SLOPPY JOES
This simple version of sloppy Joes, the classic sandwich served in school cafeterias and at kitchen counters across the country, comes together in about 20 minutes and can be made with ground beef, chicken or turkey. As the name suggests, they are messy, so serve with a fork and plenty of napkins.

Steps:
- In a saucepan over low heat combine the sauce ingredients. Season to taste with salt and pepper. Mix well, and simmer while preparing the meat.
- Heat a heavy nonstick or cast-iron skillet, at least 10 inches in diameter, over medium-high heat. Add the ground sirloin, and saute, stirring occasionally, for 4 to 5 minutes, or until the meat is no longer pink. Turn the meat into a strainer or colander lined with paper towels, allowing the fat to drain off.
- Add the onion to the pan, and sauté, stirring frequently, for about 5 minutes, or until the onion is translucent. Return the meat to the pan, and add the sauce. Heat for 3 minutes, stirring occasionally. Taste and season with salt, pepper or more hot sauce, if desired. Spoon 1/2 cup of the mixture over each bun. Serve immediately.

I used this recipe a great deal because it was so easy and good. It originally came from my grandma's 1950s recipe collection.

Steps:
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 7 to 10 minutes; drain and discard grease. Return skillet and beef to stove and reduce heat to medium-low.
- Stir chili sauce, mustard, brown sugar, and vinegar into the ground beef; simmer until the sauce thickens, 5 to 10 minutes.

Steps:
- Mix together uncooked beef, tomatoes with juice and remaining ingredients (except salt and pepper) in a large stockpot.
- Mash with a potato masher until texture is very smooth.
- Place over med-low heat.
- Simmer for about 2-3 hours, until beef is cooked through. **Mine was done in under two hours. May need to add water if cooking entire time, check and stir every 30 minutes. Adjust seasoning to taste with salt and pepper.
- To serve--steamed hot dog on bun, slathered w/ Michigan sauce.

- Heat olive oil in a 12-inch non-stick skillet over medium-high heat. Add onion and bell pepper, saute until nearly tender, about 6 minutes. Scoot to one far side of the pan.
- Crumble in beef, let sear until browned on bottom, about 2 - 3 minutes. Then turn and start to break up beef and toss with peppers and onions, continue to cook 2 - 3 minutes or until nearly cooked through.
- Drain fat from beef. Add garlic, chili powder, paprika, mustard and season with salt and pepper to taste and cook beef through, about 1 minute, tossing occasionally.
- Stir in tomato sauce, ketchup, Worcestershire, smoke flavor. Reduce heat and simmer until heated through, about 2 minutes (thin with a few tablespoons water or broth as needed).
