ROQUEFORT CHEESE CHIPS



Roquefort Cheese Chips image

1 (5-ounce) bag lightly salted kettle potato chips
1/2 (5-ounce) can white sauce (recommended: Aunt Penny's)
1/4 cup cream cheese
1 tablespoon half-and-half
2 tablespoons crumbled Roquefort cheese

Steps:

  • Preheat oven to 400 degrees F.
  • Place kettle chips on baking sheet. Bake for 5 minutes.
  • In small saucepan, over medium heat, combine all remaining ingredients, except blue cheese crumbles. Cook until cheese melts, stirring constantly. Remove from heat.
  • Drizzle cheese sauce over hot chips. Sprinkle blue cheese crumbles over the top.

Number Of Ingredients 3

4 whole potatoes (generally one per person)
grated cheddar cheese
seasoning salt

Steps:

  • Heat the oil to 375 degrees Fahrenheit.
  • Wash all the potatoes with fresh water and cut them width-ways with a sharp knife so that you have several thin chips.
  • When all the chips are cut, deep-fry them for 2-4 minutes until crispy.
  • Gently sprinkle some seasoned salt over the chips.
  • Put the fried chips on a plate and cover with as much grated cheese as you like; I use enough to completely cover the center of the plate and spread it out from there.
  • Set the oven to 'Broil' and set the plate close to the flames.
  • When all the cheese is melted, remove the plate and set it on top of a clean plate (this way you don't burn your hands carrying the chips because the plate will be extremely hot).
  • Enjoy

  • Preheat oven to 375 degrees. Combine butter and spices in a small bowl. Brush tortillas with butter mixture; sprinkle with cheese and salt. Cut into shapes with a knife or cookie cutter.   • Spoon cheese mixture into a greased mini muffin tin. Press mixture into mini muffin tin.
  • Bake for 5-8 minutes or until cheese is melted and edges are slightly brown.
