NO-BAKE BROWNIE BITES



No-Bake Brownie Bites image

Unbelievably fudgy, nutty, vegan brownie bites with no baking required. Just 7 whole food ingredients and 10 minutes stand between you and these deceptively decadent treats.

1 ¼ cup medjool dates ((~14 dates, measured after pitting // if dry, soak in warm water for 15 minutes, then drain and pat dry))
1/4 cup organic cacao or cocoa powder, plus more for rolling ((or sub carob for chocolate-free / caffeine-free))
3 Tbsp hemp seeds
1/4 cup roughly chopped raw walnuts
1 ½ Tbsp almond butter ((creamy salted // or sub other nut or seed butter of choice))
1 pinch sea salt ((use more or less depending on saltiness of nut butter))
1/4 tsp vanilla extract

Steps:

  • To a food processor add pitted dates, cocoa or cacao powder, hemp seeds, walnuts, almond butter (or other nut/seed butter), salt, and vanilla.Note: If you don't have a food processor, you can try using a blender, but dates can be notoriously tough for blenders due to their sticky nature, so use a low speed if possible and pulse instead of blending.
  • Pulse until the mixture is well blended and starts to clump together (~30 seconds - 1 minute). If it's too dry or crumbly and it doesn't stick together when pressed between two fingers, add more nut butter or pitted dates (just ensure your dates are sticky and fresh, or it will only further dry out the mixture.)
  • Scoop out 1 ½ Tbsp amounts (we love this scoop) and gently roll into balls. As the original recipe is written, ~14 balls.
  • Enjoy immediately as is, or roll in extra cocoa, cacao, or carob powder for an extra chocolaty exterior. Store leftovers covered in the refrigerator up to 2 weeks, or in the freezer up to 1 month (often longer). Let come close to room temperature before enjoying for best texture (in our opinion).

MMMMM...Vegan Brownies!!!! These are very gooey, which is a good thing in my book. However, if you want your brownies a little more solid you'll need to cook them longer than the recommended time. Great for people with egg or dairy allergies too!

2 cups unbleached all-purpose flour
2 cups white sugar
¾ cup unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon salt
1 cup water
1 cup vegetable oil
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a large bowl, stir together the flour, sugar, cocoa powder, baking powder and salt. Pour in water, vegetable oil and vanilla; mix until well blended. Spread evenly in a 9x13 inch baking pan.
  • Bake for 25 to 30 minutes in the preheated oven, until the top is no longer shiny. Let cool for at least 10 minutes before cutting into squares.

10-Minute Vegan Brownies image

This brownie recipe is super quick and simple, and can be made from ingredients most people have right in their pantries. Perfect for a last minute chocolately brownie craving! I found this recipe in The Students' Go-Vegan Cookbook. The original recipe called for 1/2 cup unsweetened applesauce, which I did not have at the time. Instead, I used 1/2 cup silken tofu, and it worked out great. To keep these brownies vegan, please check the ingredients list of your semi-sweet dark chocolate chips, as many brands do contain dairy, even though they are not actually "milk" chocolate.

1/4 cup canola oil
1 cup semi-sweet chocolate chips (vegan)
1/2 cup unsweetened applesauce, or
1/2 cup silken tofu
3/4 cup sugar
1 teaspoon pure vanilla extract
1 cup unbleached all-purpose flour
1 cup baking powder

Steps:

  • Preheat the oven to 350 degrees.
  • Lightly oil a 6x9 baking pan and set aside.
  • Combine oil and chocolate chips in a sauce pan over low heat and gently stir until melted.
  • I did this step in the microwave, heating the chocolate and oil in two 30 second increments, and then another 10 seconds, stirring in between each time until melted.
  • In a separate bowl combine the apple sauce OR silken tofu, sugar and vanilla. Whip this with a whisk or use a stand mixer to get the wet ingredients really combined well.
  • Add the melted chocolate to the apple sauce (or tofu) mixture.
  • Next add the flour and baking soda to the chocolate, and stir gently to combine. Don't over mix. Over mixing can make the brownies really dense and heavy.
  • Pour the batter into the pan, smooth the top, and bake for 25 to 30 minutes (Mine were perfect at 25).
  • Do not slice the brownies until they have cooled.

8 oz vegan chocolate
2 tablespoons ground flaxseed
6 tablespoons water
1 cup sugar, plus 2 tablespoons
½ cup vegan butter, melted
2 teaspoons vanilla extract
¾ cup all-purpose flour, plus 2 tablespoons
¼ cup cocoa powder
1 teaspoon baking powder
1 teaspoon salt

Steps:

  • Preheat the oven to 350°F (180°C). Line an 8-inch (20 cm) square baking dish with parchment paper.
  • Chop the chocolate into ½-inch (1 ¼ cm) pieces. Set aside half and melt the other half in a microwave-safe bowl for 45 seconds.
  • Make the flax egg: combine the ground flaxseeds with the water in a small bowl and mix with a fork. Set aside for at least 10 minutes to gel.
  • In a medium bowl, add the sugar and vegan butter and whisk until smooth. Then add the vanilla, flax eggs, and melted chocolate and whisk until well-combined.
  • Sift in the flour, cocoa powder, baking powder, and salt and fold with a spatula until all ingredients are combined. Be careful not to overmix. Then, stir in the reserved chocolate pieces.
  • Pour the batter into the baking dish and smooth the top with a spatula.
  • Bake for 30-35 minutes, until a fork inserted in the center comes out clean. Let cool for at least 20 minutes.
  • Slice into 9 equal-sized pieces and serve.
