1 medium nectarine, pitted and chopped
1 tablespoon olive oil
1 tablespoon orange juice
salt and ground black pepper to taste

This is a thick and chunky salsa. Don't let the amount of peppers turn you off. This is a *mild* salsa. If you want more heat, just add some of the pepper seeds. I like my salsa chunky, but if you don't, you only need to dice the vegetables finely. Canned tomatoes makes this a quick recipe you'll want to make over and over. UPDATE Aug 18/08: I'm pleased to add that this salsa took first place in the local fair.

6 jalapeno peppers, minced, seeds and membrane removed
2 cups sweet onions, chopped, I use Videlias
1 cup green pepper, chopped
1 cup yellow pepper, chopped
4 garlic cloves, minced
1/2 cup fresh parsley, chopped
3 (19 ounce) cans diced tomatoes, I use Aylmers Spicy Red Pepper Variety
1 (5 1/2 ounce) can tomato paste, with herbs and spices
3/4 cup cider vinegar
1 teaspoon salt

Steps:

  • Combine all ingredients in a large pot.
  • Bring to a boil.
  • Boil gently for 50 - 60 minutes, stirring occasionally.
  • Fill sterilized jars and seal.
  • Water bath for 20 minutes.

24 pounds tomatoes
1 (12 ounce) can tomato paste
½ bunch cilantro
16 jalapeno chile peppers
2 medium heads garlic
6 large green bell peppers, chopped
6 large onions, chopped
9 tablespoons salt
1 cup distilled white vinegar
½ cup brown sugar
¾ cup cornstarch
½ cup water

Steps:

  • Core and peel the tomatoes. Remove the tomato seeds and pulp. Put seeds and pulp through a food mill. Chop the outsides of the tomatoes
  • In a large pot over low heat, boil the milled liquid and tomato paste for 1 hour, or until the liquid is reduced by 1/3.
  • In a blender or food processor, puree cilantro, jalapeno, garlic and 1/2 cup of the tomato liquid from the large pot. Slowly stir this mixture into the pot.
  • Bring the contents of the pot to a boil while mixing in the green peppers, onions, chopped tomatoes, salt, vinegar and brown sugar. In a small bowl, dissolve the cornstarch in water. Add the cornstarch mixture to the pot. Stirring continually, boil the mixture until all the vegetable are soft -- about 30 minutes. Allow the mixture to cool, and place it in sterile containers.

6 cups shredded zucchini
4 cups shredded red peppers
4 cups shredded onions
1/4 cup chopped fresh basil
1/4 cup chopped fresh cilantro
1 cup lime, juice and zest of
1/2 cup vinegar, 5 percent acidity (If PH is not 4.6 or lower I would just add to be safe)
2 ghost bell peppers (YES 2 only if you want it really HOT)
1 jalapeno, minced
2 chipotle chiles in adobo, minced
6 garlic cloves, minced
8 -10 cups diced tomatoes
6 ounces tomato paste
1/3 cup sugar

Steps:

  • Place all in a large pot bringing to a boil then reduce and simmer for 20 minutes.
  • Fill into hot sterile jars leaving 1/2 inch head space.
  • Being careful not to leave any salsa on the rims.
  • Wipe jar rims with a clean, damp paper towel. Put on lids and screw on metal bands.
  • Process for 10 minutes in a hot water bath.
  • Label and store in a dark place. Use with 1 year.
