Steps:
- Pre-heat the oven to 180°C (350°F)
- Season the chicken with the salt, pepper and mixed herbs. Set aside.
- Heat some oil in a large pan and sear the chicken for about 10-15 minutes evenly on each side, until golden brown.
- Take the chicken out and set aside.
- Add the shallots and cook down in the remaining juices for about 5 minutes over a low-medium heat.
- Add the garlic cloves and gently cook them for about 2 minutes.
- Pour in the vermouth or white wine and gently cook so that it reduces slightly.
- Add the chicken, parsley sprigs and tarragon, followed by the chicken stock.
- Bake in the oven for 20-25 minutes or until the chicken is cooked through.
- Serve with crusty bread and vegetables of your choice.

- Preheat an oven to 350 degrees F (175 degrees C).
- Melt the butter with the olive oil in a large Dutch oven over medium-high heat. Add the chicken to the Dutch oven and brown on all sides in the butter and oil, 5 to 10 minutes. Remove the chicken to a cutting board.
- Drain all but 2 tablespoons of liquid from the pan; stir the garlic cloves into the reserved liquid. Return the chicken to the pan; sprinkle the water, lemon juice, salt, thyme, and black pepper over the chicken; cover tightly.
- Bake the chicken in the preheated oven until no longer pink at the bone and the juices run clear, about 90 minutes. An instant-read thermometer inserted into the thickest part of the thigh should read 180 degrees F (82 degrees C). Remove the chicken from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area for 10 minutes before slicing.

SIXTY-CLOVE GARLIC CHICKEN
This roast chicken is surrounded by softened -- and mellowed -- garlic cloves.

- Preheat oven to 425 degrees. Let chicken stand at room temperature 30 minutes. Remove giblets and excess fat from cavity. Rinse chicken; pat dry. Brush outside with butter, and season with salt and pepper. Place garlic bulb in cavity. Transfer chicken to a roasting pan. Tuck wing tips under; tie legs with kitchen twine.
- Roast chicken, basting occasionally with pan juices, 20 minutes. Remove from oven, and arrange garlic cloves around chicken. Continue roasting until skin is deep golden brown and an instant-read thermometer inserted into thickest part of the thigh (avoiding bone) registers 165 degrees, about 1 hour.
- Transfer chicken and garlic cloves to a platter. Let tand 15 minutes, then remove garlic bulb from cavity, and discard. Carve chicken, and serve.
CHICKEN WITH 40 CLOVES OF GARLIC
In the two decades after World War II, Jane Stern and Michael Stern told Marian Burros of The Times in 1991, "a nation once known for square meals and the bluenose abstinence of Prohibition fell in love with deluxe food, vintage wine and the joy of cooking." They captured that gourmania in their book of that year, "American Gourmet," and this recipe, for a luxe and amazing casserole of nutmeg-scented chicken and garlic, comes from it. Serve the dish with a baguette or two, and squeeze the buds of garlic out on the bread. Spread the mash like butter and use the bread to mop up the luscious sauce.

- Put the oil in a shallow dish and add the chicken pieces; coat evenly with oil.
- Preheat oven to 375 degrees.
- In a heavy 6-quart casserole, combine the celery, onions, parsley and tarragon. Lay the oiled chicken pieces on top. Pour on the vermouth. Sprinkle with salt and pepper and a dash of nutmeg. - Pour olive oil into blender and add red wine vinegar, garlic, thyme, rosemary, oregano, and red pepper flakes. Blend until garlic marinade is smooth and creamy.
- Cut several deep slashes into the meat of each chicken piece using a sharp knife. Place chicken into a large bowl, pour marinade over chicken, and stir to get marinade into the cuts and all over the chicken. Cover bowl with plastic wrap and refrigerate overnight.
- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil. Lightly grease the foil with 1 teaspoon olive oil.
- Arrange chicken pieces onto the prepared baking sheet and season both sides of chicken with salt and black pepper.
- Bake in the preheated oven until an instant-read meat thermometer inserted into the thickest piece of chicken reads 160 degrees F (70 degrees C), 40 to 45 minutes. Top with chopped Italian parsley.

40 CLOVE GARLIC CHICKEN
This chicken dish has a wonderful aroma of garlic and lemon and is so very tender! The garlic is delightfully edible and a great treat with this marvellous dish. It can be served with the garlic cloves made into a creamy garlic sauce too! This is a pleasure to eat and many side dishes can be served with it... especially potato and vegetables.

- Preheat the oven to 160 degrees celcius.
- Separate the garlic into cloves, but do not peel them.
- Remove excess fat from chicken cavity and neck and discard.
- Cut the lemon in half and squeeze the juice from one half. Rub the chicken all over with the lemon juice and place 1/2 the lemon into the cavity of the chicken.
- Season the chicken inside and out and put a sprig of tarragon in the cavity.
- Heat the butter and oil in a large flameproof casserole dish and brown the chicken on all sides over a moderate heat.
- Pour the brandy and ignite. When the flames die down, tuck the garlic cloves around and under the chicken and pour over the wine.
- Cover the casserole and cook in the oven for about 80-90 minutes.
- You can serve the chicken as is with the clear juices and garlic cloves, or make a wonderful creamy garlic sauce.
- This is made by pushing the cooked garlic through a sieve over a bowl, get all the pulp from the garlic and mix in with the juice from the chicken -- discarding the garlic skins and lemon pieces.
- This chicken is best served with potato and root vegetables with the creamy garlic sauce poured over the top.

CHICKEN BAKED WITH 40 CLOVES OF GARLIC
I know that there are various versions of this recipe, this is the only I have tried since seeing it on Christine Cushing Live on the Food Network Canada. It is courtesy Tony de Luca, Hillebrand Estates Winery Restaurant, Niagara on the Lake, Ontario. Although it takes some time to cook, it's incredibly easy. I've made it for guests and everyone raves about it and the garlic is sweet and amazing. I have also made it with and without the sealing dough, it's a bit messy and if you don't want to bother just make sure you seal your dish well, I used foil between the dish and lid. But I think making the dough helps keep it moist. Enjoy!

- Sealing Dough:.
- Add the water, flour, salt and olive oil in a bowl. Stir to form a paste. Use the dough on the casserole to seal.
- Chicken:.
- Preheat the oven to 375°F.
- Season the chicken with salt and pepper. Heat the olive oil in a large skillet over medium heat. Carefully add the chicken pieces. Cook the chicken until golden brown on all sides. Remove chicken from the oil onto a kitchen towel to absorb excess fat. Discard the oil.
- Place the seared chicken pieces in a casserole (one with a tight fitting lid) that holds the chicken pieces snugly. Add the rosemary, thyme, bay leaves, wine and garlic. Place the lid on the casserole and seal with the sealing dough. Transfer the casserole to the oven. Bake for 2 hours.
- Remove from the oven and let cool slightly. Crack the sealing dough to open the lid. Carefully remove the chicken onto 4 large dinner plates. Divide the garlic and cooking juices and serve.
50 CLOVE GARLIC CHICKEN

- Cut up, skin, and trim fat from chicken. Separate garlic cloves. Cut carrots lengthwise and then into 3-inch pieces. In a 3-quart casserole, lay celery stalks followed by alternating layers of chicken, garlic, and carrots. Drizzle on sherry. Sprinkle with nutmeg. Cover tightly with heavy foil. Bake at 375° for 90 minutes. Spoon garlic cloves into a side dish, and spread on warm sourdough French bread. Serve with a tossed salad to 8 people.
