5 INGREDIENT GRAIN-FREE PANCAKES
A 5 ingredient grain-free pancake recipe with a crazy amount of protein and fiber and 0 sugars or sweeteners.

Steps:
- Place a small non-stick frying pan on the stove and set stove top to medium-high heat.
- Add flour, cinnamon and baking powder to a medium-sized bowl and whisk with a fork to break up the clumps.
- Add water, eggs and vanilla. Whisk to combine. Allow to sit for 2 minutes.
- Drop ¼ cup of the batter (if using crepe-like water measurement) or ⅓ cup of the batter (if using thicker pancake water measurement) into the preheated pan. Allow to cook until bubbles form, about 2 minutes.
- Reduce heat to medium, flip, and cook for 5 minutes. Remove pancake from the pan and return the pan back to the burner. Crank heat back up to medium-high, wait 30 seconds, then add another round of batter.
- Repeat until all pancakes are complete.
- Makes 5-6 pancakes

- We’ve found that while these pancakes cook well on the stove-top, it can be helpful to keep them warm in the oven where they will continue to bake and firm up while the remaining pancakes cook. - To a large mixing bowl, add bananas and mash until only small bits remain. Then add baking powder and vanilla extract and use a fork or whisk to mash until thoroughly combined.
- Lastly, add coconut flour 1 Tbsp (9 g) at a time until a thick but scoopable batter is achieved (thicker than your average pancake batter, but not so thick that it appears dry). If you add too much coconut flour, add a little dairy-free milk to thin.

- Add milk, melted butter, apple cider vinegar and eggs to dry mix and combine thoroughly. Let the batter sit for one minute, it will thicken slightly on it’s own. Mix again.
- Lightly grease griddle or frying pan then pour about 1/4 of a cup of batter into the pan. Cook on medium heat. When little bubbles form on the surface, the pancake is ready to be flipped. Stack cakes and serve with butter and maple syrup. Enjoy!!
