/2 cups buttermilk
1/4 cup vegetable oil
1 pinch cayenne pepper
1 tablespoon all-purpose flour (for topping)

Steps:

  • Preheat oven to 375°F (190°C).
  • In large bowl, whisk together all-purpose flour, whole wheat flour, cheese, onions, sugar, baking soda, salt and cayenne.
  • In small bowl, whisk together buttermilk and oil. Add to dry ingredients all at once; stir with fork until soft dough forms.
  • Turn out dough onto lightly floured surface. With floured hands, press dough into ball; knead lightly 10 times. Place on greased baking sheet; gently pat out dough into 6-in (15 cm) circle.

3/4 teaspoon baking soda
3/4 teaspoon kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon freshly ground black pepper
1 cup freshly grated sharp Cheddar
3 tablespoons chopped fresh chives
1 cup buttermilk
1 large egg

Steps:

  • Preheat the oven to 400 degrees F and line a rimmed baking sheet with parchment paper.
  • Add the flour, baking powder, baking soda, salt, garlic powder, onion powder and pepper to a large bowl. Whisk to break up any lumps of flour. Add the Cheddar and chives. Stir to evenly combine the ingredients. Set aside.
  • Add the buttermilk and egg to a 2-cup measuring cup. Use a fork to scramble the egg into the buttermilk.
  • Add the buttermilk mixture to the bowl with the flour mixture and use a rubber spatula to mix the ingredients until a shaggy dough forms. Turn the dough out onto a lightly floured work surface. Lightly flour your hands and knead the dough until it comes together, about 1 minute. Flip the dough so that it is seam-side down and transfer it to the prepared baking sheet. 1 large minced onion
8 cloves minced garlic
¼ cup butter
2 cups shredded mozzarella cheese
½ cup grated Parmesan cheese
1 cup mayonnaise

Steps:

  • Preheat the broiler.
  • Slice the French baguettes diagonally into 3/4 inch slices.
  • In a medium skillet over medium heat, melt the butter. Combine the onions and garlic in the skillet. Cook and stir until tender. Set aside to cool.
  • In a mixing bowl, combine the mozzarella cheese, Parmesan cheese and mayonnaise.
  • On a cookie sheet, arrange the French bread slices in a single layer. Spread the onion and garlic mixture on the bread slices. 3 cups flour, more if needed
1 tablespoon active dry yeast
1 teaspoon salt
2 tablespoons sugar
1 cup milk, warmed
1 egg, beaten
1 cup sharp cheddar cheese, grated
1/2 cup onion, chopped

Steps:

  • Put 1 cup of the flour in your mixing bowl. Stir in the yeast, salt and sugar. Pour in the warm milk and mix well for three or four minutes on medium. Let stand for about 10 minutes until bubbly.
  • Add the egg, then the onion and cheese, then the rest of the flour until the dough holds together and is only a bit sticky. Cover with a damp towel and let it rise for an hour.
  • Shape your savory dough into a loaf or two small loaves and put into a loaf pan or on to a baking tray. Let it rise until double, about 45 minutes.
  • Bake at 350 for 25 to 35 minutes until the crust is golden and the bottom sounds hollow when you tap on it.

300g plain flour
25g caster sugar
3 tsp baking powder
1 tsp salt
115g cheddar cheese, finely chopped
1 small onion, finely chopped
1 egg, beaten
125ml milk
3 tbsp sunflower oil

Steps:

  • Preheat a fan oven to 200 degrees celsius. Line a baking tray with tin foil and lightly sprinkle with flour.
  • Mix the flour, sugar, baking powder, salt, cheese, and onion in a large bowl.
  • In a separate bowl, mix the egg, milk and sunflower oil.
  • In small quantities, gradually add the wet mixture to the dry until a sticky dough is formed. Careful - you may not need to use all of the wet mixture!
  • On a floured surface, roughly shape the dough into a flattened ball and place on the prepared baking tray. Place in the preheated oven and bake for 35-40 minutes, or until cooked. The crust should be golden brown and starting to darken. A knife should come out clean when placed into the bread.
  • Enjoy warm, straight out of the oven or when cooled.

120g rolled oats, plus extra for the topping
250g plain flour, plus extra for dusting
1 tsp bicarbonate of soda
150g mature cheddar, grated
4 spring onions, chopped
350ml buttermilk, plus a little extra (optional)
½ tsp Dijon mustard

Steps:

  • Heat the oven to 200C/180C fan/gas 6 and line a baking tray with baking parchment. Blitz the oats in a food processor until fine, then tip into a large bowl along with the flour, bicarbonate of soda, ½ tsp salt and 1 tsp freshly ground black pepper. Quickly mix together to combine. Mix in 130g of the cheese and all of the spring onions.
  • Mix the buttermilk and mustard together in a jug, then pour this into the dry ingredients and use a cutlery knife to quickly mix into a soft, shaggy dough. If the dough still looks dry, add another 1-2 tbsp buttermilk. Turn the dough out on a floured surface and knead briefly to just bring it together into a ball.
  • Transfer the dough to the prepared tray and flatten it slightly into a thick disc using your palm. Use a sharp knife to cut a very deep cross into the top, then scatter with the remaining cheese and a small handful of oats. Bake for 35-45 mins until deeply browned and the loaf sounds hollow when tapped on the bottom. Leave to cool on a wire rack before slicing and serving.
